MADUROS

Maduros image

I think I found this in a newspaper. It's one of the easiest recipes I have and takes only a few minutes to make. The plaintains should be somewhat soft with black spots on the skin for these to come out right.

MADUROS (PLANTAIN)

Maduros (plantain) image

These are a traditional South American side dish. I serve them alongside a plate full of rice, meat, and boiled salt potatoes. They add a nice sweetness to the meal.

Yield 14 serving(s)

Number Of Ingredients 3

2 very ripe plantains (the skin of the plantain should be brownish black)
oil
salt (optional)

Steps:

  • Heat approximately 1/4" oil in a medium skillet over medium heat.
  • Peel the plantain, and cut at an angle, making slices about 3/4" thick.
  • Brown plantain in oil, approximately 2 minutes a side, or until both sides are brown.
  • When browned, remove from skillet and place on a paper towel covered plate to drain the excess oil off.
  • Serve hot.
  • The traditional way is to serve plain, but I like to sprinkle them with a little bit of salt for a nice, salty sweet taste.

This recipe is from Nicaragua. The name means Heavenly Bananas. It's not meant to be an OVERLY sweet recipe due to the amount of cream and cheese. If you want it to be sweeter add some more sugar or honey.

FRIED SWEET PLANTAINS

Fried Sweet Plantains image

A popular way to eat these is to pan-fry the sweet banana-like slices until they are warm and tender. They are abundant all over the Caribbean and can be found now in most grocery stores. From Food and Wine Magazine in their section "For More Party Ideas."

ROASTED SWEET PLANTAINS

Roasted Sweet Plantains image

I first had plantains when I moved to the UK and to an area that has a large Caribbean and Nigerian population. They are yummy and sort of like a banana but not exactly as they need to be cooked. This is a really easy way of trying out plantains without being afraid of what to do with them. You don't really need the cooking spray but it wouldn't let me post a recipe with just one ingredient.
