HEALTHY LOW-FAT BANANA ZUCCHINI BREAD



Healthy Low-Fat Banana Zucchini Bread image

This bread is a combination of zucchini and banana bread, and it is a wonderful way to use up old bananas and dip into that summer harvest of zucchini. The bread tastes more like banana bread than zucchini bread, but it has the added nutritional benefits of vegetables. This bread is lower in fat that the standard banana/zucchini bread because applesauce replaces some of the oil in the recipe. Still using some oil, however, will prevent the bread from getting rubbery. Experiment by using pumpkin instead of bananas during the autumn months or by adding walnuts and dates! This recipe makes 2 loaves. Enjoy!

1 cup wheat flour
1 cup rolled oats (Quaker Old Fashioned Oats)
1 1/2 teaspoons baking powder

4 eggs (or Egg Beaters to cut some calories)

2 medium overripe bananas, mashed (the riper, the sweeter)
1 teaspoon vanilla
2 cups shredded zucchini
1 cup raisins (or dates or walnuts)

Steps:

  • Preheat oven to 350 degrees.
  • Whisk together white flour, wheat flour, oats, baking powder, baking soda, cinnamon, allspice, nutmeg, and salt.
  • In a separate bowl, beat the eggs.
  • Add the sugar, oil, applesauce, and mashed bananas to the eggs; mix well.
  • Add the vanilla.
  • Combine the wet and dry mixtures. Stir until just combined.
  • Fold in the zucchini and raisins.
  • Pour into 2 lightly greased loaf pans (9x5-inch).
  • Bake for 45-50 minutes or until a knife comes out clean.

1 1/2 cups all-purpose flour
1 cup white sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract

  • Mash bananas in a bowl.
  • Add all other ingredients and mix well.

2 cups flour
1 cup oatmeal
1/2 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 cup egg substitute or 1 egg
1/2 cup non-fat vanilla yogurt
1 cup fat-free buttermilk
1 1/2 cups bananas (smashed about 3)
1 teaspoon vanilla

Steps:

  • Sift first 6 ingredients (flour through cinnamon) together in a large bowl.
  • Mix remaining ingredients in a small bowl.
  • Mix wet ingredients into dry ingredients.
  • Spray a loaf pan with cooking spray. Pour mixture into pan.
  • Bake at 350 for 40 to 45 minutes or till tests done with a cake tester or toothpick. This will rise very high. If necessary, cover the top slightly with foil if top starts to brown too fast.
  • Allow to cook in pan 10 minutes. Remove from pan and cool completely before slicing. Slices can be toasted in toaster oven or microwaved for about 20 seconds.

This is an excellent cake/bread recipe with very little fat. Notice there is no butter or oil, just bananas. I cut down to 2 larger bananas but it was a little dry so I did actually add just a little canola oil, but I definitely wouldn't have if I had used all 4 bananas. Also, I subbed in blueberries (frozen unthawed) for the raspberries because it's what I had. I stirred them in towards the end of the gentle mixing with a silicon spatula so they wouldn't get mashed up.

I'm a very busy person with small children and lots of pets, so I will offer my time saving hints; with a large spoon, mix the wet ingredients in a large bowl then sift the dry ingredients right over the top and stir slowly until combined. I also always have some sort of flavored applesauce snack pack on hand and that is what I use. It could be mixed berry flavor or apple cinnamon, even grape! 1 cup oat flour (you can use a food processor to finely grind rolled oats if needed)
1/2 cup oat bran
2 teaspoons baking powder
1 teaspoon baking soda

1/2 cup packed brown sugar
3 egg whites
1/2 cup unsweetened applesauce
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 375 degrees F, set rack at middle. Grease and flour one 8 1/2 x 4 1/2 x 2 3/4 - inch loaf pan.
  • In a mixing bowl, combine both flours and oat bran, baking powder and soda, allspice and cinnamon and stir well to mix.
  • In a separate bowl, whisk together the sugar, egg whites, applesauce, oil, vanilla and bananas.
  • Fold the flour mix into the wet mixture, be careful not to overmix.
  • Scrape the batter into the prepared pan. Bake for 45-55 minutes, until well risen and a skewer into the thickest part of the bread comes out clean.
  • Cool on a rack 5 minutes, then unmold and finish cooling.
  • Freezes well.

  • Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
  • In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
  • Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
  • Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
  • Enjoy!!

1/3 cup honey

2 tablespoons applesauce (no sugar added)
1 3/4 cups all-purpose flour

Steps:

  • Mash 4-6 bananas (depending on size) to make ~ 2Cups. I mash a bunch and freeze in baggies.
  • Add the rest of the ingredients and mix, being sure to mix the butter evenly.
  • Pour into 6 mini loaves or 2 regular size loaves. These will rise a bit so allow room.
  • Bake in 350 degree oven for 45-50 minutes for mini loaves or muffins, 50-60 minutes for regular size loaves.

1 tablespoon vegetable oil
1 tablespoon vanilla extract
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 325°F. Lightly grease 8 1/2x4 1/2x2 1/2-inch pan; dust with flour. Using electric mixer; beat eggs and sugar in large bowl until thick and light, about 5 minutes. Mix in smashed bananas, buttermilk, oil and vanilla. Sift flour, baking powder, baking soda and salt over mixture; beat until just blended. Transfer batter to prepared pan.
  • Bake bread until golden brown on top and tester inserted into center comes out clean, about 1 hour. Turn bread out onto rack and cool.

Yield 1 loaf

Number Of Ingredients 11

1 1/4 cup all-purpose flour
1/2 cup packed brown sugar
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
3 tsp canola or walnut oil
1 large egg, beaten
2 medium egg whites, beaten
3 large bananas, ripe
1 cup uncooked old fashioned oats

Steps:

  • Preheat oven to 350°F. Grease and flour a loaf pan and set aside. In a large bowl, stir together dry ingredients including the oats and cinnamon. In a smaller bowl, mash bananas with a potato masher or fork. Add oil and whole egg and mix thoroughly. Add the wet ingredients to the dry and mix well. Batter will be fairly thick. In a medium sized bowl, with an electric hand mixer, beat the egg whites until medium stiff peaks form. Fold the egg whites into the batter in three additions. Pour batter into pan and bake until top of loaf is firm to touch, 45 to 50 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes. Slice loaf into 10 equally sized slices.

juice of 1 lemon
3 bananas, mashed
2 eggs
1/3 cup low fat vanilla yogurt
1 3/4 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. cinammon
1 cup walnuts, coarsely chopped

Steps:

  • Preheat oven to 325. Beat together oil, sugar and lemon rind. Add lemon juice, bananas, eggs and yogurt. In a separate container stir together all dry ingredients (except walnuts). Add dry ingredients to the banana mixture and stir until just combined. Do not overbeat. Gently fold in walnuts. Bake for 1 hour, or until tester inserted into center comes out clean.
