This easy marinated vegetable salad recipe is perfect for any type of gathering and is so easy to make using the Foodsaver Quick Marinator or just in a bowl! It's gluten free, dairy free, vegan, and loaded with flavour!

1 heaping cup chopped broccoli florets
1 heaping cup chopped cauliflower florets
1 diced bell pepper
1 cup halved cherry tomatoes
1 cup chopped baby corn
1 cup diced carrot
1/2 cup sliced celery
1/2 cup olive oil
1/4 cup white wine vinegar
1/4 cup red wine vinegar
3 tablespoons honey
Juice from 1/2 lemon
1 clove garlic, crushed
1 heaping tablespoon Greek herb mix (with salt)
1 tablespoon jarred capers

Steps:

  • Add veggies to Quick Marinator container or a large bowl.
  • In a jar add all dressing ingredients, close tightly and shake vigorously until well mixed or emulsified (you could also use an immersion blender).
  • Pour the dressing over the vegetables, close the lid to the Quick Marinator, and shake to coat all the veggies with the dressing.
  • Place in the fridge to marinate for a minimum of 1 hour. Stir once again before serving.
  • If using the Foodsaver Quick Marintor follow the instructions to marinate using the vacuum attachment depending on the FoodSaver model you are using.
  • Once marinating time is up (as indicated on the Foodsaver), turn the dial on the Quick Marinator to release the air and open the container.
  • Transfer salad to a dish to serve or chill as preferred in the fridge.*

I have taken this to MANY family and pot luck gatherings and it always is a huge hit. If you have other favorite veggies, you may add, or omit something if your family doesn't like it. Broccoli, cauliflower and mushrooms are just the basics.

1 head fresh broccoli, cut into florets
1 head cauliflower, broken into small florets
4 ounces fresh mushrooms, sliced
1 green bell pepper, chopped
3 stalks celery, diced
1 onion, finely diced
½ cup distilled white vinegar
2 tablespoons poppy seeds
1 cup white sugar
2 teaspoons mustard powder
1 teaspoon salt
1 ½ cups vegetable oil

Steps:

  • Blanch broccoli and cauliflower in a large pot of boiling water until just barely tender. Drain and rise with cold water.
  • In a large bowl combine broccoli, cauliflower, mushrooms, pepper, celery and onion.
  • In a medium bowl, combine the vinegar, poppy seeds, sugar, mustard, salt and vegetable oil. Mix until well blended.
  • Pour the marinade over the vegetables and mix well. Chill overnight before serving. Keep any extras refrigerated.

A friend of mine made this salad for me on the weekend of our daughter's wedding, to help us out with meals. Thank you Debbie! Prep time does not include marinating time.

Number Of Ingredients 13

1/2 cup sugar
2 teaspoons dry mustard
1 teaspoon salt
1/2 cup vinegar
1 cup vegetable oil
1 small onion, grated
2 tablespoons poppy seeds
1 green pepper, chopped
1 red pepper, chopped
12 mushrooms, sliced
1 small cauliflower, chopped
1 large head of broccoli, chopped
2 celery ribs, chopped (optional)

Steps:

  • Put in a jar with tight fitting lid first 7 ingredients.
  • Shake well to combine and set aside.
  • In large bowl combine the chopped vegetables.
  • Pour dressing over top.
  • Toss well.
  • Leave for several hours or overnight mixing occasionally.
  • Drain and serve.

Dressing:
1/4 cup lemon juice
1/3 cup vinegar either cider or clear
1 1/2 tsp dry mustard
2 tbs poppy seeds
1 tsp salt or to taste
1 cup sugar
1/4 cup diced onion or more to taste
1 1/4 to 1 1/2 cups Canola oil
Salad:
2 cups each diced celery and zucchini
3-4 cups diced tomatoes
Lettuce, chopped for salad

Steps:

  • 1. Prepare all the vegetables 2. Blend together all the dressing ingredients 4. Pour over diced vegetables and serve on a bed of lettuce

Unlike many other poppy seed dressings, the one used in this fresh vegetable salad is sweet and sour.

Yield serves 6, 1/2 cup per serving

Number Of Ingredients 11

1 small unpeeled zucchini (about 4 ounces), cut crosswise into 1/8-inch slices
1/2 medium red, yellow, or orange bell pepper, chopped
1/2 cup preshredded carrots
1/2 cup grape tomatoes, halved
1/2 cup frozen corn, thawed
1/4 medium red onion, sliced into rings and quartered (about 1/2 cup)
2 tablespoons sugar
2 tablespoons plain rice vinegar
2 tablespoons water
2 teaspoons olive oil (extra-virgin preferred)
1 teaspoon poppy seeds

Steps:

  • In a medium bowl, toss together all the salad ingredients.
  • In a small bowl, whisk together the dressing ingredients. Pour over the salad. Stir gently to coat. Cover and refrigerate for 30 minutes to 1 hour, stirring occasionally.
