I make these all the time and everyone loves them. they take no time to prepare and you don't even have to turn them over!

4 -6 potatoes, cut into wedges
cooking spray
salt and pepper

Steps:

  • Preheat oven to 350'F.
  • Wash and cut potatoes into wedges.
  • Spray baking sheet with cooking spay.
  • Arrange potatoes on sheet and spray top of potatoes with cooking spray and put alittle salt and pepper on top.
  • Bake for 30 minutes. There is in need to turn.
  • enjoy.

1 3/4 teaspoons salt, divided
1 -2 russet potato
1 teaspoon extra virgin olive oil

Steps:

  • Bring water to boil in a saucepan over high heat. Add one teaspoon of salt.
  • Preheat oven to 400°F.
  • Peel potatoes and slice into 1/4 inch fries.
  • Weigh the potatoes and measure out 9 ounces.
  • Transfer potatoes to boiling water and cook exactly 2 1/2 minutes.
  • Drain in colander and let cool (about 5 minutes).
  • Transfer cooled potatoes to a mixing bowl and add oil and 1/2 teaspoon of salt.
  • Mix gently to coat.
  • Spread in a single layer on a non stick baking sheet.
  • Bake for 20-25 minutes until crisp and golden.
  • Turn every five minutes during the last half of cooking.
  • Add the remaining salt if desired. (I found them plenty salty without).
  • Note: Mine took 30 minutes to achieve the right level of crispiness--so check for crispness before removing from the oven.
  • Chef Alexander states that this recipe is equal to a medium order of fries and has 5 grams of fat (as opposed to 17 grams of fat in the original version).

1 tablespoon oil
seasoned salt

  • 1. Heat oven to 425°F. Spray large cookie sheet with nonstick cooking spray.2. Place potatoes and oil in plastic bag shake until well coated. Arrange in single layer on sprayed cookie sheet.3. Bake at 425°F. for 15 minutes. Carefully turn potatoes sprinkle lightly with seasoned salt. Bake an additional 5 minutes or until tender. You should really experiment with the seasonings... it's a great way of changing up the flavours. Try and use Hebamare in most recipes rather than just plain salt, and in this recipe I always try and use Hebamare Spicy. Try it with extra garlic or onion powder sometime as well. This is an adaptation of an adaptation, but just fantastic all the same! Original recipe was in the "Kitchen With Rosie" book, or so I am told.

2 large russet potatoes
1 egg white
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon curry powder (or other hot seasoning)
1 teaspoon fresh ground pepper
1/2 cup flour

Steps:

  • Wash the potatoes, scrubbing well to remove all of the dirt; don't bother skinning them.
  • Cut the potatoes into wedges and let soak in water for at least 15 minutes, preferably longer. Change the water once if desired, but note that while changing the water gets rid of more starch, it can impact flavour as well.
  • Combine egg white and seasonings (excluding flour) in a large bowl.
  • Drain the potatoes, pat dry and put them in the bowl with the egg mixture.
  • Coat all fries with the egg white and seasoning mix, ensuring a good coverage.
  • Coat the fries with a light coating of flour, rotating and mixing as needed to try and make it an even coat.
  • Prep a baking sheet with a light coating of vegetable oil, and spread the fries out as evenly as possible.
  • Coat the top of the fries with vegetable spray and bake for 35 to 45 minutes or until golden brown.
