2 pounds baked sweet potatoes, peeled and cut into slices
2 Golden Delicious apples, peeled, cored and cut into slices
1/3 cup maple syrup
3 tablespoons butter
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 400˚F. Butter a gratin or baking dish. Decoratively arrange potatoes and apples in gratin or baking dish. Combine maple syrup, butter, cinnamon and salt to taste in saucepan. Bring to a simmer, stirring. Pour over potatoes and apples. Bake 25 minutes. After baking, put under broiler about 4 inches from heat for 1-2 minutes, or until lightly browned.

3 medium sweet potatoes (1 1/2 to 2 pounds), scrubbed well
4 tablespoons (1/2 stick) unsalted butter
3/4 cup pure maple syrup
Coarse salt and freshly ground pepper
Small sprigs fresh thyme, for garnish

Steps:

  • Preheat oven to 400 degrees. Slice each sweet potato in half lengthwise, and slice each half crosswise into 1-inch-thick half-moons.
  • Melt butter in a large cast-iron or other ovenproof skillet over medium heat. Add sweet potatoes; toss to coat evenly. Add maple syrup; toss potatoes to coat, and bring to a boil.
  • Transfer skillet to oven; cook, stirring occasionally, until potatoes are golden, well glazed, and tender when pierced with a paring knife, about 20 minutes. Remove from oven, and season with salt and pepper. Serve hot, garnished with thyme.

4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
  • Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

1-3/4 to 2 pounds apples, peeled
3/4 cup maple syrup

  • Cut sweet potatoes and apples into 1/4-in. slices. Layer in a greased 13-in. x 9-in. baking dish. In a saucepan, bring syrup, cider, butter and salt to a boil. Pour over potatoes and apples. Cover and bake at 350° for 1 hour. Uncover and bake 10-15 minutes more or until tender.

3 sweet potatoes, peeled and quartered
½ cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 large cooking apples - peeled, cored and cut into 1/4 inch rings
¼ cup all-purpose flour
¼ cup firmly packed brown sugar
¼ cup butter
¼ cup chopped pecans

Steps:

  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
  • In a small bowl, mix brown sugar, cinnamon and nutmeg.
  • Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
  • In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
  • Bake in the preheated oven 30 minutes, or until lightly browned.

Move over marshmallows here's a new twist on an old favorite. Apples and maple syrup add a sweet surprise to this candied yam inspired casserole, sure to be a staple for Thanksgivings to come. And your young chefs will love making it almost as much as eating it! I found this recipe inb Working Mother magazine. I have not tried this recipe, but I'm posting it for safe keeping.

5 tablespoons unsalted butter
3 tablespoons all-purpose flour
3/4 cup pure maple syrup
1/2 teaspoon salt
1/4 cup dark brown sugar
3 large sweet potatoes, peeled and sliced 1/4-inch thick (3 pounds)
3 granny smith apples, peeled and cored and thinly sliced (1 1/2 pounds)

Steps:

  • Heat oven to 350. Let the kids coat a 9x13-inch baking pan with 1 tablespoon of the butter; set aside.
  • In a small pan, melt remaining butter over medium-low heat. Whisk in flour until well blended and cooked, about 1 minute. Add maple syrup, salt and brown sugar. Simmer, whisking frequently, until the sugar dissolves and sauce thickens, about 4 minutes. Remove sauce from heat.
  • Help kids arrange a row of sweet potato and apple slices, alternating and overlapping them, in the prepared pan. They can continue to make rows until the pan is full. Pour the sauce evenly over potatoes and apples. Cover pan tightly with foil and bake 40 minutes.
  • Raise oven temperature to 450. Remove foil from pan and use a spoon to baste the juices over the top. Bake an additional 30 minutes, or until potatoes are tender and nicely browned, basting juices over the top every 10 minutes. Serve immediately or keep warm in a 200 oven up to 30 minutes.

1 teaspoon lemon juice
3 pounds sweet potatoes (about 5 medium), peeled and thinly sliced
1/4 cup maple syrup
1 tablespoon butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup soft bread crumbs
2 teaspoons olive oil
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon cider vinegar

Steps:

  • Place apples in a large bowl; sprinkle with lemon juice. Add the sweet potatoes, syrup, butter, salt and pepper; toss to coat. , Transfer to a 3-qt. baking dish coated with cooking spray. Bake, uncovered, at 400° for 35-40 minutes or until apples are tender, stirring once. , In a small bowl, combine the bread crumbs, oil, cinnamon, nutmeg and vinegar; sprinkle over potato mixture. 4 pounds red-skinned sweet potatoes (yams), peeled, cut into 3/4-inch chunks
1/2 cup pure maple syrup (preferably Grade B)
3 tablespoons unsalted butter, cut into 1/2-inch cubes

Steps:

  • Preheat oven to 400°F. Oil 2 large rimmed baking sheets with 1 tablespoon oil each. Combine sweet potatoes and remaining 2 tablespoons oil in large bowl; toss. Divide sweet potatoes between baking sheets, spreading evenly. Sprinkle with salt and pepper. Roast until almost tender, turning occasionally with metal spatula, about 35 minutes. (Can be prepared 2 hours ahead. Let stand uncovered at room temperature.)
  • Drizzle maple syrup over sweet potatoes and toss to coat. Roast until sweet potatoes are tender and syrup is reduced to glaze and coats sweet potatoes, about 20 minutes.
