Easy Mahi Mahi Recipe with Lemon Garlic Sauce. A simple and wildly delicious way to prepare and serve this tender, flakey, and popular white fish.

4 (4-6 ounce) Mahi Mahi Fillets
salt (to season)
lemon pepper (to season)
1 lemon (thinly sliced)
1 lemon (juiced)
5 cloves garlic (minced)
1 tablespoon olive oil
4 tablespoon salted butter
2 tablespoon capers (drained (optional))
2 tablespoon fresh parsley (minced)

Steps:

  • Season the mahi mahi. Gently pat each mahi-mahi fillet dry with paper towels and generously season both sides of each fillet with salt and lemon pepper. Set aside.
  • Prepare the ingredients for the Lemon garlic sauce. Thinly slice one lemon and juice the other lemon into a small bowl so that you have approximately 4 tablespoons of fresh lemon juice. Mince the garlic and set it aside so that it is already ready for when it's time to cook the butter sauce.
  • Pan sear the mahi mahi. Add the olive oil to a large skillet set over medium-high heat. Once the olive oil is nice and hot, carefully add each fillet. Sear, undisturbed, until nicely golden brown on the bottom, and the sides are cooked just past halfway up the fillets, about 4 minutes depending on the thickness of your fish (the fish is cooked when it's no long opaque-looking). Flip and continue to cook on the other side until just cooked through, about 2-4 minutes more (mahi-mahi should reach an internal temperature of 137°F). Remove from heat and transfer fillets to a serving plate.
  • Prepare the garlic butter sauce. In the same skillet (or in a new one), heat the butter, lemon juice, and lemon slices over medium heat. Heat until the butter is melted and just starting to bubble. Stir in the garlic, reduce heat to low, and continue to cook for 1 minute, or until the garlic is lightly golden. Stir in the fresh minced parsley and drained capers (optional).
  • Combine and serve. Spoon the garlic butter sauce over the mahi-mahi and serve immediately.

Banana Leaf Mahi Mahi With Citrus and Chiles image

In the Yucatan region of Mexico, fish is commonly seasoned with spices like achiote, and wrapped in banana leaves to be grilled or roasted. In this recipe, we coat the filets with an aromatic citrus chile mixture made with cumin and oregano.

5 dried guajillo chiles, stemmed and seeded
2 tablespoons vegetable oil
1/2 cup chopped red onion
2 cloves garlic
1 teaspoon dried oregano, preferably Mexican
1 teaspoon ground cumin
1 orange (1/2 juiced, 1/2 thinly sliced into 6 half-moons)
1 lime (1/2 juiced, 1/2 thinly sliced into 6 half-moons)
Kosher salt
1 (16-ounce) package fresh or frozen banana leaves, thawed if frozen
6 (6-ounce) mahi mahi fillets

Steps:

  • Put the chiles in a bowl, cover with boiling water and soak until pliable, about 15 minutes. Reserve 1 tablespoon of the soaking liquid, then drain the chiles.
  • Meanwhile, heat the vegetable oil in a medium skillet over medium heat. Add the onion, garlic, oregano and cumin and cook until the onion is soft but not browned, about 5 minutes. Transfer to a blender along with the reserved chile soaking liquid, the chiles, orange juice, lime juice and 1 1/2 teaspoons salt; blend until smooth.
  • Unfold the banana leaves and cut into six 12-inch-long pieces; rinse and pat dry. Place a banana leaf shiny-side down on a work surface. Coat the fish generously with the pureed chile mixture. Place 1 mahi mahi fillet in the center of the leaf and top with a slice each of orange and lime. Fold 2 opposite ends of the leaf over the fish, overlapping them to tightly enclose the fish, then tuck the open ends underneath. Transfer to a large roasting pan or baking dish. Repeat to make 5 more banana leaf-wrapped fillets, then transfer the pan to the refrigerator and let the fish marinate 1 to 3 hours.
  • Preheat the oven to 400 degrees F. Remove the pan from the refrigerator and cover tightly with foil. Bake until the fish is just cooked through, opening a packet to check for doneness, about 35 minutes. Transfer to plates and carefully unwrap just before eating.

Four 4-ounce mahi-mahi fillets
Kosher salt and freshly ground black pepper
3/4 cup Food Network Kitchen™ Inspirations Cuban Style Orange Citrus Vinaigrette, plus more for drizzling
Vegetable oil, for oiling the grill grates
3 slices bacon, cut crosswise into 1/2-inch strips
1 small red bell pepper, diced
1/2 small red onion, diced
2 cups long grain white rice
1/2 teaspoon ground cumin
One 14.5-ounce can black beans, drained and rinsed
1/4 cup plantain chips, crushed
1 lime, quartered

Steps:

  • Preheat an outdoor grill to medium-high heat.
  • Sprinkle the mahi-mahi with salt and pepper. Coat in 1/4 cup of the Cuban Style Orange Citrus Vinaigrette in a shallow bowl or baking dish. Let marinate at room temperature for 10 minutes.
  • Meanwhile, add the bacon to a medium saucepan over medium heat and cook, stirring, until crispy, about 4 minutes. Use a slotted spoon to remove the bacon pieces, leaving the drippings in the pan. Add the peppers and onions and cook, stirring, until soft, about 4 minutes. Add the rice, 2 cups water, cumin and a large pinch of salt. Bring to a simmer, cover and reduce the heat. Cook until the rice is tender and the all water has been absorbed, 15 to 20 minutes. Stir in the beans and bacon pieces.
  • Brush the grill grates generously with oil. Place the fish on the grill, rounded-side down, and leave it until you can lift the fish without it sticking to the grill and there are distinct grill marks, about 5 minutes. (Test it by gently lifting a corner -- if it sticks, cook it a bit longer and try again.) Carefully turn the fish over and cook until firm to the touch, about another 5 minutes.
  • Divide the rice and beans among 4 plates. Top each with a piece of mahi-mahi. Drizzle with the remaining vinaigrette. Sprinkle with crushed plantains and serve each with a lime quarter.

1 - 1 1/2 lb. mani mahi fillets or other thick fish fillets, (or use extra-firm tofu or boneless, skinless chicken)
1/4 cup reduced-sodium soy sauce (or use any variety) (use wheat/gluten-free, if needed)
1 Tbsp rice vinegar or rice wine vinegar
1 juicing orange (use about 2 Tbsp. juice, or use store-bought orange juice)
1/2 lime (juice only, about 1 Tbsp.)
1 tsp. sesame oil
2 scallions (dark and light green parts thinly sliced)
1 tsp. sriracha or Asian chili sauce ((optional))

Steps:

  • Put the fish in an 8 x 8-inch glass or Pyrex baking dish. In a large measuring cup or bowl, combine the remaining ingredients and pour them over the fish (or tofu or chicken), and flip with a fork to coat.
  • Let it marinate on the counter for 10 - 30 minutes if time allows (if time doesn't allow, proceed with the recipe).

2 tablespoons lemon juice
3 tablespoons butter, melted (optional)
1/2 teaspoon ground ginger

8 orange slices
