I threw this together on a warm night when I didn't feel like cooking and wanted something cool and healthy but also filling. I was amazed at how low calorie this turned out and also how much I enjoyed it. I hope you do, too! You can easily substitute the pitas with tortillas to make these more like wraps, and there's plenty of flexibility to add or subtract ingredients (like maybe red onion or fresh basil for example - warmed up with a little feta cheese melted inside is not at all bad, either, I've learned). With the 4 servings, each serving will either stuff a half of a pita super full or be just enough for 1 whole pita cut in two filled not quite so full. Your choice.

1 (12 1/2 ounce) can chunk chicken, drained (reserve liquid if desired for future use as broth)
10 sprigs cilantro, chopped (to taste)
1/2 medium lime, juice of
1/4 medium cucumber, chopped
1 medium tomatoes, seeded and chopped
2 garlic cloves, minced
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/2 tablespoon extra virgin olive oil
4 -8 pita pockets (whole wheat if you can find them)

Steps:

  • Combine all ingredients in a medium bowl.
  • Refrigerate an hour or so, if desired. This is optional but does help the flavors set.
  • Spoon mixture into 1 or 2 pita pocket halves, depending on how stuffed you'd like them.

This is a very tasty and extremely simple sandwich. You do need to marinate the chicken at least 3 hours. I usually do it overnight.

¼ cup olive oil
¼ cup lemon juice
½ teaspoon salt
½ teaspoon dried oregano
¼ teaspoon garlic powder
⅛ teaspoon pepper
1 boneless, skinless chicken breast, cubed
1 pocket bread round, cut in half
1 small onion, sliced
1 tomato, sliced
½ cup plain yogurt

Steps:

  • Combine the olive oil, lemon juice, salt, oregano, garlic powder, and pepper in a large resealable bag. Add chicken cubes, mix well, and allow to marinate in the refrigerator 3 hours or overnight.
  • Pour the chicken and marinade into a frying pan over medium-high heat. Cook until the chicken is no longer pink. Stuff each half of the pocket bread with chicken, onion, tomato, and yogurt; serve while still hot.

1 lime, juiced
2 tablespoons honey
1 rounded teaspoon cumin
A handful cilantro, finely chopped, about 1/2 tablespoons
2 tablespoons extra-virgin olive oil, canola, or corn oil
Four 6 to 8-ounce boneless skinless chicken breast
1 teaspoon grill seasoning blend or coarse salt and pepper
Toppings: lettuce, tomato, red onion, and sliced avocado
1 cup prepared salsa verde
4 crusty rolls, split
Five Vegetable Slaw Salad, recipe follows
Assorted tortilla chips, for serving
1 pound packaged shredded cabbage
1 large red bell pepper, seeded and cut across into thin slices
1 large green bell pepper, seeded and cut across into thin slices
4 scallions, sliced thinly on an angle (greens and whites)
1/2 European seedless cucumber, halved lengthwise and thinly sliced
2 limes, juiced
1 /4 cup (3 healthy drizzles) honey
3 tablespoons (a couple of glugs) vegetable or light colored oil
Salt and pepper

Steps:

  • Combine first 5 ingredients in a small bowl. Sprinkle chicken with seasoning blend or salt and pepper. Coat chicken in dressing and set aside for 10 minutes.
  • Grill chicken on an indoor electric grill 6 to 7 minutes on each side or pan fry over medium high heat in a large nonstick skillet uncovered 6 minutes per side.
  • Slice chicken breasts on an angle and pile meat roll bottoms. Top with lettuce, tomato, red onion and sliced avocado. Spread salsa on roll tops as a condiment. Serve sandwiches with Five Vegetable Slaw Salad and assorted tortilla chips.
  • Combine vegetables in a bowl. In another small bowl, whisk lime juice and honey, and drizzle in oil to combine dressing. Pour dressing over slaw and season with salt and pepper, to taste.

This is a recipe I developed and submitted to another website, Chicken breasts are cubed, stir-fried and added to a cilantro, lime juice, honey, and garlic dressing. Serve on a salad of mixed field greens, or over Jasmine Rice. Wrap in a flour tortilla or lettuce leaves for a lunch on-the-go. The prep time includes marinating time.

1 lime, juiced
1 1/2 inches thin strip lime peel
2 tablespoons low sodium soy sauce
1 chicken breast, no skin, boned, cubed
1 -2 tablespoon olive oil
1 teaspoon honey

2 garlic cloves, minced
2 tablespoons fresh cilantro, chopped

Steps:

  • Combine the lime peel strip, soy sauce, and chicken cubes. Place in a resealable plastic bag and marinate 1 hour, or longer.
  • Heat the olive oil over medium-high heat. Remove the chicken from the marinade and discard the marinade.

Steps:

  • Mix together seasoning blend; set aside.
  • Mix lime juice, seasoning blend, oil and honey in small bowl. Place chicken in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
  • Refrigerate 15 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.
  • Grill over medium heat 6 to 8 minutes per side or until chicken is cooked through, turning frequently.

This is the Barefoot Contessa's favorite chicken salad sandwich. I absolutely love all of her recipes and this was no exception. She roasts her chickens rather than poaching them to insure that the chicken stays moist. I have tried it both ways and I think I have to agree with Ina, I like the roasting method best. However, use whatever method you prefer.

4 chicken breast halves, bone in and skin on
1 tablespoon olive oil
kosher salt
pepper
3/4 cup mayonnaise or 3/4 cup Miracle Whip
1 1/2 tablespoons chopped fresh tarragon leaves
1 cup celery, diced small
8 -10 slices seven-grain bread
1 (8 ounce) package mixed salad greens

Steps:

  • Preheat the oven to 350 degrees.
  • Place the chicken breasts, skin side up, on a sheet pan and rub them with olive oil. Sprinkle generously with salt and pepper.
  • Roast for 35-40 minutes or until chicken is cooked through. Set aside to cool.
  • When the chicken is cool, remove and discard the skin and bones and cut chicken into 3/4 inch pieces. Place chicken in bowl and add the mayo, tarragon, celery, 2 teaspoons salt and 1 teaspoon pepper and toss well.
  • To assemble, spread a little mayo on half the bread slices, top with the chicken salad and amount of mixed salad greens you prefer.
