2 fillets salmon
2 oz honey
1 handful sesame seed
½ cup soy sauce
½ lemon, juiced
1 oz ginger, chopped
1 red chili, sliced
4 cloves garlic, minced
1 pinch sea salt
sesame seed, to taste
spring onion, to taste
red chili, to taste

Steps:

  • Cut the salmon into bite-size cubes. Set aside.
  • Prepare the marinade by mixing the soy sauce, lemon juice, ginger, chilli, garlic, and sea salt together.
  • Mix the salmon into the marinade, cover, and marinate for 15-30 minutes.
  • In a large pan with a little oil, pour in the marinade and add the honey and sesame seeds.
  • Mix together until it starts to bubble and gets thicker/saucier.
  • Add the salmon and fry for a couple of minutes on each side.
  • Take off the heat and garnish with more sesame seeds, spring onion, red chilli, and cocktail sticks.
  • Enjoy!

2 cups white vinegar
1 1/2 cups water
6 tablespoons sugar
2 tablespoons kosher salt
2 pounds salmon fillet, skin and bones removed
2 tablespoons mixed pickling spices
6 bay leaves
2 white or yellow onions, sliced 1/4-inch-thick

Steps:

  • Bring the vinegar, water, sugar and salt to a boil. Let this mixture cool completely.
  • Cut the salmon into pieces that are approximately one inch by two inches.
  • In a ceramic crock, glass bowl or plastic container, place a layer of salmon pieces, then a sprinkling of pickling spices and bay leaves, a layer of onions, then salmon, spices and onions - continuing until you have used all. Pour the cooled marinade over the fish. Cover the container and refrigerate for three to four days.
  • Serve the salmon, along with its marinaded onions, with matzoh and butter and sliced cucumbers with a sour-cream dressing. For a meat meal, serve the salmon on matzoh.

½ cup steak seasoning sauce (such as Dale's Steak Seasoning®)
½ cup brown sugar, divided
2 tablespoons bourbon (such as Jim Beam®), or more to taste
3 scallions, chopped
1 (1 1/2-pound) salmon fillet, cut into 2-inch cubes
½ pound bacon strips, cut in half
15 toothpicks, or as needed

Steps:

  • Mix steak seasoning sauce, 6 tablespoons brown sugar, bourbon, and scallions together in a large bowl to make marinade.
  • Toss salmon cubes in marinade. Cover with plastic wrap and let sit in the refrigerator, 4 to 6 hours.
  • Wrap each salmon cube with bacon; use a toothpick to hold bacon in place. Sprinkle remaining 2 tablespoons brown sugar on top.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Grill bacon-wrapped salmon, turning frequently, until bacon begins to crisp, about 5 minutes.

Use the freshest salmon you can find, preferably wild salmon, for these glistening little bites.

Yield Serves 10 to 12 as an hors d'oeuvre

Number Of Ingredients 9

3/4 pound salmon fillet, skin and small bones removed
Salt
Freshly ground pepper
1 tablespoon soy sauce
2 tablespoons rice vinegar
1 tablespoon mirin
2 tablespoons sesame oil
2 teaspoons grated or finely chopped fresh ginger
1 ripe but firm avocado

Steps:

  • Remove all of the pin bones from the salmon, and cut into 1/2-inch cubes. Place in a bowl, and season with salt and pepper. Toss with the soy sauce, rice vinegar, mirin, sesame oil and ginger. Cover and marinate in the refrigerator for about 30 minutes.
  • Cut the avocado into 1/2-inch cubes, and place in a bowl. Pour some of the marinade from the salmon into the bowl, and toss gently. Thread two pieces of salmon and one avocado cube onto each toothpick. Arrange on a platter and serve.
