This is an easy freezer meal to keep on-hand for busy evenings when you need to get dinner on the table quick!

1 pound boneless, skinless chicken breasts, sliced into thin strips
2 tablespoons vegetable or canola oil
2 teaspoons chili powder
1 1/2 teaspoons cumin
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon seasoned salt
1/2 teaspoon kosher salt
1 medium onion, sliced
1/2 red bell pepper, cut into strips
1/2 green bell pepper, cut into strips

Steps:

  • Place chicken, onions and bell peppers into gallon-size freezer bag.
  • Add remaining ingredients to bag.
  • Remove as much air as possible from bag and seal tightly. Knead bag to mix ingredients. Label and then lay flat in freezer to freeze.
  • Remove bag from freezer and that overnight in refrigerator.
  • Preheat oven to 400 degrees Fahrenheit.
  • Pour contents of bag into a 9x13 baking dish.
  • Bake for 20-25 minutes, until chicken is cooked through and peppers are soft.
  • Serve with warm tortillas and your favorite toppings.

1/2 cup onion, sliced
1/2 cup green bell pepper, sliced
1/2 cup red bell pepper, sliced
1 (1 ounce) package fajita seasoning mix
1 tablespoon finely chopped fresh garlic
10 (8 inch) flour tortillas, warmed
reduced-fat cheddar cheese, shredded
salsa
hot pepper sauce (optional)
guacamole (optional)

Steps:

  • Stir together all filling ingredients in slow cooker.
  • Cover; cook on low heat setting for 6-8 hours, or high heat setting for 3-4 hours. Drain off liquid.
  • Cut or shred meat, if desired.
  • To serve, place meat mixture on warm tortillas.
  • Top with desired toppings.
  • Note: To warm tortillas, heat oven to 275°F.
  • Wrap tortillas in aluminum foil.
  • Warm in oven for 15 to 20 minutes.

⅓ cup vegetable oil
2 teaspoons chili powder
1 teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch ground cayenne pepper
1 ½ pounds chicken tenders, quartered
4 cups sliced bell peppers, any color
1 onion, sliced
¼ cup chopped fresh cilantro
½ lime, juiced

Steps:

  • Combine vegetable oil, chili powder, oregano, garlic, onion, cumin, salt, pepper, and cayenne pepper in a large resealable plastic bag. Add chicken tenders, bell peppers, and onion; shake to mix.
