LYCHEE BOBA
Made with a few ingredients, this Lychee Boba comes together quickly and easily. This lychee bubble tea is sweet, fragrant, and creamy and will become your new favourite!

Steps:
- Prepare your tapioca pearls according to the package.
- In a pot, combine the muscovado sugar with 40 ml of water and bring it to a boil. Turn down the heat to a simmer and add in the prepared tapioca pearls. Simmer until the brown sugar syrup has thickened. Simmering the cooked tapioca pearls in the syrup just adds more flavour to them.
- Remove from heat once it has thickened.
- Steep the green tea and set aside.
- In a blender, combine the lychee powder and milk (or 50/50 milk and cold filtered water). Blend until fully combined.
- In a cup, add in half of the brown sugar syrup with the pearls. Add in the ice cubes.
- Add the blended lychee powder and milk to the cup. Top off with green tea.
- Mix until everything has combined.

LYCHEE BUBBLE BOBA TEA POPS
Steps:
- 1) In a saucepan, bring 5 cups of water to boil adding tapioca pearls. Boil for 30 minutes covered. Turn off heat & let sit for 30 minutes until soft; rinse, drain, set aside. 2) In separate saucepan, combine granulated sugar, brown sugar, and 2 cups water. Cook over medium heat stirring until sugar is dissolved. 3) In a bowl, combine: tea, sugar water, coconut milk, and lychee juice. 4) Divide dried lychee, coconut jelly, and tapioca pearls among pop molds; insert sticks, freeze 6 hours. 5) Remove from freezer, let stand room temperature 5 minutes before removing pop from molds.
