⅓ cup + 1 tablespoon (90 g) granulated sugar
a pinch of salt
1 cup minus 1 tablespoon (110 g) all-purpose flour (sifted)
2 teaspoons baking powder
¼ cup + 1 tablespoon (75 ml) milk (I used reduced fat (2%) milk)
1 tablespoon granulated sugar (to sprinkle on top)
powdered sugar

  • Preheat the oven to 356°F (180°C).

3 apples (about 250 g/ 9 oz, Note 1)
3 eggs (large, at room temperature)
¾ cup xylitol (or granulated sugar 150 g/ 5.5 oz/)
1 teaspoon vanilla extract
1 ⅓ cup + 1 tablespoon all-purpose flour (170 g/ 6 oz)
1 teaspoon baking powder
1 teaspoon cinnamon
pinch of salt
2 teaspoons sugar
½ teaspoon cinnamon

Steps:

  • Preparations: Preheat the oven to 350°F/ 180°C. Grease and flour the springform.
  • Prepare apples: Peel and remove the cores. Cut the apples into small cubes. Set aside.
  • Wet ingredients: Beat the eggs and the sugar until light and fluffy, about 3 minutes. Mix in the vanilla extract.
  • Dry ingredients: In another bowl, mix the flour, baking powder, cinnamon, and salt. Carefully fold the flour into the egg mixture. Do not over mix.
  • Batter: Fold the chopped apples into the batter. Pour the batter into the prepared pan.
  • Topping: Mix the sugar and cinnamon and sprinkle this mixture over the batter in the pan.
  • Bake for 30-35 minutes or until golden. A toothpick inserted in the middle of the cake should come out clean.
  • Rest the cake for 10-15 minutes, take it out of the tin and serve either warm or at room temperature (Note 2).

1 teaspoon baking soda
1 tablespoon ground cinnamon
1/2 teaspoon salt
3 cups finely chopped unpeeled apples (3 medium)

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.

This is a dessert that I sort of patched together from other recipes and from my own idea. Nothing in this recipe contains any calories except for the apples, (and cool whip if desired) so it is just like eating an apple, only MUCH tastier!!

5 apples, any kind
1/3 cup Splenda granular
1/3 cup torani sugar-free caramel syrup
1/3 cup water, approximate
8 tablespoons fat-free cool whip (optional)

Steps:

  • Heat oven to 350 degrees.
  • Peel core and slice each apple.
  • Place 1 apple into a blender and blend, adding enough water to make a juice consistency.
  • Pass this apple/water mixture through a strainer and into another container so you get apple juice which is not grainy.
  • Add the splenda and caramel syrup to the apple/water mixture. Toss apples with liquid and bake for about 25 minutes or until tender.
  • Each serving can be topped with 2 tablespoons fat free cool whip (15 cals) if desired. Enjoy!

1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg

1/4 cup canola oil
1/4 cup molasses
1 egg
1 teaspoon vanilla extract
1/2 cup Splenda granular
1 cup low-sugar apple butter
1 granny smith apple, cored and grated

Steps:

  • Preheat oven to 350°F.
  • Spray an 8" springform pan with vegetable cooking spray.
  • In a small bowl, stir together flour, baking powder, baking soda, cinnamon, nutmeg and cardamom. Set aside.
  • In a large mixing bowl, beat oil and molasses with an electric mixer on high speed for one minute.
