The BEST creamy coleslaw is quick and easy to make with just a few simple ingredients. The perfect side dish for BBQs, parties, potlucks or part of an easy weeknight meal. Low carb and keto friendly!

14 oz. coleslaw (see notes)
1/2 cup mayonnaise
4 green onions
salt
pepper
1 tablespoon coconut sugar (or use monk fruit to reduce 1 carb per serving)

Steps:

  • Place the dressing ingredients into a bowl and whisk until combined. Chop the green onions and thinly slice the cabbage and carrots, if not using the prepackaged mix.
  • Add the chopped green onions and cabbage mix to the bowl with the dressing. Use a spatula to toss the ingredients until the veggies are fully coated.
  • The coleslaw can be enjoyed right away but tastes better after chilling in the fridge for at least 2 hours. Can be stored covered, in the fridge, for 3-4 days.

This creamy, zesty keto coleslaw is a fan favorite and is ready in just minutes!

Number Of Ingredients 8

14 oz. bag coleslaw mix
3/4 cup mayonnaise
3 tablespoons erythritol, confectioners (or your preferred sugar substitute)
1 tablespoon apple cider vinegar
1 1/2 tablespoons lemon juice (I prefer freshly squeezed)
1 teaspoon dijon mustard (like Grey Poupon)
1/2 teaspoon black pepper
1/2 teaspoon celery salt

Steps:

  • In a medium to large bowl, whisk together mayo, erythritol, vinegar, lemon juice, dijon mustard, black pepper, and celery salt.
  • Add the bagged coleslaw and mix well to combine. Adjust salt & pepper to taste, and enjoy!

This coleslaw is easy to make and tastes great. My husband thought is was from KFC - only better! Give it a try. It's good with most meats, but I really like it on corned beef or hamburgers.

1 (16 ounce) package coleslaw mix
1/4 cup thin sliced onion
1/3 cup Splenda sugar substitute
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/2 teaspoon celery seed
1/2 cup mayonnaise
1/2 cup heavy cream (whipping)
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice

Steps:

  • In a large bowl, combine the coleslaw and onion.
  • Put aside.
  • In a separate bowl, combine the Splenda, salt, pepper, celery seed, mayonnaise,whipping cream, vinegar and lemon juice, using a whisk.
  • Pour over the coleslaw mix, stir gently to mix.
  • Refrigerate for 1 hour.

Sometimes it's hard to find diabetic-friendly recipes for traditional coleslaw, so I put together one of my own. Play around with the ingredients to find your preferred balance of salty to sweet to sour ratios. It's also great on top of BBQ pulled-pork or BBQ pulled-beef sandwiches!!

1/2 cup light mayonnaise
1/2 cup light salad dressing (like Miracle Whip)
2 tablespoons vinegar
4 (1 g) packets Splenda sugar substitute (equal to 8 tsp sugar)
1/2 teaspoon celery salt
1/2-1 teaspoon red pepper flakes (optional)
1 (16 ounce) bag coleslaw mix

Steps:

  • Mix first six ingredients in a medium sized bowl until blended.
  • Stir in the bag of coleslaw blend.
  • Refrigerate for 30 min to 1 hour before serving.
