Low Carb The "Crust" is soft so this is actually more of a casserole dish but the flavor is there. I used Minced Garlic from a Jar rather than Garlic Powder. 1 (8 ounce) package cream cheese, room temperature
2 eggs
1 teaspoon italian seasoning
1 teaspoon garlic powder
1/2 cup grated parmesan cheese
1/2 cup pizza sauce (may need more to cover crust)
1 1/2 cups shredded mozzarella cheese
mushrooms or bell pepper, etc

Steps:

  • Preheat oven to 375.
  • Line a 9×13 baking dish with parchment paper. With a handheld mixer, mix cream cheese, eggs, Italian seasoning, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 25 minutes, or until golden brown. Allow crust to cool for 10 minutes.
  • Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake 10-15 minutes, until cheese is melted.

Tastes like a pizza, cuts like a pizza, yet there is no dough....though do have a fork and knife on hand for eating purposes because it can get a little messy if eaten with hands only. I am a South Beach dieter with a love for Italian foods and this is what curbs my craving for pizza. I love mine with the turkey pepperoni slices, onion, green peppers and mushroom.   • Preheat oven to 350 degrees.
  • Meanwhile, brown the ground beef; drain.
  • Place meat in a mixing bowl and mix with 1 cup of mozzarella.
  • Spread the mixture into a circle on a round pizza pan or baking stone (I prefer the stone); and top with 1/2 cup pizza sauce.
  • Top with the rest of the mozzarella, optional toppings and seasonings.

1 cup ground pork rind
1/4 cup parmesan cheese

  • Preheat oven to 425. Mix cream cheese, eggs, seasonings, and Italian cheese, mix well. Add ground pork rinds last. This will be a very thick mixture.

2 large eggs
1 ½ cups shredded mozzarella cheese, divided

1 pound 85% lean ground beef
½ white onion, chopped
1 cup pizza sauce
1 ounce pepperoni slices

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 10x13-inch baking dish.
  • Place shredded zucchini in a colander and sprinkle salt on top. Press down to drain as much water as possible. Let sit for 10 minutes. Transfer to a large bowl.
  • Add eggs, 1/2 of the mozzarella cheese, Parmesan cheese, Italian seasoning, and garlic powder to the zucchini. Mix well. Press mixture into the prepared baking dish.
  • Bake uncovered in the preheated oven for 20 minutes.

  • Spray pizza pan with non stick spray.

Italian spices
3 garlic cloves, pressed
1 cup onion, chopped

15 ounces pizza sauce
7 ounces black olives, sliced

1/4 cup parmesan cheese, shredded

Steps:

  • Brown meats with Italian Seasonings and drain off fat. Add onions, peppers, garlic and mushrooms and saute until tender. Remove from heat and add pizza sauce and most of the pepperoni, mix well.
  • Spray a 13X9 Pyrex baking dish with Pam, add meat mixture. Top with most of the black olives. Mix mozzarella and cheddar together and spead over the black olives. Sprinkle with parmesan and decorate the top with the remaining pepperoni and black olives.
  • Bake 425 degrees for 15-20 minutes. Let rest 10 minutes, cut and serve.

2 ounces cream cheese, cut into chunks
1 large egg
1 1/4 cups almond flour
1 tablespoon oat fiber (or 2 tbsp whey protein powder or 1/4 cup more almond flour)

Steps:

  • Preheat oven to 425 degrees and position one rack to the bottom position and the other to the upper third.
  • Low Carb Pizza Crust: Microwave the cheeses in a microwave safe bowl for 1 1/2 - 2 minutes, stirring half-way through. Scrape melted cheese into the bowl o a food processor with the egg and process until combined. Add the dry ingredients and process again until thoroughly combined.
  • If the dough is very warm and sticky, scrape it onto a piece of plastic wrap and place into the freezer until the oven is ready. The dough is very sticky by nature, but oiling your hands makes it manageable. (If the dough is cool to the touch, skip the freezer.).
  • Hand Method: Place a piece of parchment paper on a sheet pan and with oiled hands, pat the dough evenly into place. I prefer to oil my hands. the dough will cover most of the sheet pan. Dock (poke holes all over) with a fork.
  • Rolling Pin: Alternately, roll the dough out between two sheets of parchment paper. This is my preferred way. Remove the top piece of parchment and transfer the dough and parchment to the baking sheet. Dock (poke holes all over) with a fork.
  • Bake: Bake on the bottom rack for 8-10 minutes until golden brown. Remove from the oven and rub the crust with a piece of garlic. Spread the tomato sauce onto the pizza and top evenly with cheese. Add the pepperoni. Bake on the upper rack until the cheese has melted.
  • Cut into 6 pieces and serve. Makes 1 very thin sheet-pan pizza, 1 12-13 inch pizza or two very thin 10 inch pizzas. The serving size is 1/6 of the recipe.

