- In a large bowl, combine mangoes, blueberries and lemon juice. In a small bowl, combine sugar, cornstarch, cinnamon and ginger; sprinkle over fruit and toss to coat. Spoon into a 11-in. x 7-in. baking dish coated with cooking spray., For topping, in a large bowl, combine flour, 3 tablespoons sugar, baking powder, ginger, 1/4 teaspoon cinnamon, baking soda and salt. Add buttermilk; mix well. Drop dough by rounded tablespoonfuls into 6 portions onto fruit mixture. Combine remaining 1 tablespoon sugar and 1/4 teaspoon cinnamon; sprinkle over topping., Bake at 35-° for 35-40 minutes or until fruit is bubbly and topping browned. Serve warm.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine mangoes, water, and 1/2 cup white sugar in a saucepan over medium heat; simmer until sugar is dissolved, 5 to 6 minutes. Drain syrup from mangoes, reserving syrup.
- Beat 2 cups sugar and butter together in a bowl using an electric mixer until smooth and creamy. Whisk flour, baking powder, and salt together in a separate bowl until combined. Slowly mix flour mixture, alternating with milk, into creamed butter mixture, beating well after each addition. Stir vanilla extract into batter; pour into a 9x13-inch baking dish.
- Arrange mangoes on top of the batter and pour 2 cups reserved syrup over mangoes.
- Bake in the preheated oven until a toothpick inserted in the center of the cobbler comes out clean, 40 to 45 minutes.

July and August is the Mango season here in South Florida. Having an abundance of this lucious fruit I decided to make Cobbler with the ripe fruit. I followed my peach recipe but used mangos instead. The aroma of this cobbler had everyone mesmerized. It came out delicious. Enjoy

- 1. Combine the mangos, one cup sugar, and the 1/2 cup water in a sauce pan mix well and bring to a boil for 10 minutes
- 2. Preheat oven at 350 degrees and put the stick of butter in a three quart baking dish and place in the oven to melt. When melted pull out and coat the whole pan including the sides with the melted butter set aside.
- 3. Mix the remaing cup sugar, the flour and the milk slowely to prevent clumping. Pour the flour mixture over the melted butter. Do not stir.
- 4. Next spoon the fruit over the flour mixture and pour the syrup from the pan over the fruit. Sprinkle the cinnamon over the top and Bake for 30 to 45 minutes at 350 degrees. I alway double my recipe since I have a large family. The picture is mine doubled.

- The Filling : Preheat oven to 375°F.
- Place fruit into a large bowl and toss well with the flour, sugar and lemon juice.
- Pour into a 2-quart ovenproof casserole or other dish.
- It is best if the fruit fills the dish but doesn't rise above the edges.

- Simmer pineapple juice, 1/4 cup sugar & cornstarch for a few minutes, just until it begins to thicken, stir in peeled, sliced mangos, cook until hot; set aside, stir in 1 teaspoons vanilla.

- 1. Cream together softened margarine and sugar. Add milk and vanilla extract. Beat until combined.
- 2. Sift flour, baking powder and salt.
- 3. Add alternately dry ingredients with wet ingredients. Beat well until smooth. Pour batter into 9x9 inch cake pan.
- 4. Place the mangoes over batter. Pour juice.
- 5. Bake at 375 F for 45 minutes or until tester comes out clean. Serve with whipped cream or ice cream.
- 6. Note: For fresh mangoes - Peel skin of 4 mangoes (halved) and simmer for a few minutes with 1 cup water and 1/4 cup sugar. Use it's liquid for juice. Fresh mangoes that were simmered are juicier than the canned ones. Canned peaches are also great for this recipe. I prefer to use fresh mango, though.

- Combine the apples, Mango slices, 1/2 cup sugar and water in a sauce pan and mix well. Bring to boil and let it simmer for 7-8 minute.

- CRUST: To make crust process pecans, vanilla bean and salt into a powder in a food processor. Add 3/4 cup pitted dates and process until mixed well. Sprinkle 1/2 of crust onto bottom of pie dish and put remaining crust in a bowl. Leave any remaining crumbs in the food processor for the next step.

SANTA FE PEACH AND MANGO COBBLER

- In a bowl, combine fruit, jalapeno, sugar, cornstarch, and cinnamon. Stir to coat and let set for 1 hour.
- Set up grill for direct cooking over medium heat. In a bowl, blend together 1/4 cup of butter and sweet corn cake mix with a fork until crumbly. Set aside. Place remaining 1/4 cup butter in a 10-inch cast iron skillet (or other oven-proof skillet) and set on hot grill. When butter has melted, add fruit mixture. Stir to combine. Sprinkle the corn cake mixture to cover thefruit. Cover grill and cook 20 minutes or until mixture is bubbling and caramelized around the edges of the pan. Remove from grill and let cool. Serve warm with a scoop of ice cream or a dollop of whipped topping.
- INDOOR: Prepare fruit mixture as directed. Preheat oven to 350 degrees F. Lightly spray 4 ramekins with cooking spray; set aside. Prepare corn topping mixture as directed. Spoon fruit mixture into prepared ramekins and sprinkle with corn topping mixture. Bake for 45 minutes or until mixture is bubbling. Serve as directed.

How to make Blueberry Mango Cobbler Recipe

- Cut butter and shortening into small cubes and freeze 30 minutes.
- Add flour to a food processor. Add butter and pulse 3 or 4 times. Add shortening and pulse 3 or 4 times. (Short pulses.)
- Add salt and pulse three times at three seconds each time. (yes, I count.)
- Pour water, one tablespoon at a time into processor, pulsing after each addition.
- After all the water is in, pulse until dough gets crumbly, but stop before it forms a ball.
- Lightly flour plastic wrap (like Saran wrap) and turn the mixture onto the plastic wrap. Bring the dough together with your hands. Form the dough into a disc, seal tightly and refrigerate for at least 30 minutes.
- PIE FILLING
- Meanwhile, Place blueberries in a bowl. Cube mango and place with blueberries.
- Stir in lemon juice and zest.
- Add sugar and flour.
- Stir and allow to sit at room temperature until pie crust is ready.
- TO MAKE CRUST
- Roll the dough out on a cool surface as quickly as possible to keep the dough from melting.
- Roll evenly. Measure the diameter by the pan you plan to bake in. I used a 8.5 inch cast iron skillet.
- ASSEMBLE
- Transfer the crust to the skillet with the help of your rolling-pin if necessary. Leave the crust hanging over the edge until you fill it.
- Spoon the blueberry mango mixture onto the crust. Gently fold over the edges. Brush with crust with the egg white.
- Sprinkle a pinch of salt over cobbler.
- Bake at 350 degrees for 45 to 55 minutes or until berries are cooked and crust is brown.
- Serve hot or cold. Great with vanilla ice cream.
