1 can (15 ounces) solid-pack pumpkin
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 tablespoon butter, softened
1 cup sugar
1 cup 2% milk
2 tablespoons maple syrup
2 large eggs, room temperature
Dough for single-crust pie
Whipped cream, optional

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a bowl, combine the first 10 ingredients. Pour into the crust. Bake for 15 minutes. Reduce heat to 350° and continue baking until a knife inserted in the center comes out clean, about 45 minutes. Cool to room temperature. Refrigerate. Garnish with whipped cream if desired.

Pastry Dough
Pie weights or raw rice for weighting shell
1 cup granulated maple sugar*
1/4 cup all-purpose flour
1 1/2 cups heavy cream
Accompaniment: whipped cream

Steps:

  • On a lightly floured surface with a floured rolling pin roll out dough into a 14-inch round (about 1/8 inch thick). Fit dough into an 11-inch tart pan with a removable fluted rim and trim flush with rim. Chill shell until firm, about 30 minutes.
  • Preheat oven to 425°F.
  • Lightly prick bottom of shell all over with a fork and line shell with foil. Fill foil with pie weights or rice and bake shell in middle of oven 15 minutes. Carefully remove weights or rice and foil and bake shell until golden, about 8 minutes more. Cool shell in pan on a rack. Shell may be made 1 day ahead and kept in pan, covered, at room temperature.
  • Reduce temperature to 350°F.
  • In a bowl whisk together maple sugar and flour. Add cream and whisk until smooth. Pour filling into shell and bake in middle of oven 45 minutes, or until fling is set. Cool pie to warm in pan on rack and remove rim.
  • Serve pie warm or at room temperature with whipped cream.

My husband's coworker was looking for someone to bake him a perfect sugar pie, which I'm told is served as a traditional dessert in Quebec, Canada. Of course, I took up the challenge when he asked and was able to come up with this recipe. He states that he's never seen his mom take two helpings of dessert and that its taste and texture is perfect. The pie crust is my mom's recipe. This is a very sweet pie and I have found that a good quality maple syrup is essential. You can also add raisins or currants for a little bit of a switch-up!

½ cup vegetable shortening
1 cup all-purpose flour
1 egg
¼ cup cold water
¾ teaspoon vinegar
1 cup real maple syrup
2 eggs
¾ cup sweetened condensed milk
½ cup dark brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Chop vegetable shortening into flour in a bowl with a pastry cutter until the mixture resembles coarse crumbs. Whisk 1 egg with cold water and vinegar in a measuring cup. Use your fingers to make a well in the center of the flour mixture and pour about half the egg mixture into the well; mix the liquid ingredients into the flour mixture. Mix remaining half of egg mixture into dough, stirring just until combined.
  • Roll dough into an 10-inch circle on a floured work surface and fit the pie crust into the bottom of an 8-inch pie dish. Trim and flute the edges of the crust.
  • Whisk maple syrup, 2 eggs, sweetened condensed milk, and brown sugar together in a bowl until brown sugar has dissolved. Pour filling into crust.
  • Bake in the preheated oven until the filling is set and small spots of sugary crust form on top of the filling, about 45 minutes. Chill until cold and firm, 5 to 6 hours, before serving.

Pie dough
1 cup walnuts, toasted and coarsely chopped
3 large eggs
1 cup maple syrup
1/4 cup unsalted butter, melted
1/2 teaspoon vanilla extract
2/3 cup packed light brown sugar
1/8 teaspoon salt

Steps:

  • Arrange oven rack in middle position and top with heavy baking sheet. Preheat oven to 425°F.
  • On lightly floured surface using lightly floured rolling pin, roll out dough to 13-inch round. Fit into 9-inch pie plate. Trim edge, leaving 1/2-inch overhang, then fold over and crimp decoratively. Chill shell 30 minutes.
  • Scatter walnuts in shell. In medium bowl, whisk together eggs, maple syrup, butter, vanilla, brown sugar, and salt. Pour mixture into pie shell over nuts.
  • Transfer pie to baking sheet and bake 10 minutes. Reduce oven temperature to 350° F and bake until crust is golden and center is just set, 25 to 30 minutes more.
  • Transfer pie to rack and cool at least 10 minutes before cutting. Serve warm or at room temperature.

