MADEIRA MUSHROOM GRAVY (TO GO WITH OVEN ROAST)

This recipe makes the assumption that you are serving it with a roast. I have had many compliments on the flavor of this gravy. The recipe was originally in a 1989 book called "The Spirit of Christmas Book Three"

2/3 cup water
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons fresh lemon juice
1/2 lb fresh mushrooms, sliced
1/4 cup butter or 1/4 cup margarine
1/2 cup finely chopped onion
1 1/2 cups beef broth
2 tablespoons tomato paste
1/2 cup madeira wine
2 tablespoons flour
salt and pepper

Steps:

  • Combine water, 2 tbsp butter and lemon juice in a saucepan, bring to a boil and reduce heat to low and add mushrooms, cover and cook 5 minutes Pour off the fat from the roasting pan.
  • Add 1/4 cup butter to the pan and place over medium high heat, stir butter to melt and add the onions, saute until transparent Drain mushroom liquid and add to the pan.
  • Add beef broth, tomato paste and madeira wine, blend well.
  • Stir in the mushrooms and flour.
  • Stir until the gravy is slightly thickened.
  • Season to taste Serve.

ROAST TURKEY WITH SAUSAGE FENNEL STUFFING AND MADEIRA GRAVY

a 12- to 14-pound turkey, neck and giblets (excluding liver) reserved for making gravy
sausage fennel stuffing
1 stick (1/2 cup) unsalted butter, softened
2 cups turkey giblet stock or chicken broth
For gravy
1 1/4 cups Sercial Madeira
1/2 cup all-purpose flour
4 cups turkey giblet stock or chicken broth
Garnish: fresh small fennel bulbs, (sometimes called anise), quartered with fronds attached, fresh small white onions with greens attached, fresh thyme sprigs

Steps:

  • Preheat oven to 325°F.
  • Rinse turkey and pat dry inside and out. Season turkey inside and out with salt and pepper and pack neck cavity loosely with some stuffing. Fold neck skin under body and fasten with a skewer. Fill body cavity loosely with some remaining stuffing and truss turkey. Transfer remaining stuffing to a buttered 1 1/2- to 2-quart shallow baking dish and reserve, covered and chilled.
  • Spread turkey with butter and on a rack in a roasting pan roast in oven until a meat thermometer inserted in fleshy part of a thigh registers 180°F. and juices run clear when thigh is pierced, 3 1/4 to 4 hours.
  • During last 1 1/2 hours of roasting, drizzle reserved stuffing with stock or broth and bake, covered, 1 hour. Transfer turkey to a heated platter, reserving juices in roasting pan, and discard string. Keep turkey warm, covered loosely with foil.
  • Make gravy:
  • Skim fat from pan juices, reserving 1/3 cup fat, and deglaze pan with Madeira over moderately high heat, scraping up brown bits. Bring Madeira to a boil and remove pan from heat.
  • In a saucepan whisk together reserved fat and flour and cook roux over moderately low heat, whisking, 3 minutes. Add Madeira mixture and stock or broth in a stream, whisking, and simmer, whisking occasionally, 5 minutes. Season gravy with salt and pepper and transfer to a heated gravy boat.
  • Garnish turkey with fennel, onions, and thyme.

MAKE-AHEAD MADEIRA GRAVY

Serve this vegetarian gravy as is, or use it as a base for a turkey gravy. If you don't have any madeira, swap it out for the same quantity of dry sherry

large knob of butter
1 onion , chopped
2 carrots , finely chopped
2 bay leaves
1 large thyme sprig
1 tbsp caster sugar
3 tbsp plain flour
1 tsp Marmite
1 tsp tomato purée
1 tsp balsamic vinegar
1 tbsp dark soy sauce
150ml madeira
1l vegetable stock (or chicken or beef stock, if you're not cooking for vegetarians)

Steps:

  • Heat the butter in a wide saucepan over a medium heat. Sizzle the onion, carrots, bay leaves and thyme in the pan for 15 mins until the veg starts to brown. Scatter over the sugar and continue to cook for a further few minutes until sticky and caramelised. Stir in the flour until sandy. Cook for 1 min, then add the Marmite, tomato purée, vinegar and soy sauce to make a sticky paste. Pour over the madeira and bubble for 1 min.
  • Add the stock, then crush the veg with a potato masher. Bubble everything together for 10 mins until you have a thickened sauce that just coats the back of a spoon. Sieve and use straightaway as a veggie gravy or as the base to a turkey gravy. Can be cooled, then frozen for up to three months.

