Found the recipe in a search engine and it was so good I wanted to share it with everyone who likes fish.

1/4 cup all-purpose flour
1/4 teaspoon onion powder
1/8 teaspoon pepper
1 tablespoon unsalted butter
1 lb white fish fillet
1/4 cup macadamia nuts, finely chopped

Steps:

  • Preheat oven to 400°F.
  • Combine first 3 ingredients in a shallow dish.
  • Melt butter in a shallow baking dish in oven.
  • Dredge whitefish in flour mixture to coat.
  • Arrange in baking dish and turn to coat with butter.
  • Sprinkle with nuts.
  • Bake 10 minutes or until fish flakes easily.

4 (6 ounce) tilapia
10 ounces macadamia nuts
1 tablespoon soy sauce
2 cloves garlic
1 teaspoon hot sauce
1 tablespoon brown sugar
1 tablespoon olive oil
1 teaspoon black pepper

Steps:

  • Preheat your oven's broiler. Line a baking sheet with aluminum foil.
  • Combine macadamia nuts, soy sauce, garlic, hot sauce, brown sugar, olive oil, and black pepper in a food processor; blend until the mixture is the consistency of paste.
  • Spoon a thick layer of the macadamia mixture on top of each tilapia fillet. Place the fish macadamia mixture-side up on the prepared baking sheet. Under the broiler, cook fish until the macadamia crust is golden brown and the tilapia flakes easily, about 15 minutes.

I got this recipe off a package of frozen whitefish, and it was a lifesaver when I was drawing a mental block on what to cook one night. I added some black pepper to this, and I served the fish with rice, some corn, and a salad. Although this serves four, we can easily eat this all between the two of us.

1 tablespoon olive oil
1 1/2 cups salsa
1 lime
2 tablespoons fresh cilantro, chopped

Steps:

  • Preheat oven to 400°F.

  • Spoon salsa and squeeze lime juice on top of fish.
  • Bake for 15-20 minutes or until fish flakes with a fork.

4 white fish fillets (tilapia, flounder, catfish)
2 tablespoons light mayonnaise
2 tablespoons parmesan cheese
lemon pepper
breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Cover baking sheet with foil and coat with light cooking spray.
  • Using a knife, spread 1/2 tbsp mayonnaise onto each fish fillet.
  • Sprinkle each fillet lightly with parmesan cheese.
  • Sprinkle each fillet with lemon pepper.
  • Sprinkle each fillet lightly with breadcrumbs.
  • Bake for 15 minutes or until fish flakes easily.

2 lbs skinless white fish fillets (can use halibut or cod)
2 small onions, sliced
1 tablespoon butter
3 tablespoons white wine
1 dash salt
1 dash pepper
1 clove garlic, minced or pressed
1/3 cup dry white wine or 1 1/2 tablespoons lemon juice
3/4 cup whipping cream (low fat, use 1/2 cup milk)
1/2 teaspoon dried oregano leaves or 1 -2 teaspoon chopped fresh oregano
1/3 cup grated cheddar cheese
1/3 cup grated parmesan cheese
2 tablespoons breadcrumbs
1/2 lb cooked shrimp

Steps:

  • In heavy pan, saute onion in butter& 3 Tbsp of white wine over medium heat, do not brown.
  • Spread onion over bottom of a shallow baking dish.
  • Arrange fish fillets over onion in dish overlapping thin edges.
  • Sprinkle with S& P, and add garlic.
  • Pour 1/3 cup of dry white wine (or lemon juice) over fish.
  • Add whipping cream or milk and oregano.
  • Cover with foil and bake at 425 degrees for about 10 minute.
  • Uncover, add Cheddar, Parmesan and breadcrumbs.
  • Distribute shrimp evenly over the top.
  • Bake, uncovered, for another 10 minutes or until top is golden brown, cheese is melted and fish flakes easily.
