1 (432 g) can pineapple rings, drained (slices a.k.a. rings)
maple syrup
brown sugar
1 dash ground cinnamon or 1 dash ground ginger, to taste

Steps:

  • Empty drained can of pineapple rings into a flameproof dish.
  • Drizzle with maple syrup (to taste) and sprinkle with brown sugar (to taste).
  • Grill under medium-hot grill until sugar is bubbling and caramelised.
  • Serve with Greek-Style yoghurt (a strained, extra thick yoghurt), Vanilla Ice Cream or creme fraiche.
  • Sprinkle with cinnamon or ginger or other spice to personal taste.

FROZEN PINEAPPLE TREAT

1 pineapple (see Cook's Note)
1 banana
3 tablespoons cream of coconut
Maraschino cherries, for garnish
2 mini bottles rum, optional, for serving

Steps:

  • Slice the pineapple in half lengthwise, leaving the greens attached. Use a paring knife to cut away the fruit and core from both halves of the pineapple, leaving a thin border of fruit intact to make 2 pineapple boats. Cut the fruit into chunks and set aside. Place the pineapple boats in the freezer until you are ready to serve.
  • Peel the banana and cut into chunks. Place the pineapple and banana chunks on a parchment-lined baking sheet or dish and freeze until frozen, about 4 hours.
  • In the bowl of a food processor, combine the frozen fruit and cream of coconut. Pulse until the mixture forms a thick paste, about 3 minutes. Gradually drizzle in 1/2 cup water, pulsing, until the consistency of soft serve is reached.
  • Scoop the soft serve into the frozen pineapple halves and garnish each with maraschino cherries and a small bottle of rum if desired. Serve immediately.

Flash Fried Pineapple, Bannana, and Kiwi with Marshmallow, Chocolate, and Granola image

1 ripe pineapple
1 banana
1 kiwi
2 eggs
1/4 cup heavy cream
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup bread crumbs
3 cups fryer oil
1/4 cup chocolate syrup
1/3 cup mini marshmallows
1/4 cup granola

Steps:

  • Cut pineapple in 1/2 lengthwise. Carve 1 half out reserving for "bowl" that the fruit will go into after frying. Remove the skin and core from the other half and cut into long spears.
  • Prepare the banana by peeling and cutting in half long ways.
  • Prepare kiwi by skinning and cutting in 1/2.
  • Heat fryer or fryer oil to 350 degrees F.
  • To prepare batter, combine eggs, cream, vanilla, and cinnamon. Whisk until well blended. Coat fruit in batter, and then roll fruit in bread crumbs.
  • Add the coated fruit to the hot oil, in batches, and fry until golden brown, about 1 to 2 minutes. Drain on a paper towel lined plate.
  • Place hollowed pineapple on plate, put fried fruit back in the pineapple, drizzle syrup on plate to dip along with mini marshmallows and granola.
