1 cup olive oil
¼ cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds large shrimp, peeled and deveined with tails attached
6 each skewers

Steps:

  • In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
  • Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

OLD BAY MARINATED AND GRILLED SHRIMP

These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

1 large lemon
2 large cloves garlic
1 tablespoon seafood seasoning, such as Old Bay
2 tablespoons extra-virgin olive oil
1 pound jumbo shrimp (16/20), peeled and deveined
Hot sauce, for serving

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.

A very simple and easy marinade that makes your shrimp so yummy you don't even need cocktail sauce! Don't let the cayenne pepper scare you, you don't even taste it. My 2 and 4 year-olds love it and eat more shrimp than their parents! It is also a big hit with company, and easy to prepare. I make this with frozen or fresh shrimp and use my indoor electric grill if the weather is not good for outside grilling. Try it with a salad, baked potato, and garlic bread. You will not be disappointed!!!

One 1/2-inch piece fresh ginger
2 large cloves garlic
1/4 to 1/2 teaspoon crushed red pepper flakes, to taste
2 tablespoons canola oil
1/3 cup canned coconut milk
Kosher salt
1 pound jumbo shrimp (16/20), peeled and deveined
1 small scallion, thinly sliced

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and 1/4 cup juice) and add to a medium glass bowl. Peel and grate the ginger and garlic and add to the bowl along with the red pepper flakes, canola oil, coconut milk and 1 1/2 teaspoons salt. Stir to combine.

Plan ahead the shrimp will need to marinade for 2 hours, but no more than that or the acid in the fresh lemon juice will start to "cook" the shrimp!

1 cup olive oil

4 cloves garlic, finely chopped
1 cup dry white wine
2 tablespoons heavy cream
2 sticks cold unsalted butter, cut into 1-inch pieces

2 tablespoons Spanish paprika
6 cloves garlic, finely chopped to a paste

Steps:

  • For the white wine sauce:
  • Heat the oil in a medium saucepan over medium heat. Add the shallots and the garlic and cook until soft, about 1 minute. Increase the heat to high, add the wine, bring to a boil and cook until reduced by half. Add the cream and slowly start whisking in the cold butter, piece by piece and continue to whisk until the sauce is emulsified. Strain into a bowl and stir in the chives. Season with salt and pepper, to taste, and set aside.
  • For the shrimp:
  • Whisk together the oil, paprika, garlic and thyme in a large bowl; add the shrimp and toss to coat the shrimp in the mixture. Cover and let marinate in the refrigerator for 30 minutes.
  • Heat the grill to high.
  • Season the shrimp with salt and pepper and grill until slightly charred and just cooked through, about 2 1/2 minutes per side. Put some of the sauce on a large platter, drizzle with Basil Oil and top with the shrimp. Drizzle with more of the sauce; garnish with chives and serve.

1 pound large prawns (size 16 to 20 or larger), shells on
1/2 cup citrus olive oil
2 tablespoons minced red onion
1 teaspoon minced garlic
2 tablespoons finely chopped fresh cilantro leaves
2 tablespoons fresh lemon juice
4 bamboo skewers, soaked in water for 20 minutes, or metal skewers
Salt and freshly ground black pepper
Citrus Aioli, optional, recipe follows

Steps:

