Tangy Lime Marinade image

Give your favorite steaks a Mexican twist with this marinade of fresh lime juice, brown sugar, Worcestershire and garlic at your next barbecue.

Yield Makes enough for 1 to 1 1/2 pounds meat

Number Of Ingredients 5

1/4 cup fresh lime juice
2 tablespoons vegetable oil
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
3 teaspoons minced garlic

Steps:

  • Combine all ingredients in small bowl. Place beef steak(s) and marinade in food-safe plastic bag; turn steak(s) to coat. Close bag securely and marinate in refrigerator 15 minutes to 2 hours for tender steaks; 6 hours or as long as overnight for less tender steaks, turning occasionally.
  • Remove steak(s) from bag; discard marinade. Place steak(s) on grid over medium, ash-covered coals or over medium heat on preheated gas grill. Grill according to the chart for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Visit our Marinades page for more information.

Number Of Ingredients 9

1 tablespoon sugar
1 1/2 teaspoons freshly ground black pepper
2 tablespoons mushroom soy sauce (available in Asian markets)
7 medium cloves garlic, crushed
1 1/2 pounds top round or sirloin, trimmed of all fat and cut into 1/2-inch cubes
2 tablespoons lime juice
1 teaspoon water
2 tablespoons canola oil
1 head green leaf lettuce

Steps:

  • Combine sugar, 1 teaspoon of the black pepper, soy sauce and garlic in bowl large enough to hold the beef. Stir well.
  • Add beef and stir to coat well; marinate for 20 minutes, or longer.
  • Combine remaining pepper with lime juice and water, and place in small serving bowl.
  • Saute beef in hot oil, three to four minutes, until medium rare. Arrange on platter lined with lettuce and serve with lime sauce and toothpicks, or serve as a main course over jasmine rice or fragrant rice, sauce on the side.
