This Low Carb Italian Beef is a fool proof slow-cooker meal of tender, fall apart beef in a zippy pepperoncini pepper gravy. An easy dinner recipe that will please a crowd!

4 pound boneless beef chuck roast, fat trimmed and cut into large 6 inch x 6 inch chunks
2 teaspoons salt
1 teaspoon pepper
2 tablespoons olive oil
12 ounces whole pepperoncini peppers and their juice (one 12-ounce jar)
2 cups beef stock
1 large onion, peeled, cut in half and sliced
5 large cloves garlic, peeled and chopped
2 tablespoons dried Italian seasonings (for gluten-free, use McCormick "Perfect Pinch Italian Seasoning."
1 teaspoon onion powder
1 bay leaf

Steps:

  • First, turn the slow cooker on high and add the beef stock, pepperoncini peppers, onion, garlic, onion powder, bay leaf, and Italian seasonings. Stir these ingredients to combine them.
  • Cut the beef into evenly sized 6-inch chunks and cut off any fat you see. Season the pieces with 2 teaspoons salt and 1 teaspoon pepper.
  • Add olive oil to a large skillet and turn the heat to high. When the pan is hot, carefully add the meat to the pan and sear on all sides, rotating every 2-3 minutes.
  • Remove the meat from the pan and add it to the slow cooker, along with any pan juices from searing the meat. Try to get all the meat into a single layer in the liquid, and cover with the lid.
  • Turn the slow cooker down to low, and cook for 6 hours.
  • Remove the lid and turn the slow cooker down to warm. Drain off the cooking liquid into a bowl (there should be around 3-4 cups). Remove any of the oily fat you can, strain the liquid, then add it to a saute pan. Bring to a simmer on the stovetop, and cook for 4-5 minutes. Transfer the reduced cooking liquid to a serving bowl (or gravy bowl).
  • Remove the Italian beef from the crock pot and pull or shred it using two forks. Place it on a large plate or platter, then transfer onions and pepperoncini onto the platter. Remove any stems from the pepperoncini, then top with some shredded provolone, mozzarella, or Italian blend cheese. If needed, heat the plate in the microwave to melt the cheese, and enjoy!
  • Serve with the reduced cooking liquid as a dipping sauce, and pair with your favorite veggies like cauliflower rice, spaghetti squash, or zucchini noodles. (Or if you are not following a low carb diet, you can use your favorite sandwich roll to create sub sandwiches, sliders, hoagies, etc.)

½ cup bread crumbs
1 cup shredded pecorino romano cheese, plus more for serving
½ cup fresh basil, chopped
⅓ cup shredded provolone cheese
½ cup fresh italian parsley, chopped
8 cloves garlic, minced, divided
kosher salt, to taste
freshly ground black pepper, to taste
¼ cup olive oil
1 lb flank steak
2 tablespoons canola oil
1 tablespoon butter
1 medium carrot, chopped
1 small onion, chopped
1 stalk celery, chopped
1 cup dry white wine
28 oz crushed tomato, 1 can
2 dried bay leaves
1 tablespoon dried oregano
½ teaspoon red pepper flakes
1 lb orecchiette pasta, or polenta, cooked, for serving, optional
¼ cup fresh basil, cut into ribbons, for serving

Steps:

  • In a medium bowl, combine the bread crumbs, pecorino Romano, ½ cup (20 g) chopped basil, provolone, parsley, 5 minced cloves of garlic, salt, pepper, and the olive oil. Stir and set aside.
  • Lay the flank steak on a cutting board. Season both sides with salt and pepper. Cover the the meat with a sheet of parchment paper. Using a meat mallet or rolling pin, pound the steak until it's ¼ inch (6 mm) thick.
  • Remove the parchment and sprinkle the bread crumb mixture evenly over the steak.
  • Starting from the bottom, roll the meat into a log. Using butcher's twine, tie up the roll so it holds its shape while cooking. Season with salt and pepper.
  • Heat the canola oil in a large Dutch oven over high heat. When the oil is shimmering, add the steak roll and, without moving it, cook until a dark brown crust forms on one side, about 3 minutes. Turn the roll and repeat until all sides and the ends have been seared. Remove the roll from the pan and set aside.
  • Preheat the oven to 350°F (180°C).
  • Add the butter, carrot, onion, celery, remaining 3 cloves of garlic, salt, and pepper to the pan and cook until caramelized, about 5 minutes.
  • Add the white wine and stir to loosen any brown bits from the bottom of the pot. Cook until the wine reduces and the pan is slightly dry again.
  • Add the tomatoes, bay leaves, oregano, and red pepper flakes. Stir to combine.
  • Return the beef roll to the pot. Cover and bake for 1 hour, flipping the roll halfway through (if the sauce is drying up too much, add more crushed tomatoes or water), until the beef is tender.
  • Slice the braciole and arrange on a serving platter with the sauce. Serve the braciole with orecchiette or polenta. Garnish with grated pecorino Romano and fresh basil.

1 lb top round steak
4 slices mozzarella cheese
1/4 cup freshly grated parmesan cheese
2 tablespoons garlic powder
salt and pepper, to taste
2 tablespoons olive oil
28 ounces pasta sauce

Steps:

  • Pound the steak very thin and cut into 4 pieces.
  • Place a slice of mozzarella on each piece, then top with parmesan, garlic powder, salt and pepper.
  • Roll each piece up tightly and secure with a string.
  • Heat the olive oil in a large nonstick skillet and brown the rolls evenly on each side.
  • Drop them in your favorite pasta sauce and allow them to simmer for 2 hours or until tender and cooked through. (The meat will add a wonderful flavor to your sauce!).
  • Remove the strings and serve.
  • (Alternative: Assemble and brown the beef rolls the night before and store them in the fridge. Then drop the rolls and the sauce in your crockpot and cook on low for 8 hours the next day).

1-1/2 pounds beef top round steak, thinly sliced
Salt and pepper to taste
1 cup dry bread crumbs
1 cup grated Parmesan cheese
1/4 cup finely chopped fresh celery leaves

1/2 teaspoon dried oregano
2 tablespoons olive oil
4 cups spaghetti sauce

Steps:

2 cups ricotta cheese
1 egg
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons italian seasoning
1 lb shredded mozzarella cheese, divided
1 lb sliced deli roast beef (dimensions of about 5"x9-inch)
1 (16 ounce) jar low-carb spaghetti sauce (Paul Newman's brand is great!)

Steps:

  • Preheat oven to 375°F.
  • In a bowl, combine the ricotta, egg, garlic powder, onion powder, seasoning, and half the mozzarella.
  • Mix well.
  • Place a spoonful of mixture onto a slice of roast beef and roll up longwise with a shorter width (it isn't necessary to fasten these with toothpicks).
  • Repeat with remaining beef.
  • Spread 1/2 cup of sauce on the bottom of a 9 x 13 inch baking dish.
  • Place the beef rolls in the dish, seam side down.
  • Pour the remaining sauce over the beef rolls.
  • Bake, covered, for 40 minutes.
  • Add the remaining mozzarella cheese over the top and bake for an additional 5 minutes, uncovered, until cheese is melted.
