MAPLE-GINGER GLAZED CARROTS

- In a Dutch oven, combine the carrots, water, 2 tablespoons butter and ginger. Cover and cook for 10 minutes. Cook, uncovered, until carrots are crisp-tender, 6-8 minutes longer., Stir in the syrup, vinegar, salt and pepper. Cook, stirring frequently, until sauce is thickened, 5-6 minutes. Stir in remaining butter. If desired, garnish with parsley.

MAPLE-GINGER GLAZED CARROTS

- Directions 1.In 5- to 7-quart saucepot, combine carrots, water, ginger, and 2 tablespoons margarine. Cover and cook on medium 10 minutes, stirring occasionally. Uncover and cook 10 to 12 minutes or until liquid has evaporated and carrots are almost tender. 2.Add maple syrup, vinegar, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper, and heat to boiling on medium-high. Boil 8 to 10 minutes or until syrup is thick and carrots are tender and coated with glaze, stirring frequently. Remove pan from heat; stir in remaining 1 tablespoon margarine. To serve, spoon carrots into serving bowl and garnish with parsley.
MAPLE-GINGER GLAZED CARROTS
Adapted from the Nov 09 issue of Better Homes and Gardens. The flavor of ginger with the slight sweetness of maple syrup was wonderful. The tiny bit of cider vinegar cuts the sweetness, and really enhances the flavor.

- In a medium saucepan, combine carrots, water, ginger and margarine.
- Cover and cook on medium, for 15 minutes until carrots are almost tender.
- Add maple syrup, vinegar, salt and pepper to taste, and heat to boiling.
- Boil 8-10 minutes, stirring frequently, or until carrots are at desired tenderness and and coated with glaze.