  • Cut along the back about 1/4-inch deep through the shell of each prawn to remove the vein. Put prawns in a shallow, non-aluminum baking dish.
  • In a small bowl, whisk together citrus oil, onion, garlic, cilantro, and lemon juice. Pour over prawns, cover, and let marinate, refrigerated, 1 to 4 hours.
  • Preheat grill or broiler.
  • When ready to cook, thread prawns on skewers and discard marinade. Season with salt and pepper, to taste, and grill or broil, turning once, until just done, 2 to 3 minutes.
  • Shrimp can be served warm or at room temperature. They are delicious on their own or with Citrus Aioli.
  • Cook's Note: Leaving the shells on the prawns protects them from drying out during cooking. This method works so well that I use it often when preparing shrimp or prawns for salads, pasta, pizza, and sandwiches. Simply reduce the cooking time if they will later be cooked more, for instance as part of a sauce or pizza topping. Peel shrimp after they come off the grill.
  • 2 cloves garlic
  • Coarse salt
  • 1 cup prepared mayonnaise
  • 2 lemons, zested
  • 1 lemon, juiced
  • Freshly ground black pepper
  • Using a mortar and pestle, or on a cutting board, finely mash the garlic cloves with a pinch of salt.
  • In a bowl, mix the garlic paste with remaining ingredients and serve. Keep refrigerated until ready to serve.

In a small mixing bowl, combine olive oil, garlic, lemon, oregano, salt and pepper; mix thoroughly. Pour over shrimp and let marinate for 1 hour or overnight. 3. To cook shrimp: Set grill to highest setting. When grill is hot, season shrimp with salt and pepper, and grill approximately 2 to 3 minutes per side. Remove from grill and serve with herb aioli. For the herb aioli: 1. To prepare aioli: Work the garlic, egg yolks, salt, pepper, and lemon juice in food processor to a paste. 2. Start adding oil slowly, letting machine run the whole time. Add all oil, and if paste appears too thick, start adding fresh herbs, a little at a time until oil is pureed. Water from herbs will give the aioli a thinner consistency, if not, add a touch of water.

1 1/2 cups boiling water
3/4 cup baby arugula leaves
2 large green onions, thinly sliced

1 clove garlic, chopped to a paste
1/4 cup olive oil

Grilled shrimp, recipe follows
1/4 cup fresh lemon juice
3 tablespoons chopped fresh mint

1 pound shrimp (20 to 24 size), shelled and deveined

Steps:

  • Place bulgur in a bowl and pour the boiling water over. Cover with plastic wrap and let stand until bulgur is tender and most of the water is absorbed, about 1 to 2 hours.
  • Drain off any excess liquid from the bulgur and stir in the arugula, green onions and mint.
  • Whisk together the lemon juice, garlic and oil and season with salt and pepper. Pour the mixture over the bulgur and season with salt and pepper.
  • Transfer tabbouleh to a platter and top with the grilled shrimp. Garnish with fresh mint leaves.

  • To butterfly shrimp, slice down back of shrimp with small sharp knife, almost completely through. Spread and flatten to form butterfly shape.
  • Combine olive oil, vinegar, lemon juice, basil, parsley, oregano and red pepper flakes in shallow bowl. Add shrimp; toss to coat. Cover and marinate in refrigerator 30 minutes.

3 chipotle peppers in adobo
1 lime, juiced
1 cup olive oil
Cilantro leaves
1 pound shrimp, peeled and deveined
Corn Salad, recipe follows
6 ears fresh corn, husked with silks removed
2 tablespoons canola oil
Salt and freshly ground black pepper
2 cups halved cherry tomatoes
1 small red bell pepper, finely chopped
4 scallions, finely chopped
2 cups packed arugula leaves
1 lemon, juiced
4 tablespoons olive oil
Neelys BBQ Dry Rub, recipe follows
1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder

Steps:

  • Blend the garlic, chipotle peppers, lime juice, olive oil and cilantro, to taste, in a food processor or blender. Place the shrimp in a medium bowl, add the marinade and toss to coat. Cover the bowl with plastic wrap and marinate for 20 minutes.
  • Preheat grill to medium-high.
  • Remove the shrimp from the marinade, thread on skewers, and cook on the grill for about 1 to 1 1/2 minutes or until done. Transfer to serving plates and serve with the corn salad alongside.
  • Preheat grill or broiler to medium heat.
  • Rub corn with canola oil and season with salt and pepper. Grill or broil the corn for 7 minutes, turning, or until ears are lightly browned. Remove from grill and allow to cool. Cut the kernels from the cob and place in a large mixing bowl along with the cherry tomatoes, red bell pepper, scallions, and arugula.
  • In a small bowl, prepare dressing by whisking together lemon juice, olive oil, salt, pepper and Neelys BBQ Dry Rub, to taste.

