MARINATED WILD DUCK RUMAKI

Wild duck has a "liver-y" flavor and look, which I do not like. However, my husband is a duck hunter so I had to figure out what to do with his catch. I came up with this recipe years ago and make it as an appetizer on Thanksgiving or Christmas. The marinade takes care of the gamey flavor, so even I enjoy eating these tasty little treats. My husband and 3 boys always gobble these down in one sitting. It's great finger food. You can adjust the marinade by tasting it before putting the duck in it. Make sure you inspect the duck for BBs! This recipe requires marination overnight.

8 -10 wild duck breasts, skinned and rinsed
1 lb bacon
1/4 cup orange juice
1 cup soy sauce
1/4 cup dry sherry (optional) or 1/4 cup Bourbon (optional)
1/4 cup peanut oil
2 tablespoons orange zest
1 -2 garlic clove, minced
1 tablespoon fresh ginger, minced
1/8 cup apple cider vinegar
1 tablespoon brown sugar, packed
1 teaspoon chili paste (to taste)
salt
toothpick
citrus-based dipping sauce

Steps:

  • Combine all the marinade ingredients in a bowl and mix well.
  • Cut the duck breasts into pieces that are about 1/2" x 1/2" x 1-1/2". Place in marinade overnight in the fridge (ziploc works great).
  • Cut the bacon in half so that you get twice as many short pieces. Fry until half-way cooked. This is necessary if you want the bacon to be equally cooked as the duck, otherwise the fatty part will be mostly uncooked and too chewy.
  • After marinading overnight, drain the duck. Wrap each piece of duck with a piece of bacon and secure with a toothpick (make sure it goes completely through).
  • Place wrapped pieces on a foil-lined cookie sheet that has sides. You can put quite a few on a sheet and they will still cook well.
  • Bake at 325ºF for 30 minutes or until the duck and bacon are done.
  • Serve with a tangy, slightly spicy-hot lemon, orange or apricot dipping sauce, like LeAnn Chin's Lemon Chicken Sauce or Panda Express Orange Sauce. Be sure to serve with sauce!

1 ½ cups teriyaki sauce
½ teaspoon minced garlic
½ teaspoon minced fresh ginger root
12 ounces fresh chicken livers, halved
1 (4 ounce) can water chestnuts, drained and sliced
12 slices bacon, cut in half
1 quart oil for frying

Steps:

  • In a medium bowl, mix together teriyaki sauce, garlic and ginger root. Place chicken livers and water chestnuts in the mixture. Marinate in the refrigerator at least 2 hours.
  • Heat oil in a large, heavy saucepan to 375 degrees F (190 degrees C).
  • Wrap each half slice of bacon around one chicken liver half and a slice of water chestnut. Secure by skewering with small skewers or toothpicks.
  • Carefully lower skewered wraps into the hot oil in small batches. Deep fry 3 to 4 minutes, or until bacon is evenly brown and of desired crispness. Remove from heat and drain on paper towels.

OLD FASHIONED WILD DUCK/GOOSE GUMBO

This is a gumbo made without a roux - I had to learn how to make this for my first hubby because that's how his mom made it! It took me a few tries to get it to brown enough, but, once I learned the secret (a good, heavy pot!) my gumbo by far surpassed hers. If you use wild goose you have to let it simmer a long time (2 to 4 hours) and keep the liquid level up. Ducks, depending on size, will get tender in 1 to 2 hours It's some trouble, but worth the effort.

1 duck or 1 goose
1 lb smoked pork sausage
1/2 cup vegetable oil
1 cup chopped onion
1 cup chopped bell pepper
1 cup chopped onion tops
1/4 cup parsley
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Cut up the duck or goose and season with salt and pepper.
  • Pour cooking oil into large black iron pot or any other heavy cooking pot. Heat oil and add cut up duck or goose.
  • Brown all sides of meat, gradually adding small amounts of water to keep it from burning. Keep browning it until you get a good dark crust on the bottom and sides of the pot.
  • When it's browned enough, remove the meat and pour off any excess oil left in pot. Return meat to pot and add enough water to cover the meat.
  • Cut up the sausage into thick slices and add it to the pot.
  • Add all of the chopped vegetables and additional salt and pepper. You can also use optional seasonings, like 'Tony Chachere's' or 'Slap Ya Mama' if you can get your hands on it.
  • Simmer until the meat is tender - this is the key. Ducks will tenderize alot quicker than geese will. I have simmered geese as long as 3 or 4 hours - to the point where the vegetables had all cooked to nothing. I happen to like alot of 'floaties' in my gumbo, so, if that happens, I add more and cook until they're also tender. Keep adding water as it cooks down to keep the level up.
  • Turn gumbo off for a while so that any excess grease or oil from the sausage will rise to the top, then skim it off.
  • Ladle this into a bowl of steamed long grain rice and serve with a side of potato salad. Good on cold, wet winter days. Well worth the effort.

