8 large eggs
1/2 cup whole-milk ricotta cheese
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1 package (8 ounces) frozen asparagus spears, thawed
1 large onion, halved and thinly sliced
1/2 cup finely chopped sweet red or green pepper
1/4 cup sliced baby portobello mushrooms

Steps:

  • Preheat oven to 350°. In a large bowl, whisk eggs, ricotta cheese, lemon juice, salt and pepper. In a 10-in. ovenproof skillet, heat oil over medium heat. Add asparagus, onion, red pepper and mushrooms; cook and stir 6-8 minutes or until onion and pepper are tender., Remove from heat; remove asparagus from skillet. Reserve eight spears; cut remaining asparagus into 2-in. pieces. Return cut asparagus to skillet; stir in egg mixture. Arrange reserved asparagus spears over eggs to resemble spokes of a wheel., Bake, uncovered, 20-25 minutes or until eggs are completely set. Let stand 5 minutes. Cut into wedges.

Also known as an 'Italian Omelette', this simple dish will spice up any 'need in a hurry' dinner (or breakfast, lunch, or brunch). I used chopped ham, but chicken, sausage would work. If you need to feed more people, just double and use larger pan.

4 eggs, slightly beaten
1 Tbsp fresh chopped basil
1/4 tsp salt
1/4 tsp black pepper
2 Tbsp olive oil
1 c chopped fresh vegetables, i.e. brocolli, squash, roma tomatoes, mushrooms
1/3 c green onions
1/2 c chopped, cooked ham
1/2 c shredded, cheddar cheese

Steps:

  • 1. In a bowl, combine eggs, basil, salt and pepper. Set aside.
  • 2. Heat oil in a small, no-stick skillet. Add veggies and green onion. Cook, uncovered for about 5 minutes or until veggies are crisp-tender, stirring occasionally. Stir in meat just long enough to warm.
  • 3. Pour egg mixture over the veggies in the skillet. Cook over medium heat and as egg mixture sets, run a spatula around the sides, so that uncooked portions can slide underneath. Continue until egg mixture is almost set. Surface should be just a little moist. Sprinkle top with the cheese.
  • 4. Pre-heat broiler. Place skillet 4-5 inches from heat and broil for 1-2 minutes or util top is set and cheese is melted.
  • 5. Enjoy.

It's the season I look forward to the most, though I have to admit Summer tomato season ranks right up there! Morels are a once a year treat and if you have access to them try...

10 or more morels sliced in half
1/2 c asparagus sliced in 1/2 inch pieces
1/2 c gold potatoes shredded or diced small
1/2 c sweet onion minced
5-6 medium or large eggs, lightly whisked
1/4 c heavy cream
1 c smoked gouda shredded
You decide butter to sauté

Steps:

  • 1. Set the oven to 350. Heat a well seasoned,12 inch, cast iron pan to hot. Add enough butter to the pan to at least coat the bottom, more if you love butter like I do! Keep the cast iron pan on medium heat. Add the potatoes and stir for a minute or two, so they don't stick. Keep stirring as you add the onions, cook onions to translucent. Turn the heat down a little. Add the morels and asparagus and cook until asparagus are slightly tender (they'll finish in the oven). remove from heat. Remove sautéed veggies to a plate or bowl.
  • 2. In a 4 cup measuring cup (or bowl) place the lightly whipped eggs and whisk in cream. Stir in cheese. Pour this mixture to the cast iron pan. Stir in your sautéed veggies. Place cast iron pan in heated oven. Bake for about 20 minutes, or until eggs are set and top is lightly golden browned, or as browned as desired. Removed from oven, cool slightly and flop frittata out onto a cutting board to slice.
  • 3. Serve immediately; frittata is best warm. Leftovers will keep airtight in the fridge for up to 5 days.