1 cup olive oil
1/4 cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 garlic cloves, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 lbs large shrimp, peeled and deveined with tails attached
wooden skewer, soaked in water for at least 30 minutes

Steps:

  • In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
  • Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once neat tail and once near head. Discard marinade.
  • Lightly oil gill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

This is an at-home, easier version of a classic Tandoor shrimp. This one is cooked on the grill and marinated in sour cream instead of drained yogurt. From Food & Wine May 2008 edition. Note: I made this again tonight and it was raining, so instead of grilling I simply broiled them on high for 3 minutes, flipped them over and broiled them another 3 minutes to perfection. Don't forget the lime juice at the end, as it really brings together all of the flavors!!!!

1 cup sour cream
6 garlic cloves, minced
1 teaspoon garam masala
1 teaspoon cracked black peppercorns
1 teaspoon ground cumin
1 teaspoon ground ginger
1/2 teaspoon turmeric
16 jumbo shrimp, shelled and deveined
salt
3 tablespoons unsalted butter, melted
4 lime wedges, for serving

Steps:

  • In a large, shallow dish, whisk the sour cream with the garlic, cumin seeds, garam masala, peppercorns, ground cumin, ginger and turmeric.
  • Add the shrimp and coat thoroughly with the marinade. Cover and refrigerate for 3 hours.
  • Light a grill,oil your grates and bring up to high heat.
  • Remove the shrimp from the marinade and thread onto skewers; season with salt.
  • Grill shrimp almost cooked through, 2 minutes per side. Brush the shrimp with the butter and grill until glazed and just cooked through.
  • Serve with lime wedges.

2 tablespoons Champagne wine vinegar
1 tablespoons orange olive oil
1 tablespoon Italian dressing mix
1 orange
1 pound large shrimp, peeled and deveined
20 cherry tomatoes

Steps:

  • In a medium bowl, combine Champagne vinegar, orange olive oil, and dressing mix. Cut orange and squeeze for juice. Add shrimp and toss to coat. Set aside.
  • Make rosemary skewers by stripping off all the leaves except the top of 5-inch rosemary stalks. Set aside.
  • Skewer the shrimp and tomatoes by putting 1 shrimp followed by 1 cherry tomato on each rosemary skewer. Wrap the leafy end of the rosemary in the foil squares to prevent from burning during grilling.
  • Grill on preheated grill for about 2 minutes per side or until the shrimp turns pink. Remove foil from ends of skewers and serve.

Whenever summertime comes around, I look forward to making this shrimp recipe on our outdoor grill. I've served this to guests, alongside a nice green salad and a pitcher of margaritas. Simple and delicious. Note: You can try broiling the shrimp in your oven for about 8 minutes instead of grilling but I have never personally tried them that way. Prep time includes marinating in the refrigerator.

1/3 cup extra virgin olive oil
1/4 cup fresh lime juice
2 garlic cloves, crushed
2 tablespoons chopped cilantro
2 tablespoons Worcestershire sauce
1 teaspoon Tabasco sauce
salt and pepper, to taste
24 large raw shrimp, shell on
lime wedge, for garnish

Steps:

  • Mix together the olive oil, fresh lime juice and seasonings in a bowl.
  • Split the shrimp up the back with a sharp knife to allow the marinade to penetrate. Leave the shell on, but try to remove the vein.
  • Add the raw shrimp to the marinade and refrigerate, covered, for about two to three hours.
  • Remove from the marinade and grill the shrimp for about 4-5 minutes, until done. Make sure not to overcook your shrimp or they will be rubbery.
  • *You can also broil the shrimp indoors. It would take about 8 minutes*.
  • Serve on a big platter with lime wedges.
  • Peel and eat!
