¼ cup olive oil
2 teaspoons minced fresh ginger root
1 teaspoon lemon juice
1 teaspoon orange juice
1 teaspoon brown sugar
1 pinch white sugar
4 skinless, boneless chicken breast halves - cut into bite-size pieces
salt to taste
3 mangos - peeled, seeded, and diced
skewers

Steps:

  • In a shallow container, mix the olive oil, ginger root, lemon juice, orange juice, brown sugar, and white sugar. Place the chicken breasts in the mixture, and marinate at least 30 minutes in the refrigerator.
  • Preheat the grill for high heat. Season chicken with salt, and alternately thread chicken and mango onto skewers. Discard marinade.
  • Lightly oil the grill grate. Place skewers on the grill, and cook 15 minutes, turning to cook on all sides, until chicken juices run clear.

1 cup plain whole milk yogurt
1/4 cup sugar, optional, depending on the sweetness of the mango
4 mangos, peeled and diced (or about 2 cups frozen mango chunks, thawed)
1 lime, zested and juiced
2 teaspoons chile powder
Large pinch cayenne pepper
1/2 to 1 cup water, depending on how juicy the mangoes are
Pinch kosher or sea salt

The original is often made with tajín spice, a store-bought blend of ground chile, lime and salt. This preparation allows you to use any variety of mango, in states of ripeness from soft and juicy to firm, and the homemade chile-lime salt can be used for a variety of savory or sweet dishes as a garnish or topping. If using store-bought chile-lime salt, substitute the ground chile, lime zest and salt with 2 tablespoons of the seasoning.

1 teaspoon Hungarian paprika
1 tablespoon kosher salt
1 tablespoon sugar
Mango or other fruit, for serving

Steps:

  • In a medium pan on medium heat, add the chili powder, sumac and paprika. Toast, stirring constantly, until you smell the spices really wake, 2 to 3 minutes. Remove from the heat and let cool about 30 minutes.