FRENCH CANADIAN MAPLE SUGAR PIE

I found this recipe in the Maple Syrup Cookbook by Ken Haedrich. He says it's like a pecan pie with a nice tart edge, and that it's excellent with vanilla ice cream. Where the recipe calls for brewed tea, he suggests using lemon herbal tea. I can't wait to try it!

3 eggs
3/4 cup firmly packed brown sugar, plus
2 tablespoons firmly packed brown sugar
3/4 cup pure maple syrup
6 tablespoons butter, melted
1/4 cup brewed tea
2 tablespoons apple cider vinegar, plus
1/2 teaspoon apple cider, vinegar
1 pinch salt
3/4 cup coarsely chopped walnuts

Steps:

  • Line a 9-inch pie plate with the pastry crust, and refrigerate or freeze.
  • Preheat oven to 450°F.
  • Whisk together the eggs and sugar in a large bowl.
  • Add the maple syrup, butter, tea, vinegar, and salt, whisking until smooth.
  • Stir in the walnuts.
  • Place the pie shell on a heavy baking sheet and pour in the filling.
  • Place on the center rack of the oven and bake for 10 minutes.
  • Then reduce oven to 350F and continue to bake until the center is set, about 25 minutes longer.
  • Cool on a wire rack.
  • Serve warm or at room temperature.
  • This is good cold, too.

There's no maple syrup in this pie recipe, and that's not a mistake. Instead this brown sugar chess pie, injected with a shot of whiskey, will remind you of maple candies thanks to its rich caramel notes.

1 teaspoon sugar
Pinch of kosher salt
1 1/4 cups all-purpose flour, plus more for surface
4 tablespoon chilled unsalted butter, cut into pieces
1/4 cup chilled lard or shortening
Nonstick vegetable oil spray
Filling and assembly:
2 cups (packed) light brown sugar
1 cup heavy cream
1/2 cup (1 stick) unsalted butter
1 tablespoon whiskey
2 teaspoons vanilla extract
5 large eggs, room temperature
1 cup all-purpose flour
3/4 teaspoon kosher salt
Whipped cream (for serving)

Steps:

  • Dough:
  • Pulse sugar, salt, and 1 1/4 cups flour in a food processor to combine. Add butter and pulse until the largest pieces are pea-size. Add lard and pulse again until mixture resembles coarse meal. Transfer to a large bowl and drizzle in 3 Tbsp. ice water; mix with a fork to combine. Knead 3-4 times to bring dough together (only a couple of floury spots should remain). Flatten dough into a 1/2"-thick disk, wrap in plastic, and chill until firm, at least 2 hours.
  • Let dough sit at room temperature 5 minutes to soften.
  • Roll out dough on a lightly floured surface to a 12" round, rotating often and dusting with more flour as needed to prevent sticking. Transfer to a 9" pie dish. Lift up edges and allow dough to slump down into dish. You should have about 1" overhang. Fold edges under and crimp. Freeze 15 minutes.
  • Meanwhile, preheat oven to 425°F. Lightly coat a sheet of foil with nonstick spray and place in pie crust, coated side down, pressing into bottom and up sides. Fill with pie weights or dried beans and bake until edges of crust are pale golden, 15-20 minutes. Carefully remove foil and weights and continue to bake crust until bottom is golden and looks dry, 12-18 minutes more. Transfer dish to a wire rack and let crust cool.
  • Filling and assembly:
  • Preheat oven to 325°F. Heat brown sugar, cream, and butter in a large heatproof bowl set over a large saucepan of barely simmering water, stirring constantly, until butter is melted, sugar is dissolved, and mixture is smooth (do not let bowl touch water). Remove bowl from heat and stir in whiskey and vanilla. Whisking constantly, add eggs one at a time, incorporating completely after each addition. Add flour and salt and whisk just until smooth. Scrape filling into crust and place on a foil-lined rimmed baking sheet.
  • Bake pie until filling is browned all over, puffed around the edges, and still slightly wobbly in the center, 45-55 minutes. Transfer dish to a wire rack and let pie cool at least 4 hours before slicing (the longer you can wait, the easier it'll be to slice; do not refrigerate).
  • Serve pie topped with whipped cream.

  • Dough can be made 3 days ahead; keep chilled, or freeze up to 1 month. Crust can be baked 1 day ahead; store tightly wrapped at room temperature. Pie can be baked 1 day ahead. Let cool, then store loosely covered at room temperature.
