LUSCIOUS LEMON SNAPS
This is THE cookie for the lemon lover. Not overly sweet, but tangy from fresh lemons.

Steps:
- Preheat oven to 350 degrees F ( 175 degrees C ). Grease cookie sheets.
- In a medium bowl, stir together the flour, sugar, baking soda, salt, and lemon zest. Make a well in the center and fill it with the oil, lemon juice, and vanilla. Stir everything together until it forms a dough. Alternate method: Put everything into the food processor and blend until dough forms.
- Drop cookie dough by teaspoonfuls, about 2 inches apart, onto the prepared cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown. For a softer cookie, bake for only 7 minutes. Cool on racks, and store in an airtight container.

Steps:
- Put all ingredients into a blender and process until smooth.
- Shape into cookies and place on mesh dehydrator sheets.
- Dehydrate at 105 -115F for 8-10 hours, or until outside is dry and the cookie is chewy.
- NOTE: If you're not using a high-speed blender, blend the cashews first before adding the other ingredients. "Finely grind them".
LUSCIOUS LEMON SQUARES
Steps:
- Preheat oven to 350 degrees F. For the crust: In a food processor, blend ingredients until they resemble coarse meal. Press mixture into the bottom of a 13 by 9-inch pan. Bake until set and golden, about 20 minutes. Cool. For the filling: In a bowl, beat eggs, sugar and lemon juice together. Add flour and baking powder, blending only long enough to incorporate. Pour filling into baked crust and bake until set, about 25 minutes. Cool. Dust with powdered sugar before cutting. Cut into squares.

- 1. Process the cashews in a food processer until they resemble coarse flour.2. Add the coconut and process again until very well mixed.3. Add the lemon and the sweetener. LEMON COOKIES (RAW FOOD DEHYDRATOR RECIPE)
I first tasted these cookies at a friend's house and could not believe they were made with raw foods and in a dehydrator. They're delicious and are a very healthy snack or, she even eats them for breakfast! What?! Cookies for breakfast? Oh yeah, I'm in! :) I haven't made these myself, as I need to buy a new dehydrator, but I don't want to lose this recipe. Plan ahead for time to soak the cashews.

- Drain and rinse cashews.
- Place all ingredients into food processor and process until smooth.
- Spoon cookies out (about 1 1/2 T. each) onto mesh dehydrator sheets.
- Leave as-is or you can flatten them out, to about 1/2 inch thick, for faster drying.
- Dehydrate at 115 degrees for 8-10 hours or until the texture you desire is reached.

- Mix all ingredients (except the reserved pie filling & powdered sugar).
- Drop by tablespoon onto a non-stick cookie sheet.
- Bake at 350°F for 10 - 12 minutes or until done.
- Bottoms of the cookies should not get too dark--light brown is good.
- Let cookies cool completely.
- Mix powdered sugar with enough lemon pie filling to make icing yellow, or do like I do and add some yellow food coloring, then spread over the cooled cookie.
