MARINATED ASPARAGUS SALAD

PASTA, ASPARAGUS & MARINATED TOMATO SALAD

Pasta, Asparagus & Marinated Tomato Salad image

I got this recipe from the Delicious magazine. A light and easy pasta salad, I do use more asparagus in my salad and top with grated parmesan cheese. The original recipe did not call for mustard, but I tried it with mustard and the family loved it. So you could use more or less mustard if you choose.

MARINATED ASPARAGUS SALAD

Marinated Asparagus Salad image

This is a nice make ahead recipe. The asparagus is so sweet and flavorful that you might want to elimate the dressing altogether. Many guests did enjoy using it to dip the spears in - it totally changes the flavor. You also might consider adding some halved cherry tomatoes to the marinade. The time listed does not include the marination time.

Categories     Vegetable

Time 20m

Yield 8 serving(s)

Number Of Ingredients 12

2 lbs asparagus, trimmed and cut into 2 inch lengths
1/3 cup sugar
1/2 cup salad oil
2/3 cup white wine vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 medium onion, chopped
1/2 medium green pepper, finely chopped
1/3 cup mayonnaise
1/3 cup sour cream (yogurt)
1/8 teaspoon dill weed
lettuce leaf

Steps:

  • Cut asparagus into 2-inch lengths. Place all but the spear tops/crowns into some boiling water in a skillet (should be just enough water to cover). After 2 minutes add the spear tops and cook for about 2 to 3 minutes longer- removing it at the crisp tender stage. Plunge it in cold ice-water to stop cooking. Drain and place in dish.
  • Combine ingredients for marinade and pour mixture over asparagus. Refrigerate several hours or overnight. To serve, lift asparagus from marinade and place on lettuce leaves.
  • Combine mayonnaise, sour cream (or yogurt) dill weed and 3 tablespoons of reserved marinade. Mix well. Spoon dressing over asparagus.

COLD MARINATED ASPARAGUS SALAD

Cold Marinated Asparagus Salad image

Cold Marinated Asparagus Salad - Fresh asparagus, cooked to crisp tender, then marinated in an oil and vinegar seasoned dressing with pimentos, and finished with sliced grape tomatoes.

Provided by @MakeItYours

Number Of Ingredients 12

2 pounds fresh asparagus
1 cup light olive oil or salad oil (canola, vegetable, sunflower, safflower)
1/4 cup apple cider vinegar
2 tablespoons lemon juice
4 teaspoons Creole mustard
2 tablespoons granulated sugar
1/2 teaspoon Cajun seasoning
1 teaspoon kosher salt
1 teaspoon black pepper
1 (2 ounce) jar chopped pimentos
1-1/2 cups grape tomatoes
Shredded lettuce

Steps:

  • Trim asparagus, cut into thirds and steam or cook until crisp tender. Bring marinade ingredients to a boil, add the pimentos and pour over the asparagus. Cover and refrigerate overnight or up to two days. Let come to room temperature about 30 minutes before serving; toss in the tomato halves. Serve as-is, or spoon over shredded lettuce, if desired.
  • Cook's Notes: If asparagus are thick, use a vegetable peeler to peel away the very outer layer of the lower portions of the trimmed asparagus, which may be a bit too woody and tough for a salad.
