I came up with this recipe when I had a lot of bananas and fresh blueberries to use up. I didn't want to make my usual fattening blueberry muffins or banana bread, so I experimented and came up with this instead. We thought it was pretty good for being low in fat!

Number Of Ingredients 10

1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup oats
2 eggs
1/2 cup unsweetened applesauce
3 mashed very ripe bananas (approximately 1 cup)
1 cup fresh blueberries

Steps:

  • Mix together dry ingredients until well combined.
  • In a separate bowl, mix eggs, applesauce, and bananas.
  • Stir banana mixture into flour mixture, and then add blueberries.
  • Stir carefully (the blueberries crush easily).
  • Bake in a greased loaf pan for approximately one hour at 350°F.
  • Bread is done when a toothpick comes out clean.

This is a soft, moist super delicious HEALTHY banana bread with the addition of antioxidant rich blueberries! Fantastic toasted in the morning or as an afternoon snack!

Number Of Ingredients 13

1 3/4 cups whole wheat flour
1/4 cup wheat germ
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or 1/2 cup margarine
1/3 cup white sugar
1/3 cup light brown sugar
2 large eggs
2 ripe bananas, mashed (I used almost 4 bananas)
1/3 cup reduced-fat milk (you can substitute a "milk" of your choice)
1 teaspoon vanilla (I left this out, since I didn't have it...it was just as good!)
1 cup blueberries (fresh, dried or frozen!)
1/2 cup nuts (totally optional)

Steps:

  • First, preheat your oven to 375 degrees.
  • In a large bowl, beat butter and sugars with a mixer.
  • Add eggs, one at a time, beating well after each addition.
  • Add the bananas, milk, and vanilla.
  • With mixer on low, add the flour, wheat germ, baking soda, and salt.
  • Mix just until combined.
  • Fold in blueberries.
  • Place batter in greased loaf pan.
  • Bake until a toothpick inserted into the center comes out clean, 50-60 minutes.
  • Allow to cool ten minutes in the pan, then move to cooling rack.
  • Cool Completely, slice and serve!
  • *You could bake these in muffin tins with or without wheat germ sprinkled on top!

3 ripe bananas
2 eggs
½ cup 2% plain greek yogurt
⅓ cup honey
1 teaspoon vanilla extract
1 teaspoon baking soda
1 ½ cups wheat flour
1 cup blueberry

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, yogurt, honey, vanilla extract, and baking soda into mixture.
  • Add flour and mix.
  • Add blueberries and gently fold into mixture.
  • Pour the batter into a greased 9 x 5-inch (23 x 13 cm) bread pan. Bake for about 50 mins, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)
  • Allow to cool for 15 minutes before serving.

1 teaspoon baking soda

½ cup butter, softened
1 cup white sugar

LOW GI BLUEBERRY & BANANA BREAD

When I found this I really questioned whether it was low GI because of the honey used. But, I tried it anyway, I loved that it uses buckwheat, and macadamia oil. Anyhow it was really good, I also added some chopped dried pears as suggested in the recipe and it turned out beautifully. You can serve it plain or toasted with cottage cheese or ricotta and topped with fresh fruit like sliced banana, mango, passionfruit or peach and raspberry. Cooking times may vary, the recipe says 50min, but I needed to cover half way and leave it for 65 minutes.

2 large ripe bananas, peeled
4 egg whites or 2 whole organic eggs
1/2 cup honey or 1/2 cup pure maple syrup
1/2 cup macadamia nut oil or 1/2 cup grapeseed oil

1/2 cup vanilla protein powder or 1/2 cup skim milk powder
2 teaspoons baking powder

Steps:

  • Preheat oven to 325°F.
  • Smash the banana in a large bowl, then mix in the eggs, honey, oil and cinnamon. Add the protein powder, baking powder and buckwheat flour.
  • Fold in the blueberries. Pour into a medium sized baking loaf tin, and bake for 50 minutes, or until cooked through. Cover with foil halfway through cooking if the bread starts to over brown.
  • Remove from the oven and cool for 30 minutes before turning out onto a wire rack to finish cooling.