DUCK WITH RED CABBAGE & MADEIRA GRAVY

A decadent duck dish slow-cooked French-style in goose fat to make it mouth-wateringly tender

25g sea salt flakes
2 tsp crushed black peppercorns
4 fresh bay leaves
1 tsp fresh thyme leaves plus 2-4 sprigs
2 large or 4 small ducks legs (550g/1lb 4oz total weight)
340g can goose fat
300ml/½pint groundnut oil
generous knob of butter
2 shallots , finely chopped
1 tsp plain flour
300g tub fresh chicken stock
2 tbsp madeira
4 shallots , peeled and halved
5 juniper berries , finely chopped
400g red cabbage , finely shredded
2 tbsp red wine vinegar
juice of 1 small orange
25g large raisins
1 tbsp redcurrant jelly

Steps:

  • At least 24 hours before serving, mix the salt, pepper and herbs, except the thyme sprigs, in a large bowl. Add the duck legs and rub in the herby salt until well coated. Cover and leave overnight or up to 24 hours in the fridge.
  • Next day, wipe the salty mixture from the duck legs and place them in a single, tight-fitting layer in the base of a pan. Add the bay leaves from the bowl and pour over the goose fat. If it doesn't cover the duck, top up with the groundnut oil. Cook over the lowest possible heat for 2½ hours, so the fat barely bubbles. The duck skin should be creamy rather than golden once cooked. Transfer the legs to a bowl and strain in the fat, pushing the duck under until fully submerged. (The duck can now be chilled and refrigerated for up to 1 month.)
  • While the duck is cooking (or up to 2 days ahead of the meal), make the madeira gravy and cabbage. For the gravy, melt the butter in a small pan, add the shallots and cook for 6-8 minutes, stirring until golden. Stir in the flour and cook, stirring all the time, until the flour browns - take care not to let it burn. Whisk in the stock and continue whisking over the heat until slightly thickened. Add the madeira and cook for 2 minutes more. Strain through a sieve into a bowl. (The gravy can now be cooled and chilled for up to 2 days.)
  • For the cabbage, scoop 2 tbsp of the goose fat from the duck as it cooks (if making at another time use olive oil) and put into a medium pan. Add the shallots and cook, stirring, until softened. Tip in the juniper berries and cabbage and cook over a fairly high heat until the cabbage starts to soften. Stir in the vinegar, orange juice, raisins and redcurrant jelly. Cover and leave to cook for 15 minutes, stirring now and then until tender. (Cool and chill for up to 2 days if making ahead.)
  • On the day, preheat the oven to fan 180C/ conventional 200C/gas 6. Remove the duck legs from the fat and wipe away any excess with kitchen paper. Put the duck on a wire rack in a roasting tin and top each leg with a sprig of thyme. Roast for 10 minutes, then add the creamy wild mushroom potatoes to the oven (see recipe, below) and cook with the duck for 30 minutes, or until the duck skin is golden. Meanwhile, reheat the cabbage and gravy in separate pans until piping hot.
  • To serve, put a generous spoonful of cabbage on serving plates and sit the duck legs on top. Spoon round the gravy and serve with the potatoes. For a green vegetable, quickly stir fry some sugar snaps.

600ml turkey or chicken stock , fresh or made with cubes
2 tbsp wholegrain mustard
200ml/7fl oz turkey juices, skimmed of all fat (make up with stock if you don't have enough; add it all if you have more)

Steps:

  • Gradually mix the madeira into the flour until smooth. Heat the stock in a pan, then pour in the flour mixture and mustard, stirring until thickened. Chill until ready to serve, covering the surface with cling film to stop a skin forming. On the day, reheat in a pan with the turkey juices until bubbling.