2 1/2 cups cauliflower, cut into small florets
1 egg, beaten (or Egg Replacer for one egg)

2 cups pizza toppings, of your choice
1 1/2-2 cups mozzarella cheese, pizza cheese or 1 1/2-2 cups vegan cheese

Steps:

  • Place a block of tofu in a bowl and top with a heavy weight to drain water as much as possible.
  • Place cauliflower florets in a food processor and process until a rice-like texture is achieved.
  • Fill a medium pan with an inch of water and bring to a boil. Add the processed cauliflower and cook about 4 - 5 minutes. Drain water and cool.
  • Preheat oven to 400ºF degrees.
  • Place the cooled cauliflower in a nut milk bag or wrap with cheesecloth and squeeze excess water out as much as possible.
  • In a bowl, place drained tofu and use your hands to mash it well.
  • Add cauliflower, beaten egg, herb, and salt and mix well.
  • Press the dough out onto a baking sheet lined with parchment paper. The thickness of the dough should be around 1/2 inch.
  • Bake for about 30 - 40 minutes. The crust should be firm and slightly brown.
  • Remove the crust from oven. Top with pizza sauce, toppings and cheese.
  • Bake for another 10 - 20 minutes until the cheese is bubbly and slightly browned.

This very low carb pizza should please even the Big Carbers amongst your friends and family. Eaten hot, it should be treated like a casserole, but cold it can held like a regular pizza slice. Bonus -- no wheat or gluten. Just meat, cheese and a bit of tomato paste.

3 lbs ground beef
3 eggs
2 ounces pork skins, crushed (see note A)
3 ounces tomato paste (see note B)
6 -8 cups mozzarella cheese (see note C)
6 -8 cups pepperoni slices (see note C)

Steps:

  • Cook ground beef with about 2 cups of water (water helps beef cook to crumbly) in a large pan on medium-high til completely done. Drain.
  • Add 3 eggs, crushed pork skins, and 1/2 can of tomato paste and stir til blended. Spread in large casserole dish and press into bottom to make burger crust.
  • Make 3 layers of cheese and pepperoni over hamburger. Cover with tin foil and cook at 400 for 30 minutes. Uncover and cook til browned to taste.
  • Serve hot in dishes, as it will not hold together. Cold, it can be sliced and eaten like regular pizza.
  • Optional:.
  • Feel free to add any other spices, meats or (argh) veggies to taste. I like to add about a 1/4 cup of Frank's Red Hot to my hamburger crust mix before spreading it into the pan.
  • NOTES:.
  • A - This is 1/2 of 4oz bag of Rinds. Any pork skin/rinds will do. The dryer the better.
  • B - This is 1/2 of 6oz can of Tomato Paste.
  • C - I buy the large bag of shredded mozzarella cheese and pepperoni at Costco. Since my family loves tons of cheese and pepperoni, the cheese will do just over 2 pizzas, and the pepperoni will do just over four.

It's their Low Carb Pizza Sauce and only has 2 carbs for 1/4 cup!! It's the best sauce I've found. I buy it by the case and one jar is enough to do 4 BIG Portabella Pizzas. They are located in N.J. but I get it at my local Low Carb store here in Florida. Get the sauce!! It makes the pizza. Serve with a nice big green salad.

1 cup pizza sauce (low carb, please see note above)
1 1/2 cups mozzarella cheese
16 slices pepperoni (or your favorite toppings)
3 teaspoons parmesan cheese (or to taste)
1 teaspoon dry oregano (or to taste)

Steps:

  • Preheat oven to 425.
  • Clean and dry mushrooms removing the stems but keeping the gills.
  • Rub both sides of the mushrooms liberly with olive oil but not dripping in oil.
  • Place on large cookie sheet with a rim, (or it will drip), gill side up. No need to oil cookie sheet but you can lay down parchment paper or foil for easier clean up.
  • Sprinkle salt and pepper to taste on gill side only.
  • Pour 1/4 cup low carb pizza sauce on top of the inside of each mushroom.
  • Sprinkle 1/4 cup of motzzarella on top of the sauce of each mushroom.
  • Lay 4 or 5 slices of pepperoni on top the motzzarella.
  • Sprinkle lightly with dried oregano.
  • Bake 12 to 15 minutes depending on the thickness of your mushrooms, until hot, lightly brown and bubbly.
  • Enjoy as a meal with a green salad. Or try sharing as an appetizer or as a side in place of a veggie.

