Breakfast Pie With a Hash Brown Crust image

Breakfast pie is a delicious savory breakfast of creamy quiche over a crispy hash brown crust. The bacon lattice crust makes it really special.

8 frozen hash brown patties (thawed)
10 slices bacon
1 tablespoon butter
1 cup mushrooms (diced)
1 teaspoon salt ( divided )
1/2 teaspoon ground black pepper (divided)
6 eggs
1 cup whole milk
1 cup shredded cheddar cheese
1/4 cup scallions (chopped)
2 tablespoons maple syrup

Steps:

  • Gather the ingredients. Preheat the oven to 400 F.
  • Grease a pie tin and press the hash browns into the pie tin, covering the bottom completely and pressing up onto the sides.
  • Bake in the preheated oven for 10 minutes until just browned.
  • Add the bacon slices to a sheet pan lined with parchment paper.
  • Cook in the preheated oven for 10 minutes, or until firm but not crispy.
  • While the crust and bacon are cooking, prepare the mushrooms. Add the butter to a sauté pan. Once melted, add the mushrooms and half of the salt and pepper. Cook on medium-high heat until browned, about 3 minutes.
  • Whisk the eggs together until completely beaten and the whites and yolks are totally incorporated.
  • Whisk the cooked mushrooms, milk, shredded cheese, and chopped scallions into the eggs. Season with the remaining salt and pepper.
  • Pour the egg mixture into the hash brown crust. Bake for 25 minutes or until the eggs are mostly set.
  • Form the bacon into a lattice crust over the top of the egg. Then brush the bacon with the maple syrup.
  • Bake for another 10-15 minutes or until the bacon has finished crisping and the egg mixture is cooked through. You can test by sticking a knife in the center. If it comes out clean, it's ready to go.
  • Serve with additional scallions and maple syrup if you wish.

1 refrigerated pie crust
2 cups whole milk
4 large eggs
3 green onions
1 cup shredded cheddar cheese
3 slices thick cut bacon, cooked and crumbled
2 cups frozen hash browns, cooked
3/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
10 slices thick cut bacon
1/4 cup maple syrup, for brushing

Steps:

  • Preheat oven to 350.
  • Whisk eggs, milk salt and pepper together in large miing bowl.
  • Add cheese, hash rowns, green onion and crumbled bacon and stir to combine.
  • Lay pie crust in bottom of 9 inch pie dish.
  • Pour egg mixture into pie pan.
  • Bake for 35-40 minutes or until the quich is firm enough to lay the bacon on.
  • remove pie and increase the temperature to 450.
  • Weave bacon into a lattice on top of pie.
  • Brush each strip of bacon with maple syrup.
  • Cover the edges of pie with aluminum foil to prevent burning.
  • NOTE: The bacon will shrink a lot, so it's fine that the bacon is hanging of the sides.
  • Return pie to oven and bake for 10-15 minutes or until bacon is done.
  • Tip pie dish carefully to drain any bacon grease.
  • If you like extra crispy bacon, you could put pie under the broiler for a couple of minutes, or until bacon has reached your preferred doneness.
  • Let pie sit for 5 minutes before serving.

3/4 pound thick-cut smoked bacon (16 slices)
1 to 2 tablespoons good maple syrup

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove the pan carefully from the oven; there will be hot grease in the pan! Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown. 3 slices bacon
1 tablespoon dark brown sugar
1 pastry for a 9-inch double-crust pie
10 Granny Smith apples - peeled, cored, and cut into 1/2-inch wedges
½ lemon, juiced
¼ cup butter
½ cup maple syrup
⅓ cup dark brown sugar
2 tablespoons apple cider vinegar
¼ cup all-purpose flour
¼ cup brown sugar
¼ cup unsalted butter, softened
½ teaspoon baking powder
¼ teaspoon ground cinnamon
1 pinch salt
1 tablespoon heavy whipping cream
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place bacon on a baking sheet and sprinkle 1 tablespoon brown sugar over the top.
  • Bake in the preheated oven until crisp, 10 to 20 minutes.
  • Line a 9-inch springform pan with pie crust pastry; refrigerate.
  • Combine apples and lemon juice in a bowl and toss to coat.
  • Melt 1/4 cup butter in a large skillet over medium-low heat; add maple syrup and 1/3 cup brown sugar. Bring to a boil, lower heat, and simmer until mixture is reduced by half, about 5 minutes.   • Combine flour, 1/4 cup brown sugar, 1/4 cup unsalted butter, baking powder, cinnamon, and salt in a food processor; pulse until crumbly. Break bacon into pieces, add to food processor, and pulse until combined with the crumble.
  • Tip apples into the pie crust in the springform pan. Fold dough over part of the apple filling to form an edge. Crimp the edges between your fingers. Top the apple filling with the crumble. Brush crust with cream and top with white sugar.
  • Bake pie in the preheated oven until the juices bubble and the crust is deeply golden, about 1 hour. If the crust starts to brown too quickly turn the oven down to 350 degrees F (175 degrees C).