2 to 2 1/2 cups turkey or chicken stock, preferably homemade
1/4 cup Madeira wine
3 tablespoons unsalted butter
2 shallots, minced
3 tablespoons flour
1/4 cup heavy cream
Salt and freshly ground black pepper to taste

Steps:

  • Pour the turkey drippings from the pan through a strainer into a fat separator. Pour turkey juices (minus fat) into a large heatproof measuring cup, and add enough turkey or chicken stock to make 2 1/2 cups. Place pan over high heat, and deglaze it with Madeira. Strain pan mixture into measuring cup.
  • Melt butter in a saucepan. Add shallots, and cook over medium heat until soft and translucent, 3 minutes, stirring with a wooden spoon. Add flour, and cook until a dark golden brown, 2 minutes, stirring with a wooden spoon.
  • Remove saucepan from heat, and whisk in stock-Madeira mixture and heavy cream. Return to heat, and gradually bring sauce to a boil, whisking steadily. Briskly simmer thickened sauce until slightly reduced, whisking often, about 3 minutes. Add salt and pepper to taste.

1 ounce dried morels, rinsed, drained
2 chicken breast halves with skin
1 tablespoon vegetable oil
3/4 cup chopped onion
2 large garlic cloves, minced
1 tablespoon minced fresh thyme or 1 teaspoon dried
1 1/2 cups canned low-salt chicken broth
1/4 cup plus 1 tablespoon dry Madeira
1 tablespoon cornstarch

Steps:

  • Combine boiling water and morels in small bowl. Let stand until morels soften, about 35 minutes. Strain; reserve soaking liquid. Coarsely chop morels.
  • Preheat oven to 400°F. Sprinkle chicken with salt and pepper. Heat oil in large nonstick skillet over medium-high heat. Add chicken to skillet; cook until golden, about 4 minutes per side. Transfer chicken to shallow baking dish (do not clean skillet). Bake until chicken is cooked through, about 15 minutes.
  • Meanwhile, heat same skillet over medium-high heat. Add onion, garlic and thyme and sauté until golden, about 5 minutes. Add morel soaking liquid, leaving any residue in bowl. Boil mixture until most of liquid evaporates, about 4 minutes. Add chicken broth and 1/4 cup Madeira; boil until gravy is reduced to 1 1/2 cups, about 5 minutes. Strain gravy into small saucepan; add morels. Cover and simmer 5 minutes. Whisk 1 tablespoon cornstarch and remaining 1 tablespoon Madeira in small bowl. Whisk into gravy; simmer until thickened, about 30 seconds. Season gravy with salt and pepper. Spoon over chicken and serve.

1-1/4 teaspoons ground thyme
1 teaspoon pepper
1 beef ribeye roast (7 to 8 pounds)
GRAVY:
1/2 pound sliced fresh mushrooms
1/2 cup finely chopped onion
2 tablespoons tomato paste
3 to 3-1/2 cups beef broth
1/4 cup all-purpose flour
1/2 cup Madeira wine or additional beef broth
2 tablespoons lemon juice
Salt and pepper to taste

Steps:

  • Combine salt, thyme and pepper; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, at 350° 3 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Transfer to a warm serving platter. Let stand 20 minutes., Meanwhile, for gravy, pour pan drippings and loosened browned bits into a 4-cup measuring cup. Skim fat, reserving 1/4 cup; set drippings aside. In a skillet, saute the mushrooms and onion in reserved fat until tender. Add tomato paste; cook and stir until combined. Remove from the heat. , Add enough beef broth to reserved drippings to measure 3-1/2 cups. In a large saucepan, combine flour, wine, lemon juice and broth mixture until smooth. Stir in mushroom mixture. Bring to a boil; cook and stir 2 minutes or until thickened. Season with salt and pepper. Slice roast and serve with gravy.

2 tbsp olive oil
6 whole shallots , peeled
1 large carrot , peeled and chopped
3 thyme sprigs
2 bay leaves
30g dried wild mushrooms
½ tbsp light brown soft sugar
2 tbsp plain flour
4 tbsp brown miso
1 tbsp balsamic vinegar
1 tbsp tomato purée
100ml madeira
700ml fresh vegetable stock

Steps:

  • Heat the oil in a frying pan. Add the shallots, carrot, thyme, bay leaves and dried mushrooms and fry over a medium heat for 5-7 mins or until deep golden brown. Scatter over the sugar and cook until beginning to caramelise. Stir in the flour and combine well, then add the miso, balsamic vinegar, tomato purée and madeira and cook for 2 mins. Pour over the stock a little at a time, stirring as you go.
  • Simmer everything together, uncovered, for 30 mins or until you have a fairly thick gravy. Sieve into a clean saucepan. Season to taste and warm through when ready to serve. Leave to cool completely, then freeze for up to three months or chill for up to three days. Reheat thoroughly in a pan to serve.