1/2 lb asparagus, cut into 1-inch diagonal pieces
4 ounces baby portabella mushrooms, sliced
2 garlic cloves, pressed
1 tablespoon olive oil
6 eggs
1 tablespoon milk
1/2 tablespoon fresh tarragon, chopped
1/2 cup asiago-parmesan cheese, finely shredded
1/2 tablespoon olive oil
1/2 tablespoon butter
1 pinch sea salt
1 pinch white pepper

Steps:

  • Steam asparagus as directed and set aside. Melt 1 Tbsp olive oil in pan over med high heat add garlic and saute till almost golden. Add mushrooms and continue to saute till mushrooms soften. Set Aside.
  • Combine eggs and milk in med bowl. Whisk till well beaten. Add salt pepper and tarragon. Whisk till well blended. Add cheese and whisk till light and fluffy.
  • Melt 1/2 tb oil and 1/2 tbs butter on low/med heat in large pan. Add egg mixture. Once bottom starts to settle lift up sides of egg and let the uncooked slide under. Spread asparagus and mushrooms onto egg. Once most of egg has cooked or has started to get a nice light golden brown, invert onto plate and place back into pan to cook other side. About 2-3 minutes.
  • Slide onto platter or large dinner plate. Slice into 8 "pizza slices" (or 4 :O))and serve immediately.

This recipe can be prepared in 45 minutes or less. Sautéed mushrooms and warm crusty rolls are excellent with the frittata. Finish with ripe pears, chocolate biscotti and espresso.

1/3 cup ricotta cheese
1 1/2 tablespoons chopped fresh mint
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons grated Parmesan cheese
1 tablespoon olive oil
10 ounces slender asparagus spears, trimmed, cut into 3/4-inch pieces
3 green onions, chopped

Steps:

  • Preheat broiler. Whisk first 5 ingredients and 2 tablespoons Parmesan in medium bowl to blend. Heat oil in medium nonstick broilerproof skillet over medium heat. Add asparagus and toss to coat. Cover skillet; cook until asparagus is crisp-tender, about 4 minutes. Add onions; stir 30 seconds. Stir in egg mixture. Cover, reduce heat to low and cook until almost set on top, about 8 minutes.
  • Sprinkle frittata with remaining 1 tablespoon Parmesan. Broil until top is set and starts to brown, about 2 minutes. Slide spatula around frittata to loosen; slide out onto plate and serve.

cooking spray for coating pan
1 c egg beaters
1 c reduced fat swiss cheese, shredded
1 c skim milk or 1%
1 jar(s) asparagus cut into 1-inch lengths
1 small onion, very thinly sliced
1 tsp ground black pepper
1 medium tomato, coarsely chopped

Steps:

  • 1. Preheat broiler. Mix Egg Beaters, cheese, and milk in a medium bowl until well blended; set aside.
  • 2. Spray medium oven-going skillet with cooking spray or wipe thinly with oil. Heat over medium heat. Add asparagus, onion, salt or seasoning salt, and pepper; cook and stir 3 minutes until vegetables are cooked but not too soft. Add tomatoes; cook 1 minute longer, stirring occasionally.

4 scallions, thinly sliced
2 tablespoons minced chives
2 tablespoons extra-virgin olive oil
4 tablespoons (2 oz) goat cheese

Steps:

  • Bring a medium pot of well-salted water to a boil. Meanwhile, prepare an ice water bath. Blanch asparagus until just tender, about 1 minute. Drain and transfer to ice water bath to cool. Drain. Set spears aside.
  • Whisk eggs with 1 tsp each salt and pepper. Stir in scallions, chives, and asparagus stalks.

1 medium zucchini
4 to 6 white mushrooms
1 red bell pepper
1 yellow bell pepper
16 large eggs
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 tablespoon chopped chives
1/2 cup finely grated Gruyere or fontina cheese
Vegetable oil cooking spray

Steps:

  • Lightly spray two 24-mini-muffin tins with vegetable-oil spray. Slice zucchini into 1/8-inch rounds. Slice mushrooms lengthwise into 1/8-inch pieces. Core and seed red and yellow bell peppers. Chop into 1/8-inch dice, and set aside.
  • Heat oven to 400 degrees. In a large mixing bowl, whisk eggs, salt, pepper, and chives, and set aside. Arrange cut zucchini, mushrooms, and peppers in each muffin tin. Ladle egg mixture into each tin, just even with the rim, and sprinkle with cheese.

Nonstick vegetable oil cooking spray
8 large eggs
1/2 cup whole milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 ounces thinly sliced ham, chopped
1/3 cup freshly grated Parmesan
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes.
