MACADAMIA NUT CRUSTED MAHI MAHI
Steps:
- Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
- Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.
- Remove from the oven and allow to stand 10 minutes before serving.

- Place the bread crumbs, nuts, salt and pepper in a food processor; cover and pulse until nuts are finely chopped., In a shallow bowl, whisk egg and water. Place flour and nut mixture in separate shallow bowls. - Preheat oven to 375 degrees F (190 degrees C).
- In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
- Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
- Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Simmer until sauce is thick, about 30 minutes. Strain to remove peppers, fruit, and shallots. Reserve sauce in a pan over low heat.
- Bake mahi mahi in preheated oven about 10 minutes, until internal temperature reaches 140 degrees F. Remove fish, and lightly coat with sauce.

- In a small saucepan, combine the orange juice, shallot, ginger and garlic. Bring to a boil over medium-high heat. Cook for 3 minutes. Stir in the coconut milk, sugar, salt and pepper. MACADAMIA AND COCONUT CRUSTED MAHI MAHI WITH PINEAPPLE SALSA
I just returned from a fabulous trip from Hawaii, and I wanted to figure out a way to make a dish that reminded me of all of the island flavors-- here is the result! Mahi Mahi is a great Hawaiian fish that is easy to find here in the States (as opposed to Opah or Ono fish which are delicious but impossible to find here...). I also wanted to try making a pineapple salsa after visiting the Dole Pineapple Plantation, and it turned out really well-- sweet and spicy! I hope you enjoy this one! Aloha!

- To make the salsa, prepare the pineapple by slicing off the top and the bottom, and cutting off the sides to remove all of the skin. Cut the peeled pineapple into 4 sections lengthwise, and remove the woody core in the middle. Dice the pineapple into 1/2 inch chunks.
- Combine the diced pineapple with the remaining salsa ingredients and set aside.
- In a food processor, finely grind the macadamia nuts. Mix well with the breadcrumbs and coconut.
- Heat the butter and olive oil over medium/ medium-high heat. Dip the mahi mahi fillets in the egg mixture, then coat well with the nut mixture. Fry for about 3-5 minutes on each side, or until cooked through and crispy on the outside.
- Top with the pineapple salsa.

- Rub fillets lightly with oil; sprinkle with salt and pepper.
- Place fish on grill over a medium-hot fire; cook for 5 to 6 minutes per side.
- While second side is cooking, coat the exposed side lightly with honey and sprinkle with crushed mac nuts.
- Flip again; cook another minute or until crust is golden brown.
- Check for doneness by cutting into a piece; it should be completely opaque all the way through.
- Remove fish from grill, cut each in half, and serve.

SEARED TOASTED MACADAMIA NUT MAHI CITRUS AKA-MISO SAUCE

- Season each fillet with salt and pepper. Mix the toasted macadamia nut into soft butter, add in panko, salt and pepper. Spread top of fish with the crust and sear quickly in 2 tablespoons of olive oil in a hot saute pan on both sides.
- For the sauce: Reduce wine by a third. Add cream and reduce by another third. Over low heat stir in miso paste, then slowly add in butter incorporating each cube. Be careful not to heat the sauce to high, sauce will break. Finish seasoning with lime juice, salt and pepper. Be careful with the salt because the miso paste is salty too.
- Serve the mahi mahi topped with some sauce.
DEEP-FRIED MAHI-MAHI MACADAMIA NUT FINGERS
Steps:
- In a saucepan, combine the pineapple, papaya, gooseberries and 1 cup of sugar. Bring to a boil, then simmer, stirring every 5 minutes to avoid scorching, for 1 hour or until mixture reaches jam consistency. Cool. Divide papaya mixture into 3 bowls. Fold in fresh mint to one bowl, horseradish to another and chili sauce to the third. Set aside.
- In a mixing bowl, combine the eggs, green onions, garlic, ginger, soy sauce, sherry, remaining teaspoon of sugar and cornstarch. Mix well. Season with salt and pepper. In a large mixing bowl, marinate the mahi-mahi "fingers" in the marinade for 10 minutes. Drain. Season the flour with salt and pepper. Dip the fish pieces in the seasoned flour and then the egg. In a mixing bowl combine the panko bread crumbs and the macadamia nuts. Mix well. Dip the fish in the macadamia nut mixture. Coat well. In a wok or deep, heavy kettle, heat 2 1/4 to 3 inches of oil on medium-high heat until it registers 365 degrees F on a deep fry thermometer. Fry fish fingers a few at a time until golden. Drain briefly on paper towels and serve with the tropical marmalade.

