TURKEY INJECTED WITH RANCH DRESSING



Turkey Injected with Ranch Dressing image

1 cup mayonnaise
1/3 cup milk
2 tablespoons finely chopped fresh parsley
1 to 2 teaspoons chopped fresh dill
1 1/2 teaspoons apple cider vinegar
1 teaspoon salt, plus more for sprinkling
1/2 teaspoon garlic powder
1/2 teaspoon garlic salt
1/2 teaspoon freshly ground black pepper
One 12-pound turkey, giblets and neck removed from cavity, at room temperature
1/4 cup olive oil
2 tablespoons unsalted butter, melted
Gravy, for serving, optional

Steps:

  • Combine the mayonnaise, milk, parsley, dill, vinegar, salt, garlic powder, garlic salt and pepper in a blender and process until smooth, about 2 minutes. Measure out 3/4 cup of the ranch dressing and set the remainder aside for serving at the table.
  • Fill a turkey injector with the 3/4 cup ranch dressing and inject 2 tablespoons of the dressing into each thigh of the turkey, 1 tablespoon into each drumstick and 3 tablespoons into each breast. Let the turkey stand at room temperature for 30 minute to let the dressing soak into the meat. Discard any of the unused ranch dressing in the injector (it has been in contact with the raw turkey).
  • Mix together the olive oil and melted butter in a small bowl. Brush the turkey with the oil mixture and then sprinkle with salt.
  • Preheat an oil-less fryer for cooking (alternatively, follow oven-roasting directions below). Place the turkey breast-side up in the fryer with the legs in the deepest part. Cook the turkey until a meat thermometer inserted in the thickest part of the breast reaches 160 degrees F, about 2 hours. (The breast cooks slower than the legs in the oil-less fryer; carryover cooking will cook it the rest of the way through.) Remove the basket insert with the turkey and let the bird rest at least 30 minutes over a roasting pan. Remove the turkey from the basket, carefully dislodging any parts of the turkey that are touching the basket so the skin does not tear. Carve the turkey and serve with the reserved ranch dressing or gravy.
  • Alternatively, roast the turkey in the oven: Preheat the oven to 350 degrees F. Inject the turkey with the dressing as directed above and set it in a roasting pan. Roast, basting every 30 minutes, until a meat thermometer inserted in the thigh reaches 160 degrees F, about 3 hours (the carryover cooking will cook it the rest of the way through). Transfer to a carving board and let rest 30 minutes before carving.

1 (10-12 lb.) turkey, fully thawed and dry* (See Cook's Note)
1 (16 oz.) jar Cajun Injector® Creole Butter Marinade
1 (8 oz.) jar Cajun Injector® Cajun Shake Quick Shake Seasoning
3 gallons Cajun Injector® Frying Oil
Cajun Injector® Electric Turkey Fryer or Gas Turkey Fryer

Steps:

  • Place your turkey in the Cajun Injector® Electric Turkey Fryer. Fill the fryer pot with water until your turkey is completely submerged. Remove turkey from pot and mark the water line (this line will change depending on what size turkey you choose). Drain water and dry pot completely. Fill your fryer pot with Cajun Injector® Frying Oil, making sure to stop at the line that was previously marked. Heat oil to 400°F. While waiting for the oil to heat, remove the giblets from your turkey and discard or reserve for gravy. Rinse turkey thoroughly and pat dry. Inject your Cajun Injector® Creole Butter Marinade into the breast, thighs and legs. Sprinkle turkey generously with Cajun Injector® Cajun Shake Quick Shake Seasoning and rub it in with hands. Place turkey in fry basket and slowly lower basket into properly heated oil. Fry turkey 3½ minutes per pound. Juices should run clear when turkey thigh is pierced with fork. Hang basket from fryer hook to drain or use Cajun Injector® Quick Drain System. Slice turkey and enjoy the juiciest, most flavorful and fastest Thanksgiving turkey!

2 lb sirloin tip roast
2 pkg onion soup mix
2 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
1 1/2 c water

Steps:

  • 1. Cut roast into cubes (Hint: if roast is slightly frozen, it's easier to cut into cubes).
  • 2. Place cubed sirloin tips in a pot (cast iron is Mama's favorite method but any oven-proof pot will do).
  • 3. Sprinkle soup mix over the sirloin tips. Combine soups with water and pour over the top.
  • 4. Bake at 350 degrees for 2-3 hours. Serve over rice, noodles, or mashed potatoes (my favorite).
  • 5. Note: you can make these in a crockpot if you prefer. Cook on low for several hours and test the meat by spearing it with a fork. If it's falling apart, it's ready!
  • 6. Another note: you could use sirloin tips that are already cut into cubes but it's generally cheaper, if you don't mind the extra work, to buy a sirloin tip roast and make your own.

2 tablespoons kosher salt (DO NOT USE REGULAR SALT! WILL CLOG YOUR INJECTOR)
2 teaspoons garlic powder
2 teaspoons white pepper (DO NOT USE BLACK PEPPER, WILL CLOG YOUR INJECTOR)
2 teaspoons cayenne pepper
1/2 teaspoon onion powder
1 cup melted butter

Steps:

  • Melt butter slowly as not to burn.
  • Add rest of ingredients and mix well.
  • (I place in a covered bowl and shake vigorously).
  • Inject into your turkey and allow to sit for one hour or more before deep frying.
  • HINT: We were cooking the turkey while camping, and decided to leave it in the bag to inject it, so it would not be so messy!
  • It worked great!

1/4 cup water

½ cup lemon juice
½ cup butter, melted
1 clove garlic, minced
1 teaspoon English mustard powder
1 teaspoon minced fresh ginger
1 cup butter, softened
3 sprigs fresh rosemary, leaves stripped and finely chopped
2 sprigs fresh thyme, leaves stripped and chopped
2 small cloves garlic, minced
1 (14 pound) whole turkey, neck and giblets removed
1 tablespoon olive oil, or to taste

Steps:

  • Stir chicken broth, lemon juice, 1/2 cup melted butter, 1 clove garlic, mustard powder, and ginger together in a bowl. Cover bowl with plastic wrap and refrigerate marinade for flavors to blend, about 30 minutes.
  • Mix 1 cup softened butter, rosemary, thyme, and 2 cloves garlic together in a bowl until rub is evenly combined.
  • Separate skin from the meat of the turkey by running your hand under the skin to separate. Spoon rub mixture evenly under the skin in several different parts of the turkey.
  • Pour marinade into a meat injector and inject the meatiest parts of turkey with marinade, changing the angle of the needle several times.
  • Brush turkey with olive oil and season with salt and pepper; place in roasting pan and cover with plastic wrap. Refrigerate turkey for 12 to 24 hours.
