1 cup Original Bisquick™ mix
2 cups milk
1/4 teaspoon pepper
4 eggs
1 lb bacon, crisply cooked and chopped
6 cups Cascadian Farm™ Spud Puppies™ frozen organic crispy golden potatoes
1 cup shredded Cheddar cheese (4 oz)
1 tablespoon sliced green onion (1 medium)
Ketchup, if desired

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In large bowl, stir Bisquick mix, milk, pepper and eggs until blended; pour into baking dish, and top with half of the bacon.
  • Place frozen potato nuggets in single layer on ungreased large cookie sheet with sides. Place both the baking dish and cookie sheet in oven. Bake 20 minutes.
  • Place potato nuggets evenly on top of Bisquick bake; top with cheese and remaining bacon. Bake 10 to 15 minutes longer or until knife inserted in center comes out clean. Cool 5 minutes. Top with green onion. Serve with ketchup.
  • Make-Ahead Directions: Make Bisquick bake as directed through step 2. Cover and refrigerate up to 12 hours. Uncover, and continue as directed in step 3.

20 ounces sliced potatoes, packaged and refrigerated
1 lb smoked sausage
1 large onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 garlic cloves
2 cups cheddar cheese, shredded
1 cup mozzarella cheese, shredded
12 eggs
3/4 cup milk
salt and pepper

Steps:

  • Grease a 13x9" pan,.
  • In a skillet, cook sliced sausage until it starts to brown- about 5-7 minutes.
  • Drain sausage if necessary.
  • Add chopped onion, cook 2 minutes.
  • Add chopped green and red peppers, cook 1 minute.
  • Add three cloves finely chopped garlic and cook for about 30 more seconds.
  • Spread half of the potatoes onto the bottom of your cake pan, salt and pepper to taste.
  • Spread on half of your sausage mixture.
  • Spread on 1 cup of cheddar cheese and 1/2 cup mozzarella cheese.
  • Repeat layers.
  • In another bowl, mix together to eggs and milk, salt and pepper.
  • Pour the eggs onto the layers and let sit in the refridgerator for 8 hours.
  • Cook in the oven on 350 for 1 hour and 30-40 minutes.
  • Let stand 5 minutes before cutting.

2 1/2 cups shredded cheddar cheese or 2 1/2 cups swiss cheese, divided
1/4 cup butter
1/2 lb fresh sliced mushrooms
1 small chopped yellow onion (or use 6 green onions, chopped)
1 small green bell peppers or 1 small red bell pepper, seeded and chopped
2 cups fully-cooked cubed ham
8 large eggs
1/4 cup all-purpose flour
1 3/4 cups half-and-half cream or 1 3/4 cups milk
1/4 teaspoon seasoning salt or 1/4 teaspoon white salt
fresh ground black pepper (to taste)

Steps:

  • Grease a 13 x 9-inch caserole dish.
  • Sprinkle 2 cups shredded cheddar cheese or Swiss cheese into the bottom of the casserole dish.
  • In a skillet melt butter over medium-high heat.
  • Add in mushrooms, onion and and bell pepper; cook stirring until softened and the mushroom loose their moisture, then stir in chopped ham.
  • Sprinkle the mixture over the cheese.
  • In a medium bowl whisk together the eggs with flour, half and half cream or milk, salt and pepper; pour over the ham mixture.
  • Cover and refrigerate overnight.
  • Remove from fridge 30 minutes before baking.
  • Set oven to 350 degrees F.
  • Bake uncovered for 35-40 minutes or until a knife inserted into the middle comes out clean.
  • Remove from oven and sprinkle about 1/2 cup shredded cheddar cheese on top and allow to melt.

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch skillet, cook sausage over medium heat 5 to 7 minutes, stirring occasionally, until sausage begins to brown; drain if necessary. Add onion; cook 2 to 3 minutes or until slightly softened. Add both bell peppers; cook and stir 1 minute. Add garlic; cook and stir 30 seconds or until softened.