- Combine all the salsa ingredients in a large bowl. Set aside.
- Combine shredded coconut with the panko, macadamia nuts and 3/4 tsp sea salt in a shallow bowl. Combine the coconut milk and soy sauce in another shallow dish. My mother loved Mahi-Mahi, so I ate it often as a child. This is my favorite preparation. It is super easy to make, but will definitely impress your guests!

- 1. Firmly press the flesh side of each filet into the crust mixture, until evenly crusted.
- 2. Season both sides of the fish fillets with the sea or kosher salt, and fresh-ground pepper.
- 3. In a bowl, beat the eggs. Dip the flesh side of each fillet into the egg mixture - not the skin side.
- 4. In a large pan, add about 1/4 inch of olive oil and heat to medium-hot.
- 5. Saute the fillets, crust side down, until they are golden brown and the crust is firmly set, approximately 2 to 3 minutes. Turn and saute the skin side for approximately 1 minute.
- 6. Remove the fillets from the pan, pat off any excess oil. Place on a baking sheet and bake in oven for 3-4 minutes, until fish is just cooked through.
- 7. Serve with papaya salsa or your favorite sauce.
MACADAMIA CRUSTED MAHI MAHI
Alton Brown's recipe, with some minor tweaks. The coconut milk and macadamias impart a great flavor. Most types of fish would probably work, if you have a substitution in mind. This is good to make when you have a can of coconut milk open already for something else.

- Combine fruits and Grand Marnier; let macerate 30 minutes to 1 hour.
- Mix vinegar, brown sugar and 1/2 cup orange juice in a nonreactive saucepan. Cook over medium heat until sugar melts. Add fruit and heat through. Dissolve cornstarch in remaining orange juice and stir into sauce. Heat, stirring, until boiling and thickened. Keep warm.
- Place macadamia nuts, garlic, basil and cilantro in blender or food processor fitted with the metal blade. Blend to chop fine (do not overprocess or you will have nut butter) and place on a plate. Season fish with salt, pepper and squeeze a wedge of lemon over each fillet. Place flour on a plate and eggs in a wide bowl. Dredge fillets in flour, then in egg and finally in macadamia mixture.
- Heat about 1/8-inch oil in a skillet over medium-high heat. Add the fish fillets, do not crowd, this may have to be done in batches. Cook about 3 minutes until golden. Turn once and cook through. Be careful to regulate temperature as nut coating will burn easily. Serve with fruit sauce.

I was playing around with some things I had in the pantry and decided to do something tropical with the frozen Mahi Mahi filets I had. Smuckers Pineapple Preserves and add crushed macadamia nuts and you have a great sauce! YUMMY!!!! A little taste of Hawaii!

- 1. Preheat Oven to 350 F. In 1 gallon storage bag combine all marinade ingredients. Close bag and shake or squeeze til all ingredients are blended well. Rinse and dry w/paper towel the Mahi Mahi filets, add to bag and close. Marinate in refrigerator for 30 minutes.
- 2. In a small bowl combine remaining ingredients except for 2tbsp. crushed macadamia nuts. Wisk together until well blended.
- 3. Pour sauce from bowl into a small non-stick sauce pan. Heat on medium until heated through, turn down heat to low and let simmer, stirring occasionally until slightly thickened.
- 4. After marinating fish fo 30 mins. place on a baking sheet or 9x12 baking dish, sprayed with cooking spray. Bake in oven for 10 mins. Remove from oven, cover fish with all of the sauce. Return to oven for 5-10 mins (until fish is flaky).
- 5. Remove fish from oven, place all fish on a serving platter (or serve 1 filet per plate)spoon over any remaining sauce if desired and sprinkle each filet with the remainder of the macadamia nuts.
