For the Crust:
8 tablespoons butter, melted
1 1/2 cup almond flour
2 tablespoons confectioners swerve sweetener
1 teaspoon vanilla extract
For the cream cheese frosting:
6 ounces cream cheese
1/4 cup confectioners swerve sweetener
2 tablespoons heavy cream
2 tablespoons almond milk
1 teaspoon vanilla extract
For the Fruit:
3-4 large strawberries sliced thinly
1/2 cup blueberries
1/4 cup blackberries

Steps:

  • Preheat the oven to 350 degrees.
  • In a bowl combine the melted butter, almond flour, sweetner, and vanilla extract until a soft dough forms.
  • Spray a pizza pan or baking sheet lightly with cooking spray or parchment paper to make it easier to slice and remove.
  • Carefully press the crust into an even layer. Tip: I place a silicone baking sheet on top of the crust and press or roll the dough into an even layer and then carefully, slowly peel the silicone off the dough. My crust is between 10-11 inches in diameter.
  • Bake the crust 6-7 minutes until lightly browned and completely set. BE CAREFUL NOT TO OVERCOOK. Cooking time may vary slightly depending on how thick you press your crust.
  • Allow crust to cool.
  • In a food processor, blender or with a hand mixer combine the cream cheese, sweetner, cream, almond milk and vanilla and blend or mix until smooth.
  • Spread the cream cheese frosting on the crust and top with fruit

This is a recipe for fruit pizza that I have adapted into a low-fat version. By using low-fat ingredients and fruits that won't brown so you don't have to add a sugary glaze you reduce a lot of fat/calories without sacrificing all the wonderful flavors! (Do not recommend bananas, apples or pears as they will brown feel free to add more than what's listed below.) I tend to double the recipe and make it in a cookie sheet (as shown in the photo). Enjoy!

1/2 cup powdered sugar
3/4 cup white flour
3/4 cup whole wheat flour
3/4 cup low-fat margarine
8 ounces light cream cheese, softened
1 teaspoon vanilla
1/2 cup sugar
1 cup raspberries
1/2 cup blueberries
2 kiwi
2 apricots

Steps:

  • Preheat over to 350°F
  • Mix powdered sugar, flour and margarine in a large bowl and form into a ball. If mixture is sticky add more flour. Refrigerate uncovered for 30 minutes. (This is a good time to cut/wash your fruit.).
  • Pat into 9x9 or 9" round shallow dish making sure that dough is reaching the edges of the pan. Bake for 10-15 minutes and let cool completely.
  • Mix cream cheese, vanilla and sugar and beat till creamy. Spread over crust.
  • Arrange fruit and refrigerate before serving. Note: if you're using fruits that will brown you'll want to brush the fruit w/orange marmalade. Should be eaten in 1-2 days.

Number Of Ingredients 14

1 tube (16-1/2 ounces) refrigerated sugar cookie dough
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.
