1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup sugar
1 tablespoon chopped fresh basil
1/4 teaspoon hot sauce
2 (15 ounce) cans mandarin oranges, drained and chilled
1 head red leaf lettuce, torn into pieces
1 head romaine lettuce, torn into pieces
1 lb bacon, cooked and crumbled
1 (4 ounce) package sliced almonds, toasted (optional)
salt and pepper

Steps:

  • In a bowl, add the first 5 ingredients; stir with a whisk until well blended.
  • Add the mandarin orange slices and lettuce to the bowl, toss to gently coat.
  • Sprinkle the bacon and toasted almonds into the bowl; toss gently to mix.
  • Season with salt and pepper if desired.
  • Serve immediately.

Spinach Salad with Mandarin Oranges and Warm Bacon Dressing image

The perfect salad for entertaining all winter long, and no one can ever refuse the warm bacon dressing!

Number Of Ingredients 12

6 cups washed baby spinach, 6 ounces
8 mandarin oranges, peeled and thinly sliced or diced, 1 pound
1 cup pomegranate arils, see notes
3/4 cup toasted pecan pieces
4 slices bacon, 4 ounces, see notes
1/2 Teaspoon Italian seasoning, with no additives, salt, or sugar
2 Tablespoons balsamic vinegar
1 Tablespoon Dijon mustard
1/2 Teaspoon sea salt, or to taste
1/4 Teaspoon freshly ground black pepper
3 Tablespoons olive oil
Optional: crumbled gorgonzola, feta, or goat cheese, I add 1/2 cup crumbled cheese of choice when I add cheese to this salad, (omit for Whole30, paleo, and dairy free).

Steps:

  • Place all the ingredients for the salad into a large serving bowl.
  • Cut the bacon strips in half lengthwise, then thinly slice them crosswise into bacon bit sized pieces, 1/4″.
  • Heat a cast iron skillet, (I used a 9″) over medium heat. When the pan is hot but not smoking, add the bacon to the pan and sauté until browned and the fat has rendered, about 3-5 minutes.
  • Turn off the heat and add the Italian seasoning, balsamic vinegar, Dijon mustard, sea salt to taste, black pepper, and olive oil. Whisk to completely combine and then pour the dressing over the salad. Toss to combine and serve immediately.
  • For a nice presentation, you can keep back some of the mandarin oranges and pomegranate arils to sprinkle over the top.

3/4 cup mayonnaise
1/4 cup sugar
4 teaspoons cider vinegar
4 cups fresh broccoli florets
1 small red onion, halved and sliced
1/2 cup raisins
1/2 cup pecan halves, toasted
1 can (11 ounces) mandarin oranges, drained

Steps:

  • Whisk mayonnaise, sugar and vinegar; set aside. In a salad bowl, combine broccoli, onion, raisins and pecans. Drizzle with dressing; toss to coat. Gently stir in oranges. Refrigerate, covered, at least 3 hours before serving.

This is a tasty salad that I found online. Great for warm weather. Crumbled bacon, green onions, and of course, mandarin oranges!

1/2 lb bacon, cooled and crumbled
2 tablespoons white wine vinegar
3 tablespoons honey
1/2 teaspoon hot dry mustard
1/2 teaspoon celery salt
1/2 teaspoon ground paprika
1/4 cup olive oil
1 head red leaf lettuce, torn into bite-size pieces
1 (15 ounce) can mandarin oranges, drained
1 bunch green onion, diced
3/4 cup almonds, sliced

Steps:

  • In a medium skillet over medium-high heat, cook bacon until evenly browned. Drain, cool and crumble.
  • To make the dressing, thoroughly blend the vinegar, honey,dry mustard, celery salt, paprika, and olive oil.
  • Place lettuce, oranges, green onion, bacon, and almonds in a serving bowl. Toss with dressing and serve.
