My mom's famous make-ahead cauliflower salad for picnics and barbeques.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Chop into small pieces.
- Layer iceberg lettuce, cauliflower, red onion, bacon, mayonnaise, sugar, and Parmesan cheese in a large bowl, in that order. Cover tightly with plastic wrap. Place a heavy pan on top of the salad to press it down.
- Refrigerate for 24 to 36 hours, checking occasionally that salad is still pressed down.
- Toss salad; season with black pepper.

CRUNCHY RAMEN NOODLE SALAD - MAKE AHEAD
This makes a great meatless meal, a lovely luncheon or dinner salad when topped with a grilled & sliced chicken breast. I tend to like a tangier dressing so I use less oil than vinegar. Feel free to adjust to your taste. The amount of added veggies, fruits & nuts can be increased as well. I recently discovered that by adding sugar snap peas & seedless cucumbers it has a more "Asian" flair to it. Enjoy! This can be made a day ahead and tossed with the dressing before serving. Prep time does not included grilling chicken breast or shrimp. If serving as a side salad, this will serve up 8-10+.

- For the collards: Whisk the mayonnaise, mustard, anchovy paste, lemon juice, garlic and Worcestershire sauce together in a large mixing bowl. While continuously whisking, slowly drizzle in the olive oil until homogenous.
- Add the collard greens to the dressing and massage to coat. Chill for at least 2 hours before serving.
- For the croutons: Preheat an air fryer to 350 degrees F.
- Combine the olive oil, garlic powder and black pepper in a medium bowl. Gently toss the crackers in the olive oil until coated. Place the crackers in the air fryer and cook until golden brown, about 4 minutes. Set aside to cool slightly.
- When ready to serve, mound the greens on a serving platter. Cover the greens with the Parmesan. Sprinkle with freshly cracked black pepper. Crush the cracker croutons over the salad and serve.

- Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Allow to cool.
- Whisk orange juice, vinegar, orange zest, salt, curry powder, and pepper together in a small bowl. Slowly drizzle in olive oil, whisking continuously until well blended.
- Line up 5 pint jars in an assembly line fashion.
