ROSEMARY CHICKEN WITH ORANGE-MAPLE GLAZE

Chicken breasts adorned with a fresh rosemary rub, then sauteed and braised in a sauce of orange juice, white wine and maple syrup. This wonderfully rich glaze makes an elegant, quick dinner to serve to guests. To serve, place chicken on top of hot cooked rice on each plate and spoon sauce over the top. Wonderful served with steamed asparagus.

1 cup orange juice
½ cup dry white wine
½ cup maple syrup
2 teaspoons chopped fresh rosemary
½ teaspoon salt
½ teaspoon freshly ground black pepper
4 skinless, boneless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. Stir in maple syrup and continue boiling for another 5 to 6 minutes, stirring frequently, until glossy and just slightly thickened. Set aside.
  • In a small bowl mix together the rosemary, salt and pepper. Rub mixture on both sides of chicken breasts, and set aside.
  • Melt butter and olive oil in a large skillet over medium high heat. Add chicken breasts, cover skillet and saute for about 5 minutes on each side until lightly browned. Pour orange-maple mixture over chicken (mixture will boil and bubble). Reduce heat to simmer; cover and let cook for another 10 minutes, basting occasionally, until chicken is cooked through and sauce has turned into a rich, thick glaze.

1 (3 1/2 lb) roasting chickens, about 3-1/2 pounds, cut into 4 quarters
1 fresh orange
1/4 cup butter, melted
1/2 cup maple syrup
1 teaspoon onion powder
1 teaspoon kosher salt (to taste)

Steps:

  • Preheat oven to 400 degrees.
  • Line a 9 x 13-inch baking pan with nonstick foil.
  • Place chicken quarters skin-side up on the prepared pan.
  • Remove the zest from the orange with a grater, then juice the orange.
  • Whisk together orange zest, orange juice, butter, maple syrup, onion powder, and salt.
  • Brush orange mixture over the chicken pieces.
  • Bake 45 to 50 minutes, until done, basting midway with drippings.

4 pounds chicken wings
1/4 cup all-purpose flour
1/2 tablespoon baking powder
1 teaspoon coarsely ground pepper
1 teaspoon kosher salt
1/2 teaspoon garlic powder
GLAZE:
2/3 cup maple syrup
2 teaspoons coarsely ground pepper
2 teaspoons soy sauce
1 garlic clove, minced
Chopped green onions, optional

Steps:

  • Preheat oven to 425°. Line two 15x10x1-in. baking pans with foil and coat with cooking spray; set aside. , Using a sharp knife, cut through the 2 wing joints; discard wing tips. In a shallow bowl, combine flour, baking powder, pepper, salt and garlic powder. Add wing pieces, a few at a time, and toss to coat; shake off excess., Place on prepared baking sheets. Bake until no longer pink, 40-50 minutes, turning once. Meanwhile, in a small saucepan, combine glaze ingredients. Bring to a boil. This is lovely - sweet, sticky, juicy chicken, with the peppery bite of the pecans - and it smells heavenly when it's cooking. I like to serve this with soothing mashed potatoes and buttered greens. Prep time doesn't include marinading.

2 boneless chicken breasts
2 oranges, juice of, only
1 teaspoon English mustard
6 tablespoons maple syrup
1 garlic clove, crushed
1 teaspoon sunflower oil
1 teaspoon white wine vinegar
1/2 teaspoon Tabasco sauce
1/2 teaspoon hot pepper flakes
1 garlic clove
1 1/2 tablespoons butter
4 ounces pecan halves

Steps:

  • Mix orange juice, mustard, garlic, maple syrup, sunflower oil and vinegar in a bowl. Marinade chicken for at least 4 hours, but overnight is even better.
  • For the pecans, melt the butter, and stir in tabasco, pepper flakes and garlic. Stir in the pecans. Spread onto a flat baking sheet and bake on a really low temp - approx 120C for an hour. Be careful that the pecans don't burn though.
  • After marinading, remove the chicken and pour marinade into a small pan, bring to the boil, stirring until the marinade reduces to a sticky glaze. The oil will stop the Maple syrup from burning.
  • Grill or barbecue the chicken breasts, turning and brushing with the glaze regularly until the chicken is cooked but still juicy.
  • Serve the chicken with the remaining glaze as a sauce, along with the peppered pecans and whatever else takes your fancy.

I decided to make a sweet chicken dish. I had just made a wonderful "Boozy Maple" chicken recipe that I got from a fellow 'Zaar-ite...( Thank you Mirj!!) and I wanted to tweak it some. So I decided to use maple syrup and orange juice (in place of the booze in the other recipe). It worked out just fine!I had time to let them marinate for an hour before cooking, but I believe it would be fine just baking it without the marinating time. You could also use any other chicken or turkey that you like.

6 boneless chicken breasts
1/2 cup fresh orange juice
1/2 cup real maple syrup

Steps:

  • preheat oven to 400 degrees F.
  • rinse chicken breasts and pat dry.
  • mix together 1/2 cup fresh orange juice and 1/2 cup real maple syrup.
  • if you have time, put the chicken in a plastic ziploc bag, pour in the mixture and let sit for an hour.
  • put the chicken in a pan, pour the juice / syrup mixture over the chicken.
  • cover and bake for about 35 minute.
  • uncover and bake for another 5- 10 min or until done.
