Pineapple/ Macaroni Fruit Salad image

A lady brought this to church, and I just had to have the recipe...It's a delicious change from the mayonnaise based salads. We love it. Enjoy!

1 - 7 oz creamette rings, or another small pasta
1 egg,beaten
1/2 c sugar
1 Tbsp flour
1/4 tsp salt
1 large can crushed pineapple drained (reserving liquid)
8 oz cool whip
1 - 16 oz can, mandarin oranges, drained
1 c miniature marshmallows

Steps:

  • 1. Prepare Creamette Rings according to package directions. Drain Cook together egg, sugar, flour, salt and reserved pineapple juice until smooth and thickened.
  • 2. Blend into cooked rings. Chill 1 hour. Remove from refrigerator. Combine rings, pineapple, Cool Whip, mandarin oranges and marshmallows. Chill before serving.

1 (16 ounce) package whole wheat elbow macaroni
1 cup Italian-style salad dressing
2 (8 ounce) cans crushed pineapple, drained
1 (8 ounce) ham steak, cut into cubes
2 stalks celery, diced
2 plum tomatoes, diced
2 hard-boiled eggs, chopped
½ onion, diced

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Transfer hot macaroni to a large bowl.
  • Pour Italian-style salad dressing and crushed pineapple over the macaroni; stir. Add ham, celery, tomatoes, eggs, and onion; stir.
  • Cover bowl with plastic wrap and refrigerate until chilled, at least 1 hour.

My mom got a similar recipe from a grocer in our home town store; they made it in the back and sold it. It is a favorite of mine that makes me think of mom. Now I am doing it by memory, so you may have to adjust some things. Also, my mom did not use dash way back when, I don't think it was around, but she used it later. This was perfect for my father, who couldn't eat onions or peppers.

12 ounces Spam (my husband is a vegetarian so I use morningstar veggie hot dogs or Loma Linda lunch meat)
1 1/2 cups ham, can be used instead
1 (20 ounce) can pineapple chunks
1 cup celery
3 cups macaroni, dry
8 ounces colby-monterey jack cheese
1 (32 ounce) jar mayonnaise
1/2 teaspoon brand seasoning
1/4-1/2 teaspoon celery seasoning
1 -2 teaspoon parsley, dry

Steps:

  • Boil the macaroni until tender, drain and cool.
  • Chop up spam or what ever meat you are using.
  • Chop celery as well.
  • Add to macaroni.
  • Drain the pineapple juice into a bowl to make the dressing.
  • Put the pineapple in with the macaroni.
  • Chop the cheese into half inch cubes. (I have used grated before, but I like the chunks).
  • Take the spices and add them to the juice.
  • Add about 3/4 of the jar of mayo into the juice and blend it together.
  • Stir it into the macaroni mixture.
  • Best if you chill it a few hours, then it may need more mayo as it soaks it up. It is really good.

1/2 c. chopped celery
1/3 c. chopped green onion, plus more for serving
1/4 c. grated yellow onion

Steps:

  • Cook the macaroni according to the package directions. Drain and rinse under cold water until cool. Set aside.
  • Whisk together the mayonnaise, milk, vinegar, sugar, salt, and pepper in a large bowl. Add the macaroni, carrot, celery, green onions, and grated onion. Gently stir the mixture until well combined.
  • Cover and refrigerate for 30 minutes. Gently stir, and top with more green onion, if you like.

2 cups uncooked elbow macaroni
1 tablespoon canola oil
1 can (12 ounces) regular or teriyaki SPAM, cubed
1 cup mayonnaise
2 teaspoons sugar
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (8 ounces) unsweetened pineapple tidbits, drained
1 medium sweet red pepper, chopped
1 can (8 ounces) sliced water chestnuts, drained and chopped
4 green onions, chopped

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. Meanwhile, in a large skillet, heat oil over medium-high heat. Cook Spam until golden brown, about 8 minutes. Cool completely., For dressing, in a small bowl, combine mayonnaise, sugar, mustard, salt and pepper. In a large bowl, combine pineapple, red pepper, water chestnuts, cooled Spam and macaroni. Add dressing; gently toss to coat. Refrigerate until serving. Top with green onions before serving.
