Being from So California originally I had never heard of pimento cheese. Once I tasted it I was hooked. But....way too many calories for me to have it as anything more than occasional treat. So, I went to work trying to make it as low fat as I could and still have that great flavor. I just made this and it's resting comfortably in the fridge. Might have to "tweak" it a bit, but here goes! Cooking time is chilling time.

Number Of Ingredients 6

1/2 cup fat-free cottage cheese
1/2 cup fat free cream cheese
4 ounces diced pimentos, with liquid
3 tablespoons stuffed green olives, diced
1/4 cup Greek yogurt
2 cups fat-free cheddar cheese, shredded and divided

Steps:

  • In a food processor blend the first 5 ingredients until smooth. Add 1 c cheese, blend just until mixed.
  • Stir in remaining cheese and chill for at least 2 hours.

This is something I made while just playing around since I didn't have cream cheese. The yogurt makes it really have a nice sharp taste. Serve on Ritz® crackers, as sandwich filling, or in a veggie wrap.

1 cup grated 2% sharp Cheddar cheese
1 cup grated 2% Monterey Jack cheese
½ cup reduced-fat mayonnaise
¼ cup nonfat plain yogurt
2 tablespoons pimento peppers, smashed, or more to taste
¼ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon black pepper
1 dash hot sauce (such as Tabasco®), or more to taste
1 pinch paprika, or to taste

Steps:

  • Combine Cheddar cheese, Monterey Jack cheese, mayonnaise, yogurt, pimento peppers, salt, garlic powder, onion powder, black pepper, hot sauce, and paprika in a bowl. Mix until well blended. Cover with plastic wrap and refrigerate, 8 hours to overnight, before serving.

This is a recipe from Bobby Deen....So Good and Low Fat if you are a Pimento Cheese lover...A little different, but well worth it...I also love to grill my sandwich with Lite Mayo.

1/2 cup(s) mozzarella cheese
1 cup(s) cheddar cheese
2/3 cup(s) greek yogurt
2-3 tablespoon(s) red and green peppers (diced)
1-2 tablespoon(s) jalapeno peppers (seeded and diced)
1-2 tablespoon(s) chives

Steps:

  • Add Mozzarella Cheese, Cheddar Cheese, and Greek Yogurt together. Add red,green,jalapeno pepper's. I just eye ball the right amount, then add chives. Chill for at least 1 hour. ****I grill my Pimento Cheese Sandwich with Lite Mayo ****
