1 cup chopped seeded peeled mango (about 1/2 medium)
1 teaspoon chopped fresh mint leaves
1 cup marshmallow creme
1 package (8 oz) cream cheese, softened
Assorted cut-up fresh fruit

Steps:

  • In food processor, place mango and mint. Cover; process about 10 seconds or until smooth.
  • Add marshmallow creme and cream cheese; process about 10 seconds or until well blended. Serve with fruit. Garnish with mint leaf, if desired.

3 medium mangoes, peeled and cut into 1/4-inch slices
3 medium Gala apples, cut into 1/4-inch slices
2 tablespoons lime juice, divided
1/2 cup plain yogurt
2 tablespoons honey
1 teaspoon minced fresh gingerroot
1/4 teaspoon salt
1/4 cup fresh mint leaves, thinly sliced

Steps:

  • In a large bowl combine the mangoes and apples. Drizzle with 1 tablespoon lime juice; toss to coat., In a small bowl, combine the yogurt, honey, ginger, salt and remaining lime juice. Stir into mango mixture. Sprinkle with mint and toss to coat. Refrigerate for at least 15 minutes before serving.

This is great served at the end of a spicy meal - Indian / Thai anything with a bit of a spice- the recipe is from a old Oriental Dinner Party Cookbook. Mind you I've also had it as a breakfast. I often don't even bother with the sugar, particularly if I'm using canned mangoes. It tastes great, can be prepared in advance & it easy to make - What more could you ask for.

1 mango, chopped (400g Can of Mango Slices works just a well)
1 (200 g) carton plain yogurt
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 cup toasted slivered almonds

Steps:

  • Puree mango in blender or processor until smooth.
  • Add toasted almonds; blend or process until almonds are finely chopped.
  • Place mango and almond mixture in a bowl add yogurt, sugar, cinnamon, mix well.
  • Serve with a selection of fresh fruit- bananas, grapes, fresh figs, peaches, pineapple, etc.

1 cup kraft marshmallow creme
1 (8 ounce) package cream cheese

Steps:

  • Puree mango in a food processor.
  • Then add marshmallow cream and cream cheese to the food processor and blend well.
  • Serve with different fruits for example: pineapple, kiwi, oranges, strawberries, cantaloupe, grapes.