2 tablespoons unsalted butter

3 tablespoons shallots, finely chopped
6 ounces assorted mushrooms, such as white button, crimini, chanterelle, and oyster, coarsely chopped
3 tablespoons Madeira
1 teaspoon thyme leaves
Coarse salt and freshly ground pepper

Steps:

  • In a medium saucepan, bring turkey gravy to a boil over medium-high heat; immediately reduce to a simmer.
  • Meanwhile, heat butter and olive oil in a medium skillet over medium heat. Add shallots and cook, stirring, until soft and translucent, about 2 minutes. Add mushrooms and cook, stirring, until softened, about 5 minutes.

PORCINI-RUBBED TURKEY WITH SHIITAKE-MADEIRA GRAVY



Porcini-Rubbed Turkey with Shiitake-Madeira Gravy image

With its use of dried porcini in the turkey rub and fresh shiitakes in the light gravy, this recipe from the late food writer Michael McLaughlin is a fine example of his signature style: deeply flavorful seasonal cooking. You can make the turkey stock for the gravy up to two days ahead.

1/2 ounce dried porcini mushrooms
2 tablespoons (1/4 stick) unsalted butter, room temperature
1 14-pound turkey; neck, heart, and gizzard reserved for stock
4 cups low-salt chicken broth
1 large onion, cut into 8 pieces
4 medium carrots, coarsely chopped
4 garlic cloves, peeled
2 tablespoons vegetable oil
6 cups Turkey Stock
7 tablespoons unsalted butter, room temperature
1/4 cup all purpose flour
1 pound fresh shiitake mushrooms, stemmed, caps sliced
1/2 cup Madeira

Steps:

  • Grind dried porcini in processor until almost reduced to powder, with some larger bits remaining, about 4 minutes. Transfer to sieve. Shake powdered porcini into bowl; mix in 2 tablespoons butter. Reserve larger bits in sieve. Rinse turkey inside and out; pat dry with paper towels. Place turkey on small rack set in large roasting pan. Rub porcini butter over outside of turkey; sprinkle with salt and pepper. Bring porcini bits and chicken broth to boil in small saucepan. Remove from heat; reserve for basting. (Turkey and porcini broth can be made 1 day ahead. Cover separately; chill.)
  • Set rack at lowest position in oven and preheat to 325°F. If stuffing turkey, spoon stuffing loosely into main cavity and neck cavity. Tuck wing tips under; tie legs together loosely. Roast turkey 1 hour 15 minutes, covering loosely with foil if browning quickly. Toss onion, carrots, garlic, and oil in bowl to coat; scatter in pan around turkey. Baste with 1 cup porcini broth. Continue to roast turkey until thermometer inserted into thickest part of thigh registers 175°F, basting with 3/4 cup porcini broth and pan juices every 45 minutes, about 2 hours 30 minutes for unstuffed and 3 hours for stuffed. Transfer turkey to platter; let stand 30 minutes (internal temperature will increase 5 to 10 degrees).
  • Place roasting pan over 2 burners. Add turkey stock and any remaining porcini broth and bring to boil, scraping up browned bits. Strain turkey broth into heavy large saucepan; spoon off fat.
  • Mix 4 tablespoons butter and flour in bowl to form paste. Melt 3 tablespoons butter in large skillet over medium heat. Add mushrooms. Cover; cook until mushrooms release liquids, stirring occasionally, about 8 minutes. Add Madeira; boil until wine evaporates, about 2 minutes. Add mushroom mixture to turkey broth; bring to boil. Whisk in flour paste. Reduce heat to medium; simmer until gravy thickens, whisking occasionally, about 5 minutes. Season with salt and pepper.
  • Serve turkey with gravy.