RUMAKI TERIYAKI

1/3 cup teriyaki sauce, plus additional for basting
1 clove garlic, chopped
1/4 pound chicken livers, trimmed, rinsed and cut into 24 (1/2-inch) pieces
12 canned whole water chestnuts, drained and halved
12 slices bacon, halved crosswise

Steps:

  • Stir together the teriyaki sauce and garlic in a medium bowl, then add the livers and water chestnuts. Toss to coat. Marinate, covered, in the refrigerator for 1 hour. Soak 24 toothpicks in cold water for at least 1 hour.
  • Preheat the boiler. Remove the livers and water chestnuts from the marinade and discard the marinade. Lay 1 bacon half on a cutting board and place 1 piece of liver and 1 water chestnut in the center. Fold one side of the bacon over them, and thread a toothpick through the bacon, then the chestnut and liver. Wrap the remaining bacon edge around this parcel and secure on the toothpick. Repeat with remaining ingredients to make 24 rumaki.
  • Broil the rumaki on a rack set over a baking sheet (covered with aluminum foil for easy clean up) 2 inches from the heat for 4 minutes. Flip them over and broil for 2 minutes more. Brush the rumaki with additional teriyaki sauce and return to the broiler for 2 more minutes. Place on a serving tray and serve immediately.

WILD DUCK PORCINI RAVIOLI

1/4 cup dried porcini mushrooms, finely ground and sifted
3 cups flour, equal parts of durum flour and unbleached flour
3 eggs
3 half eggshell water
1 dash salt
1 1/2-2 lbs wild ducks, roasted
1 carrot
1 yellow onion, small
1 celery
1 orange, small
1 cup assorted dried wild mushrooms
1/4 cup veal demi-glace
6 ounces duck foie gras with 2% truffles

Steps:

  • Preheat oven to 450 F degrees.
  • Start a large stock pot of water to boil for ravioli.
  • For the Filling.
  • Rinse duck and pat dry. Season inside and out with salt and pepper. Cut vegetables into wedges. Stuff duck cavity with vegetables and squeeze juice of orange into cavity. Place duck on roasting rack. Roast for 15 minutes on 450. Reduce heat to 350°F and cook until thermometer reads 160 in thigh.
  • Remove meat from bone, reserving bones to make a secondary stock. (this could be used in place of the reserved mushroom stock as suggested for the ragu-it would give greater depth to the dish without the mushrooms overpowering the delicate ravioli).
  • Shred or dice very fine the duck. Moisten with meat with the juices from roasting pan if necessary.
  • For the Pasta Dough.
  • Mix dry ingredients, eggs, water and salt in a bowl. Knead dough until it is silky soft (about 25 minutes by hand).
  • Roll out on a floured surface to ¼ inch thickness. If dough is sticky, sprinkle with flour.
  • Using a biscuit cutter or small glass, cut 3-inch circles from the dough.
  • Place a spoonful of the mixture in the center of the circle and top with another circle of dough.
  • Crimp the edges with a fork, being sure to completely seal the ravioli. If needed, moisten the edge of the bottom circle with cold water before crimping the top circle over the filling.
  • For the Ragu.
  • While duck is roasting, place dried wild mushrooms in heat-proof container and add boiling water to cover. Allow to stand until mushrooms are reconstituted, about 1 hours or so. Drain mushrooms, reserving liquid. Chop mushrooms into bite-sized pieces. Reserve.
  • Add veal demi-glacé to sauté pan along with reserved mushroom liquid (be sure to strain mushroom liquid to remove any particles and/or residual dirt). Create a sauce from the demi-glace making sure it isn't too thin or too thick. Add mushrooms to the sauce. Adjust seasonings as needed.
  • For the Ravioli.
  • Make ravioli by filling with desired amount of duck, sealing with egg wash (or water) and removing all air bubbles from each ravioli.
  • Cook ravioli in boiling water until al dente, about 6 minutes.
  • Drain ravioli, reserving some of the pasta liquid. Quickly add ravioli to ragu. Gently toss to coat ravioli with ragu. Add additional cooking liquid from pasta if necessary. You don't want this too dry.
  • Dish into pre-heated, large shallow rimmed bowls. Place a 1/4-1/3' slice of Foie Gras on top of ravioli.
  • Serve with parmesean cheese on the side.

