1 cup butter-flavored shortening
½ cup white sugar
½ cup light brown sugar
2 eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups rolled oats
1 cup shredded coconut
¾ cup drained, dried, and chopped maraschino cherries
½ cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Beat shortening, white sugar, and brown sugar together in a bowl with an electric mixer until creamy and fluffy. Add eggs and vanilla extract; stir until well incorporated.
  • Mix flour, baking powder, baking soda, and salt together in another bowl; add to sugar mixture, blending until an even dough forms. Add oats, coconut, cherries, and chocolate chips until just mixed in.
  • Scoop rounded tablespoons of dough onto the prepared baking sheets.
  • Bake in the preheated oven until the edges are brown, 8 to 10 minutes. Let rest for 5 minutes, then transfer to a wire rack to cool.

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup Gold Medal™ all-purpose flour
1/2 cup butter, softened
1 egg
1 teaspoon cherry extract
1/2 teaspoon almond extract
1 tablespoon maraschino cherry juice
1/2 cup maraschino cherries, chopped
1/4 cup miniature semisweet chocolate chips
1/4 cup semisweet chocolate chips
3/4 teaspoon shortening
36 maraschino cherries with stems

Steps:

  • Heat oven to 375°F. In medium bowl, stir together cookie mix, flour, butter, egg, cherry extract, almond extract and cherry juice with spoon until soft dough forms. Stir in chopped cherries and miniature chocolate chips.
  • Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
  • Bake 7 to 9 minutes or until edges are light golden brown. Using end of wooden spoon handle, immediately make indentation in center of each cookie. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely.
  • In small microwavable bowl, microwave 1/4 cup chocolate chips and the shortening uncovered on High in 30-second increments, stirring after each, until chips are softened; stir until smooth. Dip each stemmed cherry in melted chocolate and place in indentation of each cooled cookie.

I am not a huge fan of cherries but these cookies are absolutely amazing. It will make anyone fall in love with cherries!

1/2 cup(s) confectioners' sugar
1/2 cup(s) white and/or dark chocolate chips
1 cup(s) maraschino cherries, chopped
1 cup(s) butter, room temperature
2 cup(s) all purpose flour
1/2 teaspoon(s) salt
1/2 tablespoon(s) vanilla extract
8 ounce(s) white and/or dark chocolate, chopped

Steps:

  • Preheat oven to 325 degrees.
  • Cream the butter and the sugar.
  • Mix the flour and the salt.
  • Mix the dry ingredients into the wet until it starts forming larger clumps.
  • Mix in the maraschino cherries,white chocolate and vanilla extract.
  • Form the dough into the shape that you want, wrap it in plastic and let it chill in the fridge for at least an hour.
  • Cut into 1/4 inch thick slices and place them on a parchment lined baking pan with one inch space betweet them.
  • Bake in oven until they just start to turn lightly golden brown on top. (10-15 minutes)
  • Let cool completely.
  • Melt the chocolate in small pot.
  • Drizzle chocolate over the cookies and place on a sheet of parchment paper and let cool until the chocolate sets.

I first tasted these cookies during a "cookie swap" at work a few years ago. Now I make them every Christmas for our family get-together. People who haven't had them are always delighted by the "hidden treasure" inside.

24 maraschino cherries
1/2 cup butter, softened
3/4 cup packed brown sugar
1 tablespoon maraschino cherry juice
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/8 teaspoon salt
1 cup milk chocolate chips, divided
1/2 teaspoon shortening

Steps:

  • Pat cherries with paper towels to remove excess moisture; set aside. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in cherry juice and vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until dough is easy to handle., Insert a chocolate chip into each maraschino cherry. Wrap a tablespoon of dough around each cherry. Place 1 in. apart on ungreased baking sheets. , Bake at 350° for 15-17 minutes or until set and edges are lightly browned. Remove to wire racks to cool. , In a microwave, melt remaining chips and shortening; stir until smooth. Dip tops of cookies in melted chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in an airtight container.

How to make Maraschino Cherry Chocolate Chip Cookies

Number Of Ingredients 11

1/2 stick unsalted butter, softened
3/4 cup brown sugar
1 egg
1 tsp vanilla
1/8 tsp almond extract
Small amount of pink gel food coloring
1 & 1/2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup drained & finely chopped maraschino cherries (plus extra for garnish)
3/4 cup semi-sweet chocolate chips (plus extra for garnish)

Steps:

  • Preheat the oven to 350º F. In a mixing bowl beat the butter and brown sugar with an electric mixer for 1 minute, or until combined. Add in the egg and extracts, beat again. Add in a small amount of pink gel food coloring and mix. In separate small bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to wet ingredients, mixing by hand with a spatula. Add in the finely chopped maraschino cherries and chocolate chips, mix by hand until combined. The batter will be thick. Use a cookie scoop to drop dough balls onto a silicone lined baking sheet. Press additional cherries and chocolate chips into the outside of the dough balls. Bake for 14-16 minutes - be sure not to over bake or the cookies will loose their pink color and turn brown. Allow the cookies to cool to the touch on the baking sheet (about 15 minutes) then move them to a cooling rack.
