1 cup yellow cornmeal
1/4 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 large egg, lightly beaten, room temperature
1 cup fat-free plain yogurt
1/2 cup fat-free milk
1/4 cup canola oil
1 tablespoon honey

Steps:

  • Preheat oven to 425°. Combine the first 5 ingredients. In another bowl, combine remaining ingredients. Stir into dry ingredients just until moistened. Pour into an 8-in. square baking dish coated with cooking spray. Bake until a toothpick comes out clean, 16-20 minutes.

My mom makes a delicious double cornbread, and I wanted to make some last night but I knew I didn't have all the right ingredients so I improvised this one a bit. It came out moist and I was really pleased! I didn't have enough wheat flour so I used some chickpea flour, but you can also just use regular flour for the whole thing and omit the xanthan gum. I also use So Delicious coconut milk (50 calories per cup, 5g fat) in a lot of my recipes because I don't drink cow's milk anymore, but I'm sure using regular or 2% milk would be fine. Some of the ingredients were not added in the nutrition facts, so here are the facts per serving: Calories: 154, Fat: 1.7, Sat Fat .5, Carbs 27.7, Sodium 410, Fiber 2.6, Sugar 1.7, Protein 8.1.

2 egg whites (If you use liquid egg whites, I used 90 grams)
3/4 cup light coconut milk
1 cup Greek yogurt, plain nonfat
2 teaspoons white vinegar
1/2 cup unbleached flour
1/2 cup chickpea flour (besan flour)
1/4 teaspoon xanthan gum
3/4 cup cornmeal
1 teaspoon baking soda
28 g stevia, blend (I used 8 packets of Truvia brand)
3/4 teaspoon salt
1 cup frozen corn, thawed
Pam cooking spray

Steps:

  • Spray an 8 or 10" square baking dish with Pam, then preheat the oven to 375 degrees.
  • Mix the first 4 ingredients together in a large bowl.
  • Mix all the dry ingredients together in a medium sized bowl except the corn.
  • Add the dry ingredients to the wet, stir just until moist and then add the corn.
  • Pour immediately into the baking pan and bake 30-35 minutes.

EASY ALMOST FAT FREE CORNBREAD

I wanted cornbread for dinner and was having a hard time finding a good low fat recipe. Many included corn kernels and my family won't eat that in cornbread! I came across this one in a Weight Watchers cookbook, though this recipe was listed in order for you to make it to use in cornbread stuffing. Therefore I was worried that it would not be good to eat on its own. But it was tasty! And it does not have the funny consistency that some fat free baked goods do. It makes 12 servings and each serving is only 2 WW points!

1 cup cornmeal
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups skim milk
2 large egg whites, lightly beaten

Steps:

  • Preheat your oven to 400 degrees and spray an 8x8 (or 9x9) inch pan with cooking spray and set aside.
  • In a bowl mix the cornmeal, flour, baking powder, and salt.
  • Add the milk and the egg whites, stirring just until combined.

1 cup plain nonfat yogurt

  • Beat egg whites until soft peaks form.
  • Mix dry ingredients together in bowl.
  • Stir in yogurt.
  • Fold in the egg whites.
