LOW FAT PASTA TUNA SALAD



Low Fat Pasta Tuna Salad image

I developed this salad by combining what I like from 3 other recipes. Using Yogurt makes this a nice low fat salad.

Number Of Ingredients 11

2/3 cup plain nonfat yogurt
3 tablespoons low-fat mayonnaise
1 tablespoon Dijon mustard
1 teaspoon lemon zest
1 (6 ounce) can white tuna in spring water, drained
1/4 cup sweet onion, chopped
1/4 cup celery, chopped
1 cup spiral pasta, uncooked
1 cup frozen tiny peas
1 tablespoon dried dill
2 tablespoons fresh lemon juice

Steps:

  • Cook pasta according to directions.
  • While pasta is cooking, place frozen peas in colander.
  • When pasta is done, pour pasta and hot cooking water over peas to drain.
  • Rinse well with cold water and place into bowl with all other ingredients.
  • Chill and serve.

1 cup creamy salad dressing (e.g. Miracle Whip)
1 teaspoon dried dill weed
½ teaspoon ground black pepper
2 cups elbow macaroni
1 (5 ounce) can tuna, drained
1 cup broccoli florets
1 cup chopped carrots
1 cup sliced celery
1 cup cucumber - peeled, seeded and chopped

Steps:

  • In a large bowl, mix dressing, dill weed and ground black pepper. Mix in macaroni, tuna, broccoli, celery and cucumber until well blended. Cover and refrigerate until ready to serve.

Summer Pasta Salad With Tuna image

This is the quintessential summer comfort food. When it was too hot to cook or eat a heavy dinner, my mother would often make this as a light summer meal. The leftovers taste great the next day! NOTE: Many of the spices can be adjusted to taste. I like to experiment with new flavors, like adding dill or curry powder. (cooking time is boiling the pasta and eggs, while prep time is chopping and mixing)

16 ounces elbow macaroni (or other small pasta, shells, radiatore, bowties)
3 (6 ounce) cans tuna
4 hardboiled egg, chopped
2 stalks celery, diced small
1 small onion, diced small
4 -5 tablespoons mayonnaise (or more to taste)
1 teaspoon lemon juice
2 teaspoons black pepper
1 teaspoon seasoning salt
1 teaspoon garlic powder
1 tablespoon sweet pickle relish
3 -4 dashes hot sauce (we like Frank's Red Hot)

Steps:

  • Boil pasta as directed until al dente. Drain and rinse with cold water to stop the cooking. (I also boil the eggs at this time and rinse then in cold water when finished).
  • In a large salad bowl, combine chopped eggs, diced onion, celery, mayo, lemon, spices, relish, and hot sauce.
  • Drain the tuna well and flake into the bowl.
  • Make sure the pasta is relatively dry (a little water clinging to them keeps the salad moist and cuts down the mayo needed).
  • Thoroughly mix the salad and chill if desired.
  • Serve in bowls or on a bed of lettuce.

Creamy Pasta Salad With Tuna and Vegetables (Low Fat) image

Prepare this salad a few hours in advance to allow the flavours to blend and mellow. You may use other fresh herbs instead of dill or just more parsley if you like. You may leave out the tuna if serving as a side dish with meat. I like the fresh flavour of this salad. It keeps well in the fridge for a couple of days.

8 ounces rotini pasta, cooked, rinsed under cold water and drained well
1 sweet red pepper, seeded and diced
1 cucumber, peeled and diced
3 green onions, sliced
1 (7 ounce) can tuna in water, drained and flaked
1 teaspoon Dijon mustard
3/4 cup plain nonfat yogurt
1/3 cup reduced-fat mayonnaise
2 tablespoons Italian parsley, chopped
1 -2 tablespoon dill weed, chopped
salt, to taste
black pepper, to taste

Steps:

  • Combine rotini, red pepper, cucumber, green onions and tuna in a large bowl and set aside.
  • In a medium bowl whisk all dressing ingredients.
  • Pour dressing over salad ingredients and stir well.
  • Refrigerate, covered, at least 2 hours before serving.
