I am beginning to hate low fat dressings. They always seem to have this "smell" that does not appeal to me. This simple dressing is fast, easy and will perk up any salad. As I absolutely love Dijon mustard, I tend to use a heaping tablespoon.

3 tablespoons water (or vegetable broth)
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons garlic, minced
2 teaspoons Worcestershire sauce
1/2 teaspoon black pepper
1/4 teaspoon salt
Splenda sugar substitute (to taste) (optional)

Steps:

  • Combine all ingredients in a jar; cover tightly, and shake vigorously.
  • Store in refrigerator.

Quick and easy Balsamic Vinaigrette. I wanted a lower fat version so I experimented. It's great as a marinade too.

  • Shake vigorously and serve.

1/4 cup smucker's simply fruit red raspberry spreadable fruit
3 tablespoons balsamic vinegar
2 tablespoons frozen orange juice concentrate, thawed
1 cup water (or less for a thicker dressing)
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon table salt

Steps:

  • Warm fruit spread slightly to melt a bit.

6 boneless skinless chicken breast halves, lightly pounded
ground black pepper
1 teaspoon garlic powder
2/3 whole garlic clove, minced
2 tablespoons extra virgin olive oil (I use Enova Oil)
1 medium onion, thinly sliced
1/2 cup balsamic vinegar
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/2 teaspoon dried thyme

Steps:

  • Season chicken breasts with ground black pepper and garlic powder.
  • Heat oil in a medium skillet, and brown the onion, minced garlic and seasoned chicken breasts. ( be careful not to over cook the garlic, it will turn bitter).
  • Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes.

I developed this recipe to be low-point on Weight Watchers but high on flavor. I built it around one of my favorite spice blends, Sunny Paris, from Penzeys Spices. My mother always kept some garlic infused olive oil in her cabinet and I incorporated it for a great flavor carrier in this dressings.

3/4 c highest quality balsamic vinegar
1-2 Tbsp olive oil, infused with garlic
2+ tsp sunny paris spice blend from penzeys spices - to taste

Steps:

  • 1. Note: Prepare prior to making recipe: Place five peeled garlic cloves in olive oil bottle containing 1/2 cup of olive oil and let the garlic infuse the oil for several days. The oil can be used for several weeks for other purposes as well.
  • 2. Measure all ingredients into a dressing bottle and shake. Use "Sunny Paris" spice to taste. You can use any herbs or blend you might like. I use about 12 T. (3/4 of Balsamic Vinegar) to 1 T. of oil, but you can increase the oil if you like.

3/4 cup white wine vinegar
1/4 cup white balsamic vinegar
1 packet Good Seasons Italian Dressing
1 packet Good Seasons Italian Non Fat Dressing
4 cloves fresh garlic, peeled
3/4 cup cold water
1 heaping Tbsp. Dijon mustard ===Grey Poupon
8-9 fresh sweet basil leaves
1 Tbsp fresh rosemary
1 Tbsp fresh lemon thyme
1 Tbsp fresh oregano
4 - 5 lavender the herb flowers (fresh) optional
1/4 cup fresh parsley (flat leaf)
1/2 tsp sea salt
Fresh ground pepper to taste
1 cup water
1/2 cup canola oil
1/2 cup olive oil

Steps:

  • In the blender: Put everything except 1 cup water, canola oil and olive oil. Blend it. It will look a little green.
  • Now add the last three ingredients and blend it again. If you over blend the oils, they turn to mayonnaise and you really don't want that.
  • Dip a celery stick in this mixture and taste for saltiness. If it tastes bland, add vinegar. If it tastes vinegary...add water.