POTTED STUFFED BEEF HEART AND MADEIRA GRAVY

1/2 cup onion, chopped
1/2 cup celery & leaves, thinly sliced
3 tablespoons butter
1 1/2 cups cooked rice
1/2 teaspoon poultry seasoning
salt and pepper, to taste
1 beef heart
1 tablespoon oil
1 cup hot water
1 tablespoon flour
1 tablespoon madeira wine, more if needed
minced parsley or celery leaves

Steps:

  • Heat 2 tablespoons butter in Dutch oven and saute onions and celery until tender.
  • Stir in rice.
  • Add poultry seasoning, salt, and pepper, and set aside.
  • Remove cords and excess fat from heart.
  • Season with salt and pepper.
  • Sew heart partially closed with large needle and heavy thread, leaving a pocket.
  • Fill with rice mixture (if any is left over, heat separately).
  • Sew closed.
  • Heat remaining butter and oil in Dutch oven until bubbly.
  • Add heart and brown on all sides.
  • Add water.
  • Cover and simmer over low heat until tender, about 3 hours.
  • Remove heart and let rest 15-20 minutes.
  • Remove threads and slice thin.
  • For gravy:.
  • Blend flour and wine.
  • Stir flour mixture into pan juices and cook and stir until slightly thickened.
  • Sprinkle parsley over meat and serve with gravy.

If you like fried chicken with cream gravy, you'll love this sauce -sophisticated and rich, with a bit of sweet fruitiness from the Madeira. It's a wonderful alternative to traditional pan gravy. You'll have to choose between this gravy or the [cider sage version](/recipes/food/views/108738) for the holiday meal, as you'll need the neck and giblets as well as the pan drippings for this recipe.

Yield Makes 6 to 8 servings (about 4 cups)

Number Of Ingredients 14

1 tablespoon vegetable oil
Neck and giblets (excluding liver) from turkey, cut into 1-inch pieces
1 onion, left unpeeled, quartered
1 celery rib, coarsely chopped
1 carrot, coarsely chopped
1 quartt low-sodium chicken broth (32 ounces)
2 cups water
1 Turkish or 1/2 California bay leaf
1 teaspoon whole black peppercorns
Drippings from roast turkey , left in roasting pan
1 1/2 cups Sercial Madeira
1 to 2 tablespoons unsalted butter (if necessary)
6 tablespoons all-purpose flour
1/4 cup heavy cream

Steps:

  • Heat oil in a 5-quart heavy pot over moderately high heat until hot but not smoking, then sauté neck, giblets, and onion until well browned, 10 to 15 minutes. Add remaining stock ingredients and simmer, uncovered, until liquid is reduced to about 4 cups, about 45 minutes. Pour stock through a fine-mesh sieve into a bowl, discarding solids. Skim off and discard any fat.
  • Skim fat from pan drippings (while turkey stands) and reserve fat. Straddle roasting pan across 2 burners, then add Madeira and deglaze pan by boiling over moderately high heat, stirring and scraping up brown bits, until liquid is reduced by about half, about 4 minutes, then add to giblet stock.
  • Heat 3 tablespoons reserved turkey fat (if you have less, use butter to make up difference) in a 3- to 4-quart heavy saucepan over moderately low heat, then add flour and cook roux, whisking, 3 minutes. Add hot stock in a fast stream, whisking constantly to prevent lumps. Bring to a boil, whisking, then reduce heat and simmer, stirring frequently, 5 minutes. Add cream and simmer, stirring frequently, 10 minutes. Pour sauce through a fine-mesh sieve into a sauceboat or serving bowl and season with salt and pepper.

turkey drippings (optional)
2 -2 1/2 cups turkey broth
1/4 cup madeira wine
3 tablespoons unsalted butter
2 shallots, minced
3 tablespoons flour
1/4 cup heavy cream
salt, to taste
fresh ground pepper, to taste

Steps:

  • Pour turkey drippings through a stainer into a fat separator. Pour turkey juices (minus fat) into a large heatproof measuring cup, add enough turkey stock to make 2 1/2 cups.
  • Place drip pan over high heat and deglaze it with Madeira. Strain the pan mixture into measuring cup.
  • Melt butter in a saucepan. Add shallots, and cook over medium heat until soft and translucent, 3 minutes, stirring with a spoon. Add flour, and cook until dark golden brown, 2 minutes, stirring with a spoon.
  • Remove saucepan from heat, whisk in stock-Madeira mixture and heavy cream.
  • Return to heat, and gradually bring sauce to a boil, whisking steadily.
  • Briskly simmer thickened sauce until slightly reduced, whisking often, about 3 minutes.
  • Add salt and pepper to taste.
