1 (12 ounce) can evaporated skim milk
2 tablespoons grated nonfat parmesan cheese
3 tablespoons butter-flavored sprinkles
1/4 teaspoon white pepper
6 tablespoons grated nonfat parmesan cheese
1/4 cup sliced scallion (garnish)
2 tablespoons chopped fresh parsley (garnish)

Steps:

  • In a saucepan, combine the evaporated skimmed milk, 2 tablespoons grated nonfat Parmesan cheese, 3 teaspoons butter-flavored sprinkles and 1/4 teaspoon ground white pepper.
  • Stir well. Cook on med-low til sauce is heated through.
  • Gently stir in 10 oz of cooked, drained fettuccine pasta.
  • (Add a little more milk if it seems too dry.) Remove pot from heat and add the remaining 6 tablespoons grated nonfat Parmesan and toss.
  • Garnish with scallions and parsley.
  • Serve immediately.

6 boneless skinless chicken breasts, cut into pieces
6 teaspoons cajun seasoning
2 tablespoons olive oil
4 green onions, thinly sliced
6 tablespoons sun-dried tomatoes, chopped
1/2 teaspoon basil, dried
1/4 teaspoon ground black pepper
2 cups skim milk
1 cup fat-free cottage cheese
2 tablespoons cornstarch
1/4 teaspoon pepper
3 garlic cloves, minced
3/4 cup parmesan cheese
1/4 teaspoon basil
8 ounces linguine, cooked al dente

Steps:

  • Sauce:.
  • Put skim milk, cottage cheese, cornstarch, pepper, parmesan cheese and minced garlic in food processor or blender and blend until smooth. Pour into saucepan and add basil. Cook over medium heat until it starts to thicken.
  • Chicken:.
  • Place chicken and Cajun seasoning in bowl and toss to coat.
  • In a large skillet over medium heat, saute chicken in olive oil until tender, about 5-7 minutes.
  • Reduce heat and add green onion, tomatoes, basil and 1/4 teaspoons black pepper. Saute briefly.
  • Add Alfredo sauce and mix together. Cook on low 5 minutes to blend flavors.
  • Serve over cooked linguine.

1 cup skim milk
1/2 cup low fat cottage cheese
1 tablespoon cornstarch
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
1/8 teaspoon basil (can add more, depending on your pref.)

Steps:

  • Put all ingredients, except basil, into food processor or blender and blend until smooth.
  • Pour mixture in small saucepan and add basil.
  • Cook over medium-low heat until heated through and smooth consistency.
  • Add more basil, salt and/or pepper, if desired.
  • Let cook on very low heat for 10 minutes, stirring occasionally.
  • Serve over any type of pasta or use for vegetable lasagna.

I made this when I had some left over garlic shrimp and wanted to do a shrimp alfredo over whole wheat pasta. Lacking the ingredients for a proper Alfredo ( and concerned about the fat load in regular Alfredo) I scrounged around my cupboards and refrigerator and used what I had. The result was wonderful! The roux adds the thickening missing by not using heavy cream and the buttermilk adds a delicious and fat-free tang. Unless you slop it on your pasta with a shovel, this comes out to about 95 calories per serving versus 400-500 for traditional Alfredo - what a difference!

1 tablespoon unsalted butter
2 teaspoons all-purpose flour
1/2 cup fat-free half-and-half
1/2 cup buttermilk
1 garlic clove, lightly crushed
1 pinch nutmeg
3/4 cup parmesan cheese
1/4 cup pecorino romano cheese
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Melt butter until foaming. Stir in flour and continue stirring for 1-2 minutes until golden in color.
  • Whisk in liqiuids, garlic, nutmeg,salt and pepper and continue whisking at a simmer until slightly thickened.
  • Disgard garlic. stir in Parmesan and Romano. Stir until cheeses are incorporated.
  • At this point you may remove from heat while you cook the pasta or continue with the recipe.
  • Whisk the sauce until smooth and of desired consistancy. Adjust seasonings and add any other elements ( shrimp,chicken, scallions, broccoli etc) that you desire.
  • NOTE: If adding heavily seasoned elements such as garlic shrimp be sure to make the sauce without the garlic, salt and pepper until you have finished the sauce. Then adjust the flavors at that point.

This is a very creamy sauce. As its name implies it is very easy...I love to do it with cooked shrimp and what ever fresh veggies I have and put it over noodles. You can use any meat you like. I cook the meat in a separate pan and pour the Alfredo sauce over when cooked. YUMMY!

8 ounces cream cheese (best room temp)
2 tablespoons flour
2 cups whole milk (cream or half and half)
1/2 cup parmesan cheese
salt and pepper
1/2 cup butter (margarine just doesn't work)
8 ounces low-fat cream cheese
2 cups skim milk
4 tablespoons flour
1/2 cup parmesan cheese
salt and pepper

Steps:

  • Melt butter over low heat (do not burn or sauce will take on nutty flavor).
  • With a whisk, mix in the cream cheese and whisk until completely combined. (At first it will seem like it won't combine, but keep stirring until it does).
  • Add milk and flour and continue to whisk.
  • Once it heats up and is smooth add parmesan cheese and salt and pepper and stir to combine.
  • Let it sit for a few minute to thicken.
  • Lower fat recipe. Follow directions above--it will be slightly thinner, but will thicken upon standing.

2 roma tomatoes, diced
1 1/4 cups chicken broth
4 teaspoons flour
