Steps:
- Heat oven to 350 degrees.
- Combine in a large mixing bowl the turkey or beef, the spinach, which has been squeezed to drain, the oats, onion, carrots, egg, milk, herbs (mixture of oregano, basil and thyme), salt and pepper.
- Use a three-tined kitchen granny fork or wooden mixing fork to blend the meat ingredients.
- Pat into a 9x5-inch loaf pan that has been sprayed with a no-stick oil product, or shape into a loaf and place in the middle of a 13x9-inch baking pan.
- Bake 1 hour or until a thermometer registers 170 degrees and the center is no longer pink.
- If substituting beef for turkey, bake 50 to 55 minutes and thermometer should register 160 degrees internal temperature (tip not touching baking dish).
- Let loaf stand out of the oven for 5 minutes before slicing.

LOW-FAT TURKEY MEATLOAF
Fat free ground turkey and lean ground pork meatloaf. Very low in fat and high in protein. I have calculated the nutritional values and this recipe is much lower in fat and cholesterol than the final recipe indicates. Be sure that the ground pork is very lean or use all turkey and more seasonings.

CAJUN TURKEY MEATLOAF (LOW FAT) HUBBIE'S FAVORITE
A healthy version of meatloaf that does not sacrifice the taste for a healthy alternative! Leftovers are great on onion rolls with lettuce and tomato for a great sandwich treat. Your can use either Creole or Cajun seasoning. I've been making this for years, and I can't remember where I got it. Sometimes, I put slices of pancetta (or bacon) on the outside. Of course, it isn't as healthy - but it sure is pretty and tastes great.

Steps:
- Preheat over to 350 degrees F.
- Combine first 9 ingredients in large bowl. Season with salt (remember that the creole or cajun seasoning can be salty) and pepper. Place turkey mixture in 9x5-inch nonstick loaf pan. Cover and bake 20 minutes. Remove from oven, and spread top with mustard. Bank uncovered another 35 minutes. Let stand 10 minutes. Remove from pan and cut into slices.
LOW FAT TURKEY MEATLOAF
Steps:
- Preheat ove to 350 degrees. Mix Kethup and vinegar together in a small bowl and set aside. Mix remaining ingrediients in a large owl until well blended. Shape into a free form loaf about 9 by 5 inches in a shoolw pan. Brush with half of ketchup and vinegar glaze and bake in lower tird of oven about 45 minutes. Brush with remaining glaze and bake about 15 minutes more or until interior temperature of loaf reaches 160 degrees when tested with an instant read thermometer.
