This orange chicken casserole is a healthy spin on your favorite take-out classic! Just a few simple ingredients and a casserole dish you can have a dinner packed with veggies, protein, and whole grains, in just 60 minutes.

15 oz. chicken breast (~2 large)
1.5 cups germinated brown rice
1/2 yellow onion (diced)
4 cups broccoli (chunked)
1.5 cups orange juice
2 cups chicken broth
1/4 cups tamari (or soy sauce)
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon minced garlic
1 teaspoon freshly ground ginger
2 tablespoon sriracha
1 teaspoon orange zest

Steps:

  • Preheat oven to 375ºF and spray your casserole dish with coconut oil cooking spray (be generous!).
  • Next, prep veggies by dicing the yellow onion and chopping broccoli into chunks. Sprinkle veggies in to casserole dish.
  • Prep chicken breast by cutting it into small pieces and then placing on top of the vegetables.
  • Add germinated brown rice into the casserole dish and set aside.
  • In a medium size bowl, mix together all ingredients for the sauce.
  • Add sauce mixture to the casserole dish and use a large spoon to mix all ingredients together, making sure everything is (mostly) covered.
  • Cover with tin foil and bake for 30 minutes.
  • Then, remove and stir. It will still be a little soupy, but don't worry this is how it's suppose to be! Place back in oven for 30 minutes, covered.
  • When casserole is done, take out and let sit for 10 minutes before serving.

2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1/2 cup orange juice
1/4 cup orange marmalade
2 tablespoons honey mustard
1/4 teaspoon dried rosemary, crushed
1 can (11 ounces) mandarin oranges, drained
1 teaspoon grated orange zest

Steps:

  • Flatten chicken to 1/4-in. thickness. In a large resealable bag, combine the flour, salt and pepper; add chicken. Seal bag and turn to coat; In a large skillet, brown chicken in oil on both sides., Combine the orange juice, marmalade, mustard and rosemary; pour over chicken. Bring to a boil. This is a light and easy chicken dish with a brightly-flavored sauce of Mandarin orange juice, lemon juice, soy sauce, and honey. The chicken is then served with the oranges and topped with slivered almonds and chow mein noodles on a bed of rice. The whole thing takes about 15 minutes to prepare and about 30 minutes to cook, so long as you defrosted the chicken ahead of time. Enjoy!

1 (11 ounce) can mandarin oranges, reserve liquid
3 tablespoons honey
1 lemon, juice of
2 tablespoons soy sauce
1 teaspoon dried ginger
3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 lbs boneless skinless chicken breasts, cut into strips
2 tablespoons butter
2 tablespoons oil
chopped cashews or slivered almonds, as garnish
3 cups hot cooked rice

Steps:

  • Make the sauce by combining reserved orange juice with honey, soy sauce, lemon juice,, and ginger in a small bowl.
  • Blend well and set aside.
  • Combine flour with salt and pepper in a shallow pie pan.
  • Set aside.
  • Trim off any fat and white veins from chicken breasts and slice each breast into about three strips.
  • Dry between double layers of paper towels.
  • Heat butter and oil in large skillet or wok over medium-high heat.
  • Coat all sides of chicken strips in seasoned flour and brown lightly in skillet.
  • Reserve browned pieces on a plate lined with paper towels.
  • When all chicken is browned, pour sauce into wok or skillet.
  • Place chicken in the sauce and turn to coat.
  • Reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, or until chicken is tender and white throughout and sauce begins to caramelize on the chicken.
  • Turn several times during cooking to coat evenly with sauce.
  • Meanwhile, prepare rice.
  • When chicken is done, remove from heat and quickly stir in the Mandarin oranges.
  • Sprinkle with your chosen garnish and serve over rice.

1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon canola oil
1 can (11 ounces) mandarin oranges
1 small onion, chopped
1/8 teaspoon crushed red pepper flakes
Hot cooked rice
2 teaspoons cornstarch
2 tablespoons water
1/4 cup minced fresh cilantro

Steps:

  • In a small bowl, combine the salt, ginger and pepper. Sprinkle over both sides of chicken. In a nonstick skillet, saute chicken in oil for 2 minutes on each side or until browned. Remove chicken to plate and keep warm., Reduce heat to medium-low. Drain oranges, reserving juice. Stir juice, onion and red pepper flakes into skillet. ¼ cup all-purpose flour
4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
2 tablespoons olive oil
2 tablespoons butter
⅓ cup hoisin sauce
⅓ cup orange juice
1 (11 ounce) can mandarin oranges, drained
1 tablespoon chopped green onions
¼ cup chopped cashews

Steps:

  • Place flour in a small bowl. Dredge chicken in the flour to lightly coat.
  • Heat olive oil and butter in a medium skillet over medium heat, and saute the chicken breasts until no longer pink and juices run clear. Set aside, and keep warm.
  • Stir hoisin sauce and orange juice into the skillet, and scrape up the browned bits. Mix in mandarin oranges, green onions, and cashews, Return chicken to the skillet. Continue cooking until all ingredients are heated through.