1 1/2 cups soy flour
3 eggs
3/4 cup heavy cream
1/3 cup club soda
1 teaspoon salt
1 tablespoon olive oil
1/8 cup diced red onion
1 teaspoon chopped garlic
3 large Roma tomatoes, diced
8 ounces no sugar added tomato sauce
1/4 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano (may substitute Italian seasoning for dried herbs)
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
24 ounces shredded mozzarella cheese
8 ounces pepperoni slices
1/2 cup crumbled Italian sausage, cooked
1/2 cup diced Parma ham
1/3 cup julienned red bell peppers
1/3 cup julienned green bell peppers
1/3 cup julienned red onion
2 portobello mushroom caps, sliced
2 tablespoons extra-virgin olive oil
Pinch dried oregano

Steps:

  • Preheat oven to 375 degrees F.
  • Make the crust: Generously spray 2 (12-inch) pizza pans with nonstick vegetable oil cooking spray. In a medium bowl, stir together all of the crust ingredients to make a smooth, thick, pancake-like batter. Using a rubber spatula, spread the batter as thin and evenly as possible over the 2 pans.
  • Place pizza crusts on center racks of the oven and bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch.
  • Remove crusts from oven and increase the oven temperature to 400 degrees F.
  • Meanwhile, make the sauce: In a saucepan over medium heat, heat olive oil and then sweat onions and garlic in oil, cooking just until softened and translucent. Add diced tomatoes and the remaining ingredients and simmer for about 2 minutes.
  • Compile the pizzas: Spread the tomato sauce and then the mozzarella cheese evenly over both crusts. Top 1 pizza with pepperoni, sausage, and ham, and top the other with the bell pepper strips, onions, and mushrooms. Lightly sprinkle 1 tablespoon olive oil over each pizza, and sprinkle each with a dash of dried oregano.
  • Place the pizzas back in the oven to bake for another 10 to 12 minutes, or until the cheese melts and starts to brown. Cut each pizza into 8 slices.

5 eggs (or 4 or 6 - depending upon how "fluffy you want the "crust")
8 ounces cream cheese, softened
1 teaspoon garlic powder
1 1/2 teaspoons italian seasoning
1/2 teaspoon salt
1 dash pepper
1 cup shredded hard cheese
tomato sauce, cheese, toppings

Steps:

  • Spread cream cheese on bottom of 9 x 13 pan.
  • Beat eggs. Add seasonings and cheese. Pour over cream cheese.
  • Bake at 350 for 22-25 minutes.
  • Pull it out of oven. Add regular toppings - seasoned tomato sauce or pizza sauce. Cheeses as you like. Toppings as you like.
  • Bake additional 15-20 minutes.

1/2 cup almond flour, 2 ounces
4-8 ounces mozzarella cheese, shredded

8 ounces mozzarella cheese, shredded
4 ounce can mushrooms

1/4 pound Italian sausage, browned and crumbled
1/4 cup green pepper, diced

Steps:

  • Instructions: Cut a circle of parchment paper to fit a 14 to 15-inch round pizza pan. Spray the pizza pan with cooking spray to help the parchment stay put. Place the parchment paper in the pan. Whisk cream cheese and eggs until smooth. Add remaining ingredients except mozzarella until well combined. Stir in mozzarella. Drop the dough by large spoonfuls all over parchment-lined pan. Cover with two sheets of plastic wrap that have been crossed so that the entire surface is covered. With rolling pin, roll dough to the edges of the pan making it an even thickness. Remove plastic wrap. With a rubber spatula, push the dough up and away from the edges of the pan by 1/4-1/2″. If the dough goes all the way to the edges, it can bubble over in the oven or go under the parchment paper. Bake at 400 degrees 18-20 minutes until golden brown. Let stand 10 minutes or chill several hours (can probably be wrapped and frozen at this point, but I haven\'t tried it). Steps:

  • In a medium bowl, whisk cream cheese until smooth and creamy.
  • Whisk in eggs until mixture is well-blended and smooth.
  • Add the Parmesan and seasonings, then stir in the 8 ounces of mozzarella until completely moistened.
  • Spread cheese mixture evenly in a well-greased 9"x13" glass baking dish or lightly greased and lined with parchment paper (see note below).
  • Bake at 375ºF for 20 to 25 minutes or until evenly browned, but not too dark; let cool completely on a wire rack.
  • When nearly cooled, take a metal spatula and carefully pry up the edges to loosen from pan.
  • Ease the spatula under the whole crust to loosen.
  • Keep crust in the pan; this makes it easier to remove the finished pizza later.
  • Refrigerate, uncovered, until shortly before serving time (this dries out the crust and makes it crisper).
  • Spread chilled crust with pizza sauce, then cheese and toppings of your choice (pepperoni, ham, sausage, 4 ounce can mushrooms, green peppers, bacon, ground beef, etc).
  • Lightly sprinkle with garlic powder and bake at 375ºF about 15 to 20 minutes or until toppings are bubbly.
  • Let stand a few minutes before cutting.
