TEXAS PECAN AMBROSIA SALAD WITH MARGARITA DRESSING
This awesome salad is loaded with pecans, fruit and cheese and then topped off with a fun margarita dressing. It was originally published in a BH & G Holiday Cooking magazine. Prep time does not includes 30 minute chill time before serving.

Steps:
- Toss all ingredients, except Margarita Dressing, in a large bowl. Chill, covered, up to 1 hour.
- Margarita Dressing.
- Stir together all dressing ingredients in a small bowl. Cover and chill.
- To serve, drizzle salad with Margarita dressing and garnish with lime slices, if desired.
BROCCOLI SALAD WITH MARGARITA DRESSING
A quick salad that is made with raw broccoli, romaine lettuce, cherry tomatoes, and a few other ingredients that marinate in a simple olive oil and lime dressing. Perfect way to use up all those cherry tomatoes in the garden.

Steps:
- Mix broccoli, romaine lettuce, grape tomatoes, mushrooms, and red onion in a large bowl with a lid.
- Place olive oil, lime juice, honey, cilantro, cumin, salt, and black pepper in a blender; blend until smooth.
- Pour lime dressing over vegetables; toss to combine.
- Cover and refrigerate salad for at least 2 hours before topping with white Cheddar cheese and serving.

CUCUMBER-AVOCADO SALAD WITH MARGARITA DRESSING

- In a medium bowl, whisk together first ten ingredients. Taste and adjust seasonings to taste. Toss Cucumber, Avocado, and Onion in the dressing and refrigerate at least 30 minutes, but no more than six hours. Remove from fridge and let sit at room temperature for fifteen minutes, Divide greens among six plates and spoon Cucumber-Avocado mixture over top, being sure to include plenty of dressing. Sprinkle with additional Kosher Salt, if desired.
MARGARITA DRESSING
I have the most wonderful book on sauces and this is one of my favorite recipes in it. It is a fabulous dressing for everything from sliced beefsteak tomatoes and onions to grilled scallops. It takes but a minute or two to make which is always a plus! It is also an excellent marinade for chicken and fish, and it doubles and triples well.