TENDER BAKED CHICKEN LIVER RUMAKI

This version of these popular little hors d'oeuvres was shared with me by Chef Claude of the Pinetop Country Club chef, here in Arizona. He bakes his rumaki which leaves them still soft and moist when fully cooked rather than a hard, dry lump. My husband and I love this version and can make a meal of them! Since these marinate, you must start them early. Marinating time is not included in the preparation time.

1 lb chicken liver
1 lb bacon (your favorite)
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon Bourbon (optional)

Steps:

  • Wash and trim chicken livers; cut each in half. Cut bacon strips in half and precook strips halfway. This is important since otherwise they would not finish cooking in a timely manner when baked. Be sure not to cook the bacon till it is crispy or it will not wrap around the livers properly.
  • Wrap one bacon strip around each liver half. Some people also include a water chestnut half with the liver, but I do not.
  • Fasten bacon around liver with a toothpick.
  • In a bowl or large plastic storage bag, combine the soy sauce, brown sugar and bourbon, if used. Add the prepared rumaki and cover the bowl or seal the bag. Allow to marinate for 6 to 8 hours or two hours at the least. Drain well.
  • Arrange rumaki on a baking sheet with sides. Bake in a preheated 325 degree oven for 1/2 hour or until cooked as desired.

Originally from an October 1980 issue of Bon Apetit that featured "Creole Cooking at the Source", recipes from Leon Soniat, a New Orleans' native, cooking school teacher and cookbook author.This is a bit time consuming to make, but the taste is worth it!

4 (10 1/2 ounce) cans beef broth
4 cups water
1 cup canola oil
3/4 cup flour
2 ducks, cut into serving pieces, patted dry (discard fat)
4 celery ribs, finely chopped
2 medium onions, finely chopped
1 green bell pepper, finely chopped
1 1/4 lbs andouille sausages, sliced 1/4 inch thick (or other spicy smoked sausage)
4 garlic cloves, minced
3 bay leaves
1/4 cup Worcestershire sauce
2 teaspoons salt (or to taste)
1 teaspoon dried basil, crumbled
1/2 teaspoon poultry seasoning
1/4 teaspoon ground red pepper (or to taste)
1/4 teaspoon allspice
1/4 teaspoon ground cloves
fresh ground pepper
4 dashes hot pepper sauce
5 green onions, finely chopped
freshly cooked white rice

Steps:

  • Combine broth and water in stockpot and bring to a boil.
  • Reduce heat and let it simmer while preparing duck.
  • Heat oil in heavy large pot.
  • Add duck a few pieces at a time and brown well.
  • Drain on paper towels while browning remaining pieces.
  • Add duck to stockpot.
  • Pour about 3/4 cup of the hot oil into heavy medium skillet.
  • Make roux by blending in the flour, stirring until a smooth paste is formed.
  • Cook ,stirring constantly,until roux is dark coffee-colored brown (this can take up to 30 minutes).
  • Carefully stir in some of the hot stock to thin slightly.
  • Add celery, onion,and bell pepper and stir constantly until very tender, about 5 minutes;add to stockpot.
  • Add sausage to same skillet and brown well; drain off as much excess fat as possible and add sausage to stockpot.
  • Keep gumbo at simmering point and add remaining ingredients except hot pepper sauce,green onion and rice and blend well.
  • Cover partially and continue simmering until duck is very tender, about 2 1/2 hours.
  • Remove from heat and add pepper sauce;blend well.
  • Taste for seasoning, adding salt if needed.
  • Let stand for 5 minutes.
  • Skim off fat, then stir in green onion.
  • Ladle gumbo over hot rice and pass additional hot pepper sauce, if desired.
