This is a recipe my daughter invented for a vegetable tray for a a family get together. We loved them so much, I had to get the recipe. The measurements are approximate, you can change it around to fit your tastes.

4 red, yellow, green peppers
1 c salsa
1/2 c sour cream
1 c shredded cheddar jack cheese
1 tsp cumin
1 tsp chili pepper
1 tsp garlic powder
1/2 tsp pepper

Steps:

  • 1. Take peppers and core them, cleaning them out. Then wash them and cut them into fourths length wise, making them like scoops.
  • 2. In a bowl, mix salsa and sour cream. Add spices. Mix in cheese. If mixture is too runny, you can add additional shredded cheese to thicken.
  • 3. Fill each pepper scoop with filling. Refrigerate util ready to serve. When placing on plate or tray, alternate pepper colors for a colorful addition to any veggie tray.

This recipes is from the Rachael Ray Show, it is her March Menu Mania contest winner. It is so good I had to share.

1 (32 ounce) box chicken stock
3 (8 ounce) cans white beans, left undrained
5 cups cooked chicken (rotisserie or boiled)
1 (16 ounce) jar salsa
1 (8 ounce) package monterey jack pepper cheese, grated
2 teaspoons ground cumin
2 garlic cloves, minced
black pepper or white pepper

Steps:

  • Place all ingredients except the corn chips in a crockpot. Cook on high until the cheese is melted.
  • Chili may also be cooked on the stovetop over medium-high heat until cheese is melted.
  • When the chili is ready, add the crushed corn chips, if using, and simmer for 10 minutes to thicken. Garnish with more chips, cheese and/or sour cream and serve.
