This excellent bran muffin recipe has been in Daria Burcar's family over 25 years. "They're incredibly moist and chock-full of healthy ingredients like raisins, dates and nuts," says the Rochester, Minnesota resident.

Number Of Ingredients 13

2 cups All-Bran
1 cup crushed Shredded Wheat
1 cup boiling water
2-1/2 cups all-purpose flour
2 cups sugar
2-1/2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/2 cup canola oil
1 cup chopped dates
1 cup raisins
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the cereals and boiling water; let stand for 5 minutes. In another large bowl, combine the flour, sugar, baking soda and salt. In a small bowl, combine the eggs, buttermilk and oil. Stir cereal and buttermilk mixtures into dry ingredients just until blended. Fold in the dates, raisins and walnuts. , Fill paper-lined muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

1-1/4 cups whole wheat flour
1 cup all-purpose flour
3/4 cup packed brown sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1 cup orange juice
1/3 cup butter, melted
3/4 cup chopped dates
1/3 cup chopped walnuts
1 teaspoon grated orange zest

Steps:

  • In a bowl, combine the dry ingredients. Combine eggs, orange juice and butter; mix well. Stir into dry ingredients just until moistened. Fold in dates, walnuts and orange zest. Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter., Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

1 cup unprocessed natural bran
1 1/4 cups orange juice
1/4 cup honey
1/4 cup molasses
3/4 cup unbleached flour or 3/4 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsweetened applesauce
2 egg whites
4 teaspoons grated orange peel
1/2 cup chopped dates

Steps:

  • Preheat oven to 400*. Lightly coat a 12-cup muffin pan with nonstick spray or line with paper liners.
  • In a large bowl, stir together the bran, orange juice, honey, and molasses. Set aside for about 5 minutes.
  • In a medium bowl, stir together the unbleached or all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  • Stir the applesauce, egg whites, and orange peel into the bran mixture. Add the flour mixture and stir just until combined. Fold in the dates.
  • Divide the batter evenly among the prepared muffin cups. Bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Cool in the pan on a rack for 5 minutes. Invert onto the rack and serve warm or at room temperature.

1 1/2 cups wheat bran (I used oat bran)
1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar (I used 1/2 cup)
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries (I added a chopped apple.)

Steps:

  • Preheat oven to 375 degrees.
  • Grease muffin cups or use paper muffin liners.
  • Mix together wheat bran and milk, and let stand for 10 minutes. (I didn't do this and muffins turned out fine.).
  • In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.
  • Beat in bran mixture.
  • Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
  • Stir into bran mixture until just blended. Fold in blueberries.
  • Scoop into muffin cups.
  • Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

1 1/2 tablespoons ground flax seed
1/2 teaspoon cinnamon
1/8 teaspoon clove
1/4 teaspoon salt

Steps:

2 tablespoons whole wheat flour
1/2 cup wheat bran (QUAKER)
2 tablespoons ground flax seeds
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups bran buds (Kellogg's All Bran cereal preferred)
1 1/4 cups boiling water
1/4 cup brown sugar
1/4 cup Splenda sugar substitute
3/4 cup skim milk
1/4 cup mashed banana (about 1 small)
1 egg
1/2 cup walnuts

Steps:

  • Preheat oven to 400F and lightly spray muffin pans with cooking spray or line with cupcake papers.
  • Stir together first 7 ingredients, and Splenda; set aside.
  • In large bowl, stir together cereal, water and let stand 5 minutes or until water is absorbed.
  • Mix sugar into softened cereal until well combined.
  • Stir in milk and mashed banana.
  • Add egg than gradually stir in flour, until combined.
  • Stir in nuts.
  • Portion into 12 muffin cups.
  • Bake for 20 minutes or until tops are golden brown and spring back when lightly touched.

1 1/2 cups chopped dates
3 cups hot water
3/4 cup butter (1 1/2 sticks) or 3/4 cup margarine (1 1/2 sticks)
1 1/2 cups sugar
1 1/2 cups water
1 cup pecan pieces
2 extra large eggs
1 1/2 teaspoons baking soda
1 1/2 teaspoons vanilla
1/4 teaspoon salt
2 3/4 cups all-purpose flour

Steps:

  • In a medium bowl, combine dates and hot water. Let stand 10 minutes. Drain and discard water.Cover and refrigerate until cold.
  • Preheat oven to 350 degrees.
  • Line 12 medium muffin cups with paper liners or lightly grease.
  • In a large bowl, beat together butter and sugar until creamy.
  • Add water,pecans,eggs,baking soda, vanilla, and salt and mix until well blended.
  • Add flour and mix until just moistened.
