3/4 pound boneless skinless chicken breast, cubed
1/4 cup reduced-sodium teriyaki sauce
2 teaspoons canola oil
8 cups torn mixed salad greens
1 can (11 ounces) mandarin oranges, drained
1 medium carrot, shredded
1/4 cup slivered almonds, toasted
3 tablespoons thinly sliced green onions
DRESSING:
2 tablespoons white vinegar
2 tablespoons olive oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a shallow dish, combine chicken and teriyaki sauce. Cover and refrigerate 1-2 hours. , Drain and discard marinade. In a large nonstick skillet, heat oil over medium-high heat. Add chicken; cook and stir until no longer pink, 5-7 minutes. Refrigerate until chilled., In a large bowl, combine salad greens, chicken, oranges, carrot, almonds and onions. In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Drizzle over salad; toss to coat.

⅓ cup rice vinegar
¼ cup orange juice
¼ cup vegetable oil

1 (8 ounce) package bow tie (farfalle) pasta
½ cucumber - scored, halved lengthwise, seeded, and sliced

Steps:

  • To make the dressing, whisk together the ginger root, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar, and garlic until well blended. Cover, and refrigerate until needed.
  • Bring a large pot of lightly salted water to a boil. Add the bowtie pasta and cook for 8 to 10 minutes or until al dente; drain, and rinse under cold water. Place pasta in a large bowl.
  • To make the salad, toss the cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, and almonds with the pasta. Pour the dressing over the salad mixture, and toss again to coat evenly. Serve immediately.

2 tablespoons sesame seed
1 teaspoon ground ginger
2 tablespoons teriyaki sauce

1 bag (10 oz) European-style or romaine salad mix
1 can (11 oz) mandarin orange segments, drained
1 cup fresh snow (Chinese) pea pods, cut in half if necessary
1/2 cup Asian-style dressing

Steps:

  • Heat oven to 425°F. Spray cookie sheet with cooking spray. Place Bisquick mix, sesame seed and ginger in 1-gallon resealable plastic food-storage bag; mix well. In small bowl, mix teriyaki sauce and oil. Coat chicken pieces with oil mixture.

3 cups diced cooked chicken (see directions)
1 cup diced celery
2 tablespoons lemon juice

8 ounces orecchiette (or similar pasta)
1 (15 ounce) can mandarin oranges (drained)
1 cup red seedless grapes
1/2 cup pecans (chopped)

365 Ways to Cook Chicken. This is such an easy and adaptable recipe. Feel free to use canned chicken, arugula instead of the watercress. I added some leftover (plain) steamed green beans to the salad and that was good too. Grape tomatoes would be a nice adddition.

1/2 cup chopped pecans
2 cups cooked chicken
1 bunch watercress, stems removed
1 (11 ounce) can mandarin oranges, drained
2 scallions, sliced
6 tablespoons olive oil
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 325. Toast pecans for 10-15 minutes.
  • In a salad bowl, combine chicken, watercress, oranges, scallions and toasted pecans.
  • Drizzle on oil, vinegar, salt and pepper. Toss to coat.

2 -3 tablespoons poppy seeds
1 (2 ounce) bag slivered almonds
1 (9 ounce) package Perdue Short Cuts original roasted carved chicken breasts
1 (15 ounce) can mandarin oranges
1/2 of 5 oz. can la choy chow mein noodles
3/4 cup canola oil
1/2 cup balsamic vinegar
2 tablespoons sugar
1 teaspoon salt

Steps:

  • Combine all salad ingredients.
  • Mix together dressing ingredients and toss with the salad.
  • Enjoy!

Well yasee I had this uncooked half chicken breast left from yesterdays experiments. Also the temperature is all ready in the mid 80s and upward bound. A souped up chicken salad seemed like a good idea for a main dish. I use my WOK a lot, particularly when it's hot out. I invented a chopped cashew salad dressing for this sort of thing some time back. It's rather good for fruit type salads . So Here we go, written as I fix it. A lot of my recipes are done this way typing notes into textpad as I work/invent.(Grynn)This is a BIG serving salad main dish or there's enough chicken for 2.

1/2 large b&s chicken breast, cut in about 1 inch bite sized pieces
1/2 tablespoon oil, for woking the chicken
1/2 cup drained mandarin orange segments, usually canned
1 cup mixed greens, the crisper the better,like iceberg or romain,depending on what available
1 hard-boiled egg, diced because i had it to use up (optional)
1/2 cup mild salad oil
1/4 cup vinegar
1/4 cup honey
1/4 cup chopped roasted cashews (I suppose you could use peanuts)
1 pinch salt, to taste

Steps:

  • Fire up the WOK and chow the chicken chunks until cooked through and set aside.
  • Remember this time it will have no additional cooking.
  • If you have cooked chicken use it.
  • A Woolfe Tip, when B&Schicken breasts are cheap, I chunk, WOK, and vac-bag freeze for later use.
  • Put all the dressing ingredients in a blender or small food processor and ZAP until blended.
  • I throw the cashews in as is, as I buy the pieces it's a lot cheaper that way.
  • You can do both the Chicken and dressing ahead of time.
  • Tear up the greens into a bowl.
  • Add the orange segments and cooled chicken.
  • Toss with the dressing.
  • I had this with some torn off bread.

1 teaspoon finely chopped, peeled fresh ginger
1/3 cup rice vinegar
1/4 cup orange juice
1/4 cup vegetable oil
1 teaspoon toasted sesame oil
1 (1 ounce) package dry onion soup mix
2 teaspoons white sugar
1 clove garlic, pressed
1 (8 ounce) package bow tie (farfalle) pasta
1/2 cucumber - scored, halved lengthwise, seeded, sliced and drained of excess natural water with salt
1/2 cup diced red bell pepper
1/2 cup coarsely chopped red onion
2 diced Roma tomatoes
1 carrot, shredded
1 (6 ounce) bag fresh spinach
1 (11 ounce) can mandarin orange segments, drained
2 cups diced cooked chicken
1/2 cup sliced almonds, toasted

Steps:

  • 1.To make the dressing, whisk together the ginger root, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar, and garlic until well blended. Cover, and refrigerate until needed. 2.Bring a large pot of lightly salted water to a boil. Add the bowtie pasta and cook for 8 to 10 minutes or until al dente; drain, and rinse under cold water. Place pasta in a large bowl. 3.To make the salad, toss the cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, and almonds with the pasta. Pour the dressing over the salad mixture, and toss again to coat evenly. Serve immediately.
